You don’t have to cook as long to be sure the meat is fully cooked through, but you also don’t get the “this turned into a pile of crumbled meat on my plate” issue.

I'm very jealous. I've only got a hand cranked pasta roller and it's very challenging to roll sheets by yourself - just not enough hands. The best part of doing your own filled pasta is that you can make all the really weird filling combos you want. So far my fave has been Sheppard's pie pierogi.

Yum! Side question, how do you like your soda stream? I'm a carbonated water junkie and I'm seriously considering one, even though I have a rule about no appliances that use propriatrary inserts. (though, with the internet, I suppose that's not as big a deal as it used to be, someone, somewhere would either start selling them or create a hack.)

There are definitely adaptors you can buy to hook it up to a non-proprietary CO2 canister, but between the perils of dealing with pressurized canisters and the inconvenience, I’ve never bothered. Sodastream makes it super easy to return your canisters (the only issue right now is supply) so I don’t mind if I’m paying a slight convenience fee for that. Now, that said, you also have to buy proprietary water bottles, some of which aren’t dishwasher-safe, and you’re supposed to replace them every 2-3 years, and those aren’t cheap, so bear that in mind. (If you want the machine washable ones, you have to buy a specific type that only fit a certain number of the machines, so do your homework before buying.) 

I do like my sodastream -- that’s their cheapo version and I’ve had it for 10 years, which tells you something about its durability. Especially if you don’t care about flavoring and just want carbonated water, it’s great. The flavor syrups are hit and miss; a lot of them for me have an acrid aftertaste, and again supply right now can be an issue. But the nice thing about having plain carbonated water is you can make your own flavorings. I often make super-concentrated tea and add a shot of that, or just sprinkle Pure Lemon in. 

Anyway yeah -- it’s not the most ideal setup but I do feel like I save a LOT of money and packaging waste with them.

Kreplach FTW. I've never had or made them (a tragedy for this Jew) but I get the feeling they're simpler than they seem.

The dough is a little tricky, because it’s got eggs in it which makes it sticky, which in turn makes it a little more difficult to work with without making the end product rather tough. But yeah, if you can get round the dough issues it’s not that complex.

It feels surreal to me that we have passed the 2010s already. Time went ahead like an express train without a single stop. What’s more shocking, the first half of 2020 hasn’t  even come to an end but the hassles have been getting out of hand. It was peaked with the news of corona virus (COVID-19) outbreak since the beginning of January 2020 and is still an ongoing issue up to the present time, albeit, thankfully, we have also seen a lot of recovered cases. One of the biggest aftermaths of the outbreak is in the tourism department, in which most governments would put a temporary travel ban as a means of preventive measures.

And have I told you about my yearn of traveling, haven’t I? I wrote a post about my first-time-backpacking-experience in Singapore last year, and my journey didn’t stop there. I’m making my itineraries for my upcoming trips to Japan and South Korea already just to showcase my utmost excitement upon discovering brand new things. Unfortunately, the trip schedules are still on hold as I’m waiting until the whole pandemic comes to an end. As an self-comforting attempt, I decided to write about my previous one-week vacation in Malaysia last December 2019 so that I could reminisce a bit about the lingering feelings.

Day 1: Mind-cleansing and peace-making attempts

By the time one enters the pit of adulthood, there are endless things to do, and I really mean my words. Working earnestly, either to fulfill your or your parents’ desire; adjusting with the workplace and making sure to get along well with everyone; getting the work done without skipping meals or sleeps; socializing with friends even if it requires you to be present in tame parties or gatherings; building new meaningful connections while maintaining the existing ones; finding a lover and deliberating whether you both will make a great match, then proceeding to marriage if it is, or starting over if you are doomed; and also making more money; not to forget about looking after your family and attending family occasions to meet with relatives who might shower you with ruthless curiosities; also taking part in side volunteering activities in case you are a social person; then definitely making sure that everything goes well in between. Whoa, being a social being is surely busy, isn’t it?

Just like how humans need sleep everyday in order to stay alive, breaks are also needed so that we may keep living. I didn’t think too much on my way to Malaysia, only overwhelming excitement within. And my crazy journey slowly began.

I booked a direct morning flight with AirAsia without extra-baggage to save cost, then went straight to my friend’s apartment from KLIA2. There is a Skybus service that departs every 30 minutes on weekdays (and 60 minutes on weekends) from KLIA2 to various routes available daily, and I left for One Utama stop for MYR 15. It’s one of the biggest and most popular shopping centres in Klang Valley. My friend stays in a condominium nearby along with her co-worker, leaving a one-room space for me to sleep for the next three nights. Later that evening, another Malaysian friend took me to Tanjung Bungah Nyonya in Petaling Jaya’s SS2 area, known as an authentic restaurant to grab essential Nyonya dishes.

As for the public transport, Malaysians mostly use Touch n Go card to commute with train or bus services. You need to buy the card for MYR 15 with a purse value of MYR 9.80. This reusable card can easily be topped-up in convenience stores.

We had sweet fried chicken, fried tofu and sayur Paku, a vegetable dish known in English as wild fern shoots. I didn’t think I had ever had one in Indonesia but that one was pretty pleasant to my tongue. They all reminded me to my mom’s home-cooked meals.

We stopped by at Restoran Kayu Nasi Kandar SS2 nearby for this delicate roti canai and roasted chicken with dip-in curry sauce, not to mention this sweet roti tissue. Thanks to her, I went home with happy tummy and smiley face. 

Day 2: Fun trip, group trip

Haven’t I told you about the superb Couchsurfing app, have I? So basically I managed to gather more people for a one-day trip. Long story short, there were five of us going to popular tourist attractions like Batu Caves and Genting Highlands.

