Besan Ladoos are the heart of Maharashtrian Diwali. You will find this homemade sweet in almost every house, as it is so delicious yet very easy to prepare.
To make besan Ladoos, first you need it to roast in a ghee and sugar till its color changes to yellowish brown. Once done, make a small round shape ball and garnish it with your favourite dry fruits to give a final touch.

2. Chiwda

Another healthy yet tasty version of Rice/Corn Flakes. Also, it is one of the popular items of Diwali Faral. So delicious yet easy to make.
To make Chiwda, you need ingredients such as Urad Dal, Chana dals, Groundnut, Dry Coconut fried with salt and Red chili powder and curry leaves to make its tasty masala. Once done, add fried rice/corn flakes and saute it for 10 minutes.
Now, this healthy yet delicious savoury, spicy snack is ready to eat.
3. Chakli

Also known as Murukku in South India, this crispy snack made of rice flour is not only crispy, delicious and easy but also cracking to look at.
To make it, you need