The history of Batu Caves is affiliated with Hinduism, and this is one of the most popular Hindu shrines outside India, which was built in honor of Lord Murugan. If you are familiar with a huge statue at the entrance of Batu Caves, yes, that is the statue of Lord Murugan. Batu Caves itself is always swarmed with visiting tourists.

It cost me my bloody sweaty t-shirts and tanned complexion to reach the huge cave on top of the stairs.

The next destination was Genting Highlands. With the entrance fee of MYR 16, you can roam around the French village, Japanese village and also many other awaiting attractions. We stopped by Colmar Tropicale, a gorgeous Medieval French Village in Berjaya Hills. The cold wind was mild but humid and I indeed felt like leaving for a far far place.

One of the most fascinating experiences was visiting Amber Court, a 23-story apartment building known more as a haunted hotel in Genting. Legend said, a lot of gamblers committed suicide there after losing everything in the casino. If you look up on Google, you might find several interesting testimonies from people who once visited Amber Court. We, too, entered one empty room once and felt something creepy inside. It definitely isn’t a place you’d be comfortable roaming around.

To wrap up the visit, I visited Sky Avenue Shopping Mall and entered the Sky Casino, known as the largest casino in Genting Highlands. In order to make an entrance, you need to register the membership to receive a membership card. As part of the regulations, you are allowed to enter the gate unless you are underage, a Muslim or wear slippers. Photo-taking is also forbidden inside the casino, but it is definitely a huge-scaled casino. You can top-up the balance of the card in order to play the game. Machines are everywhere and people are busy gaining money under the supervision of CCTV cameras and security guards.

Later that night, my local friend took us to Restoran Tiong Hokkien Mee (non-halal) located around Damansara Utama to try the oriental Hokkien Mee there. The texture of the noodle is thick and coated with greasy seasoning, also added with seafood and samcan chops. Definitely a great meal to end day for only MYR 45 (a big portion for 3-4 moderate servings).

Day 3: Lone wanderer in Malacca

The days ahead were pure solo traveling for me. I took off at 7 in the morning to catch the bus to Malacca, a historic state located in the southern part of Malay Peninsula. There is a plenty of bus services that depart from TBS (Terminal Bersepadu Selatan) every 30 minutes with particular operating hours. I bought a TBS – Melaka Sentral bus ticket for MYR 11.4 (including TBS Passenger Insurance Protection for MYR 0.40). The trip approximately lasts for two hours, but the seats were comfortable to sleep on so it didn’t matter. December is still on the rainy season so I was told to bring an umbrella with me in case of any drizzles, which did happen upon my arrival there.

One of the most popular tourism spots in Malacca is Jonker Street, known also as the centre of Chinatown. Although it is mostly packed in the evening for the fabulous Night Market, some shops are also open during the day to welcome local or foreign visitors. Snacks, full meals, handicrafts and souvenirs are available along the long wide alley.

This is the widely-known chicken rice ball that I tried at Famosa Chicken Rice Ball outlet. the savory rice ball cost MYR 1.20 each and tasted like the Japanese onigiri. Added with a steam otak-otak for MYR 13, they made a mouth-watering palatable lunch menu to my mouth. 

In Malacca, you may discover gorgeous ancient landmarks and fortresses that spark British, Dutch and Portuguese vibes. It is a relatively small city but I only had half a day to roam around. Thus, I managed to witness several ancient churches and other buildings upon walking down the road from Jonker Street. Some buildings of walkable distance are Christ Church Melaka, St. Paul’s Church and A’Famosa Fort. No entrance fee required.

I ended my solo trip in Malacca at around 5 and went back to KL using the same means of transportation and the same bus fare as well. Upon my arrival, my local friend took me to Big Big Wantan in Damansara Uptown, Petaling Jaya for a bowl of warm wantan mee for MYR 6.5. I would say that it was one of the best wantan mee I have ever tasted with great thin mee’s texture and yummy pork dumplings, 10/10 lah.

Day 4: A fresh start in Penang

I wanted to experience another side of Malaysia after spending some days in KL, and my choice fell on Penang, or known also as Pulau Pinang. It is a state located in the northwest coast of Malaysia Peninsula. Many people, including myself, probably have heard of Penang because of the prominent advanced hospitals. You can ride a bus, take a train or fly with a plane from KL to Penang. I flew with AirAsia airline for around MYR 80 and stayed with a host from AirBnB. It was a cozy room in an apartment located in Bayan Lepas, about 5-minute distance (by car) from Penang Airport. The rent cost about MYR 13 (including the service fee) per day. I think AirBnB does a great job in accommodating single or group travelers with clean cozy budget rooms in strategic locations of the town.

The capital city of Penang state is a city named George Town, or officially the City of Penang Island. It has it all; good signature cuisines, entertainments, night markets, malls and cultural heritages. Bayan Lepas, however, is a free industrial zone that contributes to the financial improvement of Penang as the financial centre of the northern part of Malaysia. It roughly takes around an hour or more to reach George Town from Bayan Lepas by bus. I had to go past more than 30 bus stops in order to get there, but staying close to the airport surely has its own perks.

And the rest of day was all about food-tasting experience.

This is the authentic hokkien mee from the Three Road 888 Hokkien Mee at Presgrave Street, George Town, and dawet cendol from the stall in front of the store. It comes with yellow noodles, bean sprouts, half a boiled egg and pork. The soup is thick and robust and everything else perfectly fits into places. 8.5/10 for me. And the dawet cendol makes an awesome fresh dessert.

There is this popular place to eat Nasi Kandar, a northern Malaysian dish that comes with well-spiced curry broth. Nasi Kandar is originally brought by Tamil Muslim traders from India that settled in Malaysia. Restoran Deen Nasi Kandar is quite well-known in George Town and the queue is crazy. I waited for around 20 minutes before being able to finally sit down and have a proper dinner. It is somewhat similar to Nasi Padang, one of Indonesia’s signature food from Minangkabau, North Sumatera. Regardless, if I have to compare the taste between Nasi Kandar and Nasi Padang, I’d say that Nasi Padang is more on the spicy side and Nasi Kandar is richer in spices. Both are delicious in their own ways. Prices are affordable depending on your choice of add-ons.

Lastly, my final culinary experience ended with a koay chap from a regular street stall in George Town’s night market. Made of hard-boiled egg, mushrooms, pork belly, pig intestines, pig skin, this is not a kind of food I would like to eat on a daily basis, but still acceptable as a culinary choice. It probably cost around MYR 10.

Day 5: A lost day in George Town

The next day was another solo adventure to George Town. Penang isn’t as advanced as Kuala Lumpur in terms of public transport, but they surely provide a lot of buses to hep people commute from here to there. However, the biggest downside of public transports in Penang is that they accept cash but do not give change.  I only  had the RapidKL  card with me, surely non-usable to tap in the buses in Penang. There is this Mutiara card which local people use as a top-up card, just like the RapidKL card. However, I believe that it’s only applicable for locals because you need to register with your identification card. Thus, I spent lots of coins and banknotes more than I should have done because they offer no change.

Another point to note if you are about to travel around Penang by bus is to pay serious attention to the bus stops mentioned by the loud speaker or written on the screen because there slight differences might occur with the guideline written in Google Maps. One time I received quite a backlash from a bus driver for being accused as a free-loader. I initially planned to visit Snake Temple so I checked the location via Maps and even memorized the stops. Unfortunately, I missed the stop because the names of the bus stops were unfamiliar (I was sure I did check the route of the correct bus number, though). I wanted to get off soon but the driver saw my bus ticket and he thought I purposefully checked in for Snake Temple for a cheaper fare. It was indeed a baffling situation for me and I ended up putting in more coins and got off in George Town. Nonetheless, that experience left a bitter taste in my mouth.

George Town is a beautiful town surrounded by classic yet historical buildings and polished by modern infrastructures. The weather was relatively hot but also quite windy, so walking down the long street is not exactly devastating. The sky and floating clouds offered a marvelous view along the horizon. And my first quest was all about food.

I found Yeap Noodles Cafe by accident while walking down Lebuh Chulia street. This is Yeap Noodles in Herbal Soup with pork slice, crab sticks, fish ball and beancurd skin for MYR 11.9. Not aesthetically pleasing, I would say, and it tasted quite bland in my opinion. Maybe I should’ve ordered different menu like the ones with thicker broth or the fried noodles. 7/10 since I was starving at that time, but I believe that the price was quite overrated.

And of course I didn’t want to miss the view of Batu Ferringhi Beach while in Penang. It took around an hour to reach the beach from George Town by bus (I took the bus from Komtar Terminal, where nearly all local Penang buses make a regular stop). Sky was disgustingly bright and clear at that moment, definitely a great place to clear your mind and rest for a bit. They offer banana boat and parasailing activities too!

If I had to mention a recommended noodle place in Penang, this is it. Hong Kee Wan Thun Mee (also known as Hong Kee Bamboo Noodle) in Lebuh Campbell, George Town. They seriously serve one of the most authentic Chinese mee in town. Thick and chewy in texture, added with yummy dumplings on the plate. I’d give 9.5/10 on this one, really. Spent MYR 8.3 and it’s really worth-it.

In the end, my lost day was impressive enough albeit I did spend hours roaming from here to there even with the guide of helpless Google Maps, or helpless me. I walked from here to there, even went as far as visiting Batu Ferringhi Beach by myself and made an entrance only to sit on the sand for hours with blank thoughts. I was exhausted and my legs almost gave in but somehow I managed to catch the bus and rest my body for an hour before I reached the apartment by 10 PM local time. It marked my last day in Penang and I felt that time flew too fast but I was fortuitous to have seen good things, eaten good food and met good people. I believe that I have found the true joy of traveling, which is all about good experience. And although getting lost was not exactly a pleasant experience, it has told me that as alone as I might have been, I still have myself and this self will never leave me in whatever mess I have gotten myself into. And that being said, I should take a really really good care of myself, and so do you.

Day 6: A Medan day

I didn’t have a particular reason for visiting Medan other than a short escape in an unfamiliar place. Medan is merely an hour away from Penang by air transportation, so why not? Coming back to place where people speak the same language as I do after quite a long time was finally breathing a fresh air after suffocation. There weren’t many things to do other than eating good food and sight-seeing good things. I booked a room for a night with a cool budget price from AirBnB.

I found Rumah Makan Tabona upon surfing on the internet to look up iconic food and places in Medan. It was established in 1983 with curry bihun as their signature dish. I ordered curry mee and it’s heavenly-tempting and rich in taste. The curry broth surprisingly matched well with the mee and I was really in awe. 9.5/10 and I believe everyone should have a try!

In the evening, I was recommended to try Kwetiau Ateng by a friend, to which I welcomed with an open hand. I mean, who doesn’t like kwetiau and the chewy texture that digests well in your stomach?

The complete set of kwetiau dish includes fishball, lapcheong, chasio, shrimp and egg. It’s inarguably 10/10.

Indeed one of the best kwetiau I have ever had in my life. A legit 10/10!!

Day 7: A night at KLIA2

In order to fly back to my hometown, I took multiple flights as following; from Medan back to KLIA2, then KLIA2 straight to my hometown. It had been planned beforehand as I had calculated lots of different options and this one was the cheapest, if not counting the extra-baggage cost that I paid later.

I woke up quite early in the morning and prepared myself for a brief adventure before an evening flight to KLIA2. The weather was great and the sky was as clear as crystals, so there wasn’t any reason to be dispirited.

As a choice of breakfast, I tried Soto Kesawan Medan, another prominent culinary option for tourists and locals. Usually soto is served as clear chicken soup, but soto kesawan comes with thicker broth (but different from curry broth) and is served with shrimp as the main menu (but chicken is also available so you can choose anything that goes better in your mouth). Personally, I don’t find soto kesawan mouth-watering enough to be willing to come over for the second attempt. 7.5/10 is enough. Not my cup of tea, I guess.

Before my flight back, I visited a historical place named Tjong A Fie Mansion, a classic residence located in a neighborhood called Kesawan, West Medan. It is registered as a historical landmark as well as one of Medan’s cultural heritage. Entrance fee is IDR 35k including tour guide-service to go sightseeing around the two-storey mansion. Tjong A Fie is a successful Chinese entrepreneur who literally built an empire in Medan that employed over 10,000 workers at that time. He became a prominent figure of Chinese leader respected by the people.

When the time was close to a farewell, I got back to the airport and waited for my upcoming flight. It was only like a short two-hour flight that I was already back in KLIA2 at around 5 PM local time. The upcoming flight to my final destination was early in the next morning, which marked my first attempt staying out in the airport. It was bothersome, anyway, to leave the airport and commute again so early, so I’d rather hold out until the final straw. It was a brand new experience beyond shadow of a doubt. I kept walking here and there without direction like a lost puppy.

The stores inside KLIA2 generally close at midnight and reopen at dawn, but there are a few food shops that open 24/7. When I was extremely used up after a long walk, I sat down on the floor near a charging outlet so that I may recharge my smartphone. There were also people beside me who did the same so it didn’t feel weird at all. I waited for a long time trying to stay awake amidst the fatigue and cold room temperature. Finally, I visited a food shop at 3 AM named Ah Cheng Laksa to digest something warm to my stomach. The one i ordered was Asam Laksa without any meat, and it turned out to be one of the worst food I had ever had all my life.

Didn’t know exactly how an Asam Laksa is supposed to taste, but this one definitely made me lose my appetite. Thin soup with highly sour taste, bland laksa and fresh-looking veggies. Not gonna give any score because of how bad it was, sorry.

It’s an unfortunate thing that I haven’t been able to experience the real Malaysian laksa (that fits well to my appetite) during my visit to Malaysia.

Some traveling tips which might be useful for beginners (like myself lol)

Budget airlines are not exactly budget-saving if you plan on buying souvenirs, this is the most important thing I realized after I spent extra cost on over-baggage fee on the spot, which was almost twice the regular fee. AirAsia, for example, offers super affordable airfares compared to fellow airlines. However, they don’t come with baggage facility unless you add baggage to cart during the purchase. Not necessarily making the airfare pricier, but baggage cost does make a difference, so pay attention more carefully on it.

Bring yourself an umbrella when you travel around the end of the year. It rained occasionally in December when I visited Malacca, and securing an umbrella in the bag is surely much better than spending extra cost on buying one, isn’t it? Frankly speaking, I was lucky that my host was thoughtful enough to remind me to take her umbrella when I went out.

Always prepare extra small-denomination banknotes if you plan on taking public transports. Just like what I experienced in Penang, it would become an utter hassle if you run out of money just because you spend large bill only to be notified that the bus service doesn’t provide change money.

Anyway, let’s pray that the pandemic shall end soon so that traveling and face-to-face interaction no longer become impossible and let’s not take any relationship for granted. Stay safe people!

Why people should leave the countryside

IN WEICHENG, A village in Hebei province, a group of friends are tucking into duck, broccoli and dumplings, flavoured with raw garlic and lubricated with baijiu liquor. It is the Chinese new year, and migrant workers have come home to see their families. Nationwide, some 3bn journeys were undertaken during the holiday season this year, making it the biggest mass migration ever; though next year’s will doubtless be even bigger.

Suddenly a loud phone interrupts. Two men pop outside to take the call. When they come back, they both have new jobs: a three-month contract on a building site in Taiyuan, a city neither man has visited before. It pays 240 yuan ($34) a day, more than twice what they could make in the village. They were recruited by word of mouth—a former co-worker vouched that they were reliable.

Weicheng village is not rich. Women break the ice on a river to hand-wash clothes. Toilets are holes in the ground. But villagers have motorbikes, televisions and plenty to eat. That is a huge blessing. Though no one dares talk about it, the elderly still remember mass starvation during the “Great Leap Forward” of 1958-61, when Mao Zedong forced peasants onto collective farms, where tens of millions died of hunger and disease.

China is still a one-party state, but it owes much of its current prosperity to an increase in liberty. Since Mao died, his former subjects have won greater freedom to grow the crops they choose, to set up businesses and keep the profits, to own property, and to move around the country. The freedom to move, though far from absolute, has been transformational. Under Mao, peasants were banned from leaving their home area and, if they somehow made it to a city, they were barred from buying food, notes Bradley Gardner in “China’s Great Migration”. Now, there are more rural migrants in China than there are cross-border migrants in the world.

By moving from unproductive paddyfields to better jobs in factories and shops, they have made themselves and China richer. Somewhere between a fifth and a third of the country’s colossal economic growth between the late 1970s and the current decade is due to this great migration.

China’s population is now 60% urban, up from 18% in 1978. Sub-Saharan Africa is only 40% urban; India lags even further behind, at 34%. Mahatma Gandhi, modern India’s founding father, thought the growth of cities was “an evil thing, unfortunate for mankind and the world”. He believed that Indians would be spiritually more fulfilled if they stayed in villages, growing their own food and spinning their own clothes.

Really? Five farmers in Gandhi’s home state of Gujarat showed your correspondent how much wheat they had harvested in three days, using hand-held sickles. A combine harvester could have done the job in a minute or two.

The farmers are sharecroppers. They are always hungry at the start of the season, so the landlord advances them grain. Asked how much they currently owe him, they do not know: none of them can read or do sums. Asked how much they typically receive at the end of the year, they say “nothing”. The landlord always calculates that they have received their full share of the crop. He does not want them to have spare food or cash; if they did, they might quit. Aajeevika Bureau, a local charity, helps illiterate farm workers draw up contracts, and keeps copies on their behalf. But the quickest way to earn more is to move to a city.

“In the city we have money,” says Ratansinh, who moved from rural Uttar Pradesh to Ahmedabad, the Gujarati commercial capital, when he was 18. “In the village we earned nothing. What we grew, we ate. What was left, we bartered for clothes and tools.”

Now 52, he earns 24,000 rupees ($340) a month as a supervisor in a small textiles factory. The machines rattle loudly in the background as he talks. Like many Indian men who move to a city, he has left his family behind. His wife remains on the farm; his two children are at college. He goes back to the village for two months a year. He misses his wife, but “that’s the compromise you make. If I go back to the village, I can’t pay for my children’s education.”

B.R. Ambedkar a contemporary of Gandhi’s who championed dalits, called the Indian village “a den of ignorance, narrow-mindedness and communalism”. Many migrants agree. “In my village, cutting someone’s tree down by mistake could lead to murder,” recalls Tawwaj Ali, a factory worker in Ahmedabad. “No one knows who you are in the city,” he adds, “so there’s less conflict.” Indeed, strict rules about “untouchability” are impossible to enforce in a jam-packed Mumbai train, notes Chinmay Tumbe of the Indian Institute of Management in Ahmedabad, author of “India Moving”.

I know a boat you can get on

In rich countries 81% of people live in urban areas. Mechanised farms produce enough food for all, while leaving plenty of space for parks and wilderness. In the rest of the world half the population still lives in the countryside. Many politicians, like Gandhi, think they should stay there, either for romantic reasons (the countryside is so beautiful!) or because they do not want peasants building unsightly slums in their cities.

Under China’s hukou (household registration) system, rural migrants who work in top-tier cities are treated as second-class citizens. The aim is to discourage them from settling there. They are barred from urban public services, and so must either leave their kids with grandma in the village or scrape together the cash to put them in shoddy urban private schools. Sometimes city authorities bulldoze these schools. The hukou system is one reason why rural Chinese children are dramatically worse educated than urban ones—and two-thirds of Chinese children are officially rural.

Several people from Weicheng village work in Beijing. This means separation. “It would be impossible to get our kids into a public school there,” sighs a mother who looks after them in the village while her husband is away.

In India the obstacles to internal migration are more subtle. One is language—India has more than 100 of them. Another is the difficulty of obtaining government benefits after crossing a state line. A study by Zovanga Kone of Oxford University and others finds that migration between neighbouring Indian districts is 50% higher if they are in the same state than if they are separated by a state border.

Another problem is violence. Rape is common and poorly policed. So although many Indian women migrate to marry, few migrate to work (unlike in China). And because most migrant workers are men, the places where they cluster have wildly unbalanced sex ratios, making them even more dangerous for women.

Babu Gamar, a farmer in Gujarat, says that half the men in his village go away to work. But “young women can’t go—they might be abused,” he says. Virjibhai Gamar, a neighbour, concurs. Every month he goes with his brothers to work on building sites. Their wives and sisters do not join them.

The distorted sex ratio of Indian migrants helps demographers track trends that would otherwise be hard to measure. In areas that send a lot of migrants to cities, the working-age population is heavily female, but the elderly population is not, notes Mr Tumbe. That implies that rural migrants eventually go back home. Many scrimp in the city, often sleeping four to a room, so they can buy land in their village.

In “Good Economics for Hard Times”, Abhijit Banerjee and Esther Duflo, two of the winners of this year’s Nobel prize for economics, argue that most people who would benefit from moving stay put, for three reasons. They value the familiar; they overestimate the risks of moving; and they do not know anyone or have anywhere to stay in the place they could go.

Mr Banerjee and Ms Duflo suggest giving poor people small amounts of cash and some information. A charity in northern Bangladesh tried this. Some villagers were randomly selected and told how much higher wages were in a city. Others were given the same information plus $11.50 in cash—roughly the cost of a bus fare and two days’ food—but only if they went to work in the city.

The villagers who were given information only were no likelier to migrate. But the combination of cash and nudge prompted 22% of households who would not otherwise have sent out a migrant to do so. And the families who sent out a migrant saw their daily intake of calories shoot up from 1,400 a head to 2,200; that is, from the edge of starvation to tolerable comfort. Mobility fills bellies.

In rich countries internal migration is seldom a matter of life or death. But many people could earn more if they moved from stagnant towns to thriving ones. Hull’s jobless could easily find work in London. Alas, they will struggle to find a place to live. Rents are extortionate in the cities people most want to move to. NIMBYs block any structure that might mar their view. Red tape can make property several times more expensive than it need be, forcing potential migrants to stay where rents are cheap. Americans are barely half as likely to move to a different county as they were in the 1950s. And this means their talents are often wasted. Chang-Tai Hsieh of the University of Chicago and Enrico Moretti of the University of California, Berkeley estimate that artificial restrictions on housing supply knocked 36% off America’s aggregate GDP growth between 1964 and 2009.

Because moving disrupts a previous way of life, it forces the mover to try new things. Mr Banerjee and Ms Duflo describe a natural experiment that took place when a volcanic eruption in 1973 destroyed a third of the houses on the Westaman islands, off the coast of Iceland. The lava struck randomly. Before the eruption, there was no significant difference between the people who lost homes and those who did not. But afterwards, the ones whose homes were destroyed were more likely to leave the islands, by 42% to 26%. (They were compensated for their loss, but did not have to spend the money on rebuilding their old home.)

Researchers traced the islanders’ progress. They found that, for those who were under 25 at the time of the eruption, losing a house led to large material gains. “By 2014 those whose (parental) houses were destroyed earned over $3,000 per year more than those whose (parental) houses were not destroyed.” The gains came from moving: those who upped sticks made $25,000 a year more than those who did not. They were more likely to go to college, and to find a job that matched their intellect and aptitude, rather than following the islands’ default career of catching fish and getting by. Generations of parents have threatened to “light a fire” under their shiftless offspring. It turns out that’s not a bad idea. ■

First Stop: Singapore

Day one in Singapore - has been hot and exhausting, but also beautiful and fragrant (especially in the Hawker Centers!). We landed around 8 am, after a pretty uneventful 17 hour 20 minute flight from SFO to SIN. And don’t you always wish for uneventful travels? It’s really is the perfect adjective but also the best when traveling for so long. Our isle was quiet, with a small, friendly, and quiet woman who was nice every time we asked to get up to use the restroom. We mostly slept, but also watched a bit of TV, putting on Crazy Rich Asians to refresh our memory of the movie and prep for Singapore. We joked throughout our whole stay if we would see or meet anyone like Astrid, or where she would be hanging out. (We didn’t find her.) Then, breakfast was served and taken away, the cabin was being prepared for landing, and we were sitting on the tarmac in Asia! We made it - we were finally here in Asia and all the stress of wrapping up work, saying goodbye to our friends and family, and packing up our whole lives - selling our things, storing our things, moving out and cleaning our apartment...all the stress disappeared and we were finally here, starting out our dream. 134 days to go!

We made our way through customs and baggage claim and found the MRT (Municipal Rapid Transit), getting a 2 day tourist pass that will allow us to explore this small city in a less humid and sticky (and maybe also faster) way. We walked about 15 thousand steps - from our hotel to a couple food centers - the first and second didn’t really catch our eyes so we kept walking. We stumbled into some kind of outdoor shopping center, a lot of stalls with random things for sale - from wallets to fruits to cleansers and beyond. From there, we found a food stall with some yummy looking noodles that we purchased for S$1 (Singapore dollar) which is $.74=1 Singapore dollar. They were delicious, nutritious, and left us hungrier. We circled the joint and ended up getting a small bowl of laksa that was good, but a little spicy for my taste. After the laksa we thought we would head out and continue exploring, so started to make our way back to the hotel in hopes of being able to check in (and shower!). Luckily, by the time we got back, our hotel room was ready and we were able to freshen up before heading to Chinatown’s Maxwell Hawker Center.

The Bencoolen MRT station is about 35 steps outside our hotel, which makes transportation super easy, especially for any destination off the Downtown MRT line, which Chinatown qualifies for. We jumped on and headed towards the Hawker goodness. Emerging from the station, we were greeted with a festive street adorned with lanterns, shopping stalls, and tons of people. We perused the scene as we slowly made our way to the Maxwell Hawker Center to try the world famous Tian Tian Hainanese Chicken Rice. While crossing the street (read: jaywalking), we met a local who asked where we were from/where we were going, and started to chat as we were headed in the same direction. We asked him about Tian Tian and he said he while he loves it, he never goes because the line is always very long and takes about an hour. Hearing this news, hungry, hot and tired Heidi and Brett decided the wait wouldn’t be worth it, so asked what stalls he would recommend. He offered to take us to the eatery, so we followed. When we turned the corner, by some crazy stroke of magic, we found ourselves in front of a line-less Tian Tian and were able to place our order and get our food literally within one minute. It was an incredible streak of luck, and the hype is really worth it - the rice is so flavorful Brett dubbed it the best rice he has ever had. By the time we left the Hawker, the line was forming outside and around the building.

After eating we decided to continue exploring the city by foot, and made our way to the infamous Marina Bay Sands Hotel. Beautiful, iconic, and huge, we felt like we were in Vegas with the millions of restaurants, shops, escalators and signs. We made our way up to the 57th story and took in the views from the top. We checked out the ArtScience Museum and agreed to come back first thing in the morning to avoid the crowd. Then, we found our way back to the MRT station and headed to Little India. Only a couple stations away, we got out and started walking. Where Chinatown was lively with people everywhere selling and buying goods in outdoor stalls, Little India’s vibe was much calmer: streets lined with shops where people could pop in and upstairs if anything caught their fancy. Very few people were shopping in the markets, and there weren’t many people on the street. We came across a S$6 eyebrow threading station, so popped in for a quick touch up, but with not much else going on, we decided to make our way back to the hotel by foot. By this time in the afternoon the sun was no longer directly shining down on us - clouds had rolled in and provided a bit of cover to help make the walking a bit more tolerable. It was about a 30 minute walk, on which we found a vending machine that serves freshly squeezed orange juice for S$2 - something we couldn’t pass up. We watched the oranges get sliced and squeezed directly into a cup, and, once full, were able to remove the cup and drink cold, tart, freshly squeezed juice that absolutely hit the spot. A few doors down, we stumbled across a small dim sum house whose smells captivated our noses, forcing us to indulge in just a few dumplings.

From there, it was a quick walk back to the hotel. We were hot, sweaty, and tired, so thought taking a dip in the pool may give us a new wind. We changed into our suits and headed to the pool - only to find the water so cold that we actually opted for the hot tub. Crazy, I know, but after getting to the hotel room with the freezing artificial air blowing on our bodies, we were actually cold and happy for the hot tub. Plus, we had walked about 15,000 steps after being on a 17.5 hour flight, and the heat was not only healthy for our muscles, but a great excuse to stretch. At this point we had every intention to go out and grab dinner - but by the time we got back to our room and showered, we agreed we were pooped and thought a good night's’ rest would make the world of difference tomorrow. So, we got into bed, turned on the tv, and flipped around to see what Singapore News and TV was all about. Although we were OK staying in for the night, we were hellbent on not going to bed too early - we were aiming to stay up until 8 and it was only about 6 at this point. Starting to get hungry, I googled the closest, easiest, most affordable option, and wound up going downstairs to Baja Fresh and getting a burrito for us to split. I am not ashamed or embarrassed at all, although would have preferred any Mexican joint back home (obviously). We shared it in bed, until we were full, then brushed our teeth, hit the lights, and did some light research on the computer before PTFO.

Day two started earlier for Brett than it did for me. We woke up around 3:00 AM and forced ourselves to try to sleep a bit longer. I was able to (s/o to my favorite app, Calm, which helps me fall asleep and mediate and I cannot say enough great things about. If you want a free trial, LMK), but Brett was not as fortunate as me. So, he rested and I slept until about 6:20 AM, when there was no way I was going to be able to sleep for another second, so we got up and started our morning. And what’s a better to start your morning than going to the pool?! We couldn’t think of one, either, so that’s what we did. It wasn’t that hot yet, so we dipped in the pool and spent the majority of our 20-ish minutes out there in the hot tub. Then, we returned to our room, showered, and headed out to try a traditional Singaporean breakfast: Toast Box. We got Set 1: Kaya Toast with eggs and coffee. The coffee was excellent, and Brett liked the toast and eggs. I am not one for under cooked wet eggs, and I think Asia is all about those, so I have to be honest when I say I didn’t even try the egg. I did try the toast - it was perfectly toasted - some kind of sweet jam with butter and coconut. Interesting - good even, just a bit sweet for my liking. From there we thought we would head to the Merlion Statue to try to get a good picture before too many tourists showed up, but we got lost on the MRT (took the wrong line, rather) and decided to just head to the ArtScience Museum since we were much closer. After signing up for the Sands Reward Membership, we headed to the museum to buy our tickets at the amazing discount of BOGO. I highly recommend taking the 10 minutes to show your passport and get the rewards card - you get 3% cash back at all shops and restaurants in the hotel, plus great benefits and savings and the museums etc. While I signed up, Brett found me an apple, which I ate en route to the museum. We got our tickets and headed into the first exhibit: Future World.

The exhibit was interactive - featuring artworks that combine art and science to bring us inside natural worlds comprised of entirely digital technology. We grew flowers that we could project onto the walls, we planned where to put bridges and transit centers in cities, and would see how our choices affected the digital city; we went down slides, and played with huge balls of lights that made sounds. My favorite of the 6 rooms was the Space room - which used lights, mirrors and music to transport you to what felt like outer space: placing you in the stars of our galaxy. We took some cool pictures here, but mostly just enjoyed the changing light show that corresponded with the sounds coming from every corner of the room. We then headed to the Minimalism exhibit, which was basically a bunch of abstract art that didn’t start any joy for either of us. We stayed long enough to figure out a bomb Dim Sum restaurant to head to, and left the museum in search of lunch.

It was a fast MRT ride - about 2 stops and 2 blocks to the restaurant Swee Choon. It looked closed when we got there - big panels down over the windows - but we quickly learned this was to block the heat and found our way inside. We were careful to make sure our eyes weren’t bigger than our stomachs when ordering, and scarfed down the authentic and delicious food almost as quickly as it arrived. While eating, we looked up directions to Selfie Coffee - this little coffee shop on Hijab Street that prints your selfie on your coffee (or beer, or whatever you order). It was a 15 minute walk past Arab street, so we decided to brave the heat and take a stroll. When we got too hot, we would pop into a shop with AC and pretend to be shopping while really we were just cooling off and looking at all the things for sale. Then, we’d move on. Hijab street was super cute - maybe my favorite neighborhood of Singapore that we saw. Super hipster, with murals and vibrant colors along the walls and plants everywhere. There were tons of shops, cafes, and restaurants, among them Selfie Coffee. We went inside to find a line and that they only accept cash, so decided to pass on the $8 coffee. Instead, we wandered next door to a cute elephant shop, and found ourselves in a conversation with a funny local who was telling us all about where to go, what to eat, and tips to save money. He was so excited for us to be traveling and wouldn’t let us buy anything.

From there, we headed home via the MRT to nap. It was 90 degrees with 80% humidity, and we knew we wanted to return to the Museum to check out the last exhibit before the Gardens by the Bay’s light show. Before snoozing, we decided a final dip in the pool would be lovely and were able to brave the cold water in the hot heat… it felt great! Then, we took a solid hour nap, and headed to the Merlion Statue and to explore the downtown area. It was a 15 minute MRT ride and a 10 minute walk along the waterfront, with beautiful views of the Marina Bay Sands Hotel.

So, we grabbed an iced coffee from Starbucks and started strolling. We ended up walking to the tourist-infested statue, then around the water past a pop up amusement park and into the Shoppes, and onto the ArtScience Museum. We went back through the Future World exhibit and then checked out the last exhibit - All Possible Paths: Richard Feynman’s Curious Life. It was interesting, I kept thinking how much my mom would love it. After that we headed to the food court for a quick chicken rice and then off to the gardens for the Spectra Light Show. A free, twice-a-night light and music show that was absolutely incredible.

Once the show concluded we, along with hundreds of others, we moved like a herd of cows slowly to the MRT to head to Lau Pa Sat, also known as Telok Ayer Market, which is also casually referred to as “Satay Street”. It’s a historic building located within the Downtown Core area of Singapore, and by day it has some shops, but by night it becomes an outdoor eating oasis. We grabbed a beer and some satay from “The Best 7&8” stall - chicken, beef, and shrimp - and took in the noises, smells and sights while we waited and ate. This all seems innocent, but we quickly learned an important lesson here: don’t order before confirming prices. Our food was paid for and delivered no problem, but the beer was another story. The waitress came to drop off the beer, asking for S$5.5. As I got the money out to pay, Brett refused it - saying there is no way he would pay that much for such a small cup of beer. The waitress didn’t like this, and started arguing with him and ended up pseudo-cursing him, saying something about his mother and future wife and kids. Sitting there, I could only be a little concerned and wonder if the S$5.5 could really be the savior of our future, but, before i could wonder for too long the lady gave up and left us alone. Leaving us with the lesson of asking prices before ordering to avoid confrontations and curses.

Finishing our food, we decided to just head home, as tomorrow would be a long day, and decided to head home and turn in. We hopped on the MRT and noticed for the first time we would be passing Orchard Street, so decided to stay out just a bit longer to check out this famous epicentre of shopping in Singapore. While it was definitely decadent, malls on malls with stores and boutiques and eateries of all kinds...it was also just a lot of shopping. We enjoyed the walk but didn’t really shop too hard, as we are on a budget and things will get a lot cheaper once we get to Thailand. We ended up walking back to the hotel - only about 20 minutes or so - and didn’t really get into anything special: we packed our stuff, set an alarm, and jotted down our spending for the day before hitting the lights and the hay.

6:30 came early, and we must have been excited or jet lagged, because we were up and out of the hotel by 7:04 and en route to the airport. It was an easy MRT ride, and before long we were checked into our flights, baggage dropped off at the counter, and our biggest worries were which Priority Pass Lounge we would check out first. We had 2.5 hours until boarding and we wanted to spend them well. So, we did just that! We ended up preferring the second of the two lounges - a Japanese Restaurant that offered free breakfast - Brett got the traditional Japanese breakfast, consisting of a huge slab of salmon, rice, soup, octopus, and undercooked eggs. I went for the American breakfast and deeply regretted it. I doubt I’ll get used to uncooked eggs and I have a hunch that they love not cooking eggs in Singapore, or maybe even the greater SEA region. After finishing our breakfasts, we had one thing left to do - get some birthday bubbles. We stopped by the duty free shop and got a beautiful bottle of Veuve to pop in Thailand, then went through customs and boarded our flight! Stay tuned for what unfolds next...

You can immediately tell how clean the city is. It’s pristine. Well done, Singapore.

The MRT, as mentioned, is the #1 way to get around. The government taxes people who drive a TON of money, which keeps most people out of cars on the street, and encourages them to use the metro or other public transport. Therefore, the government can easily use all MRT stations as a platform to influence and inform their people. We were impressed to see so many videos, ads, posters, etc about what to do in an emergency, how to get help, etc. This can be excellent in informing people on what to do (IE - huge campaign awareness about molestation at the moment, so high visibility and encouragement for women to speak up and seek help if necessary) but also they take every opportunity to remind people of punishments associated with breaking laws, which we thought was a bit gruesome. Definitely an element of fear in the culture, which keeps the city clean and sketch people at minimum. 

Crimes are heavily enforced, and punishments are kinda crazy. Building off the example I shared about their molestation campaign, we did a bit more research as the signs say “You will be fined and caned.” in bold red letters. That’s right, you read it - CANED. So we dug in a little more to learn that only men can be charged with molestation, and, SINGAPORE CANES PEOPLE! How cruel and unusual. Singapore is an expensive city, so not the best for two backpackers hoping to stretch our dollars to travel the world for a year. However, it is also a city of amazing food, which is very hard for this little foodie to pass up. Don’t get me wrong - there are definitely ways to easily spend a ton of money on food, but there are amazing options for delicious and cheap eats, if you are willing embrace the street food! (Fun fact: did you know that Singapore is the only place where a street food vendor - yes, someone who sells a dish for S$5 - ⁣has earned a Michelin Star!?) Anyway, the place to eat while minding your wallet are the “hawker centers” - well-known, government monitored for food safety, and are packed with delicious, local and cheap cuisine. The price competition is fierce, so you can eat really well for not much.⁣ Unfortunately, these hawker center may not last too much longer as we know them today. We learned from locals that most of the younger generation has no interest in cooking or learning the art of food. Instead, they want to a different life (office jobs, tech, etc), which parents are supportive of. However, this means these stands, where one recipe has been perfected over decades, may cease to exist.

Holy humidity, this place is HOT HOT HOT!!

For those of you curious, we spent $422 USD including everything (ie - food, transport, hotel, even the Veuve - which was duty free but still $61 USD) while in Singapore! This is obviously above our daily average goal, but when booking the hotel I thought I was using a $200 hotels.com voucher which ended up not working, so we have $200 savings towards hotels elsewhere in our trip. Excluding the hotel and the champagne, we would have spent $145. (We also didn’t need to buy the full passes to the museum - the Future World exhibit would have quenched our thirst and gave us back S$20! But, oh well! Bristling at any suggestion that it is involved in neo-colonialism, China insists that it comes not to exploit, but in partnership with and for the mutual benefit of its African partners.

The sight then, of a Chinese actress in blackface, leading an African man dressed as a monkey around a stage as a way of celebrating a vital trading relationship on prime-time national TV, seems particularly ill-judged.

Simply naive and clumsy? Or a sign of something deeper? Either way it suggests China’s soft-power project is still a work in progress.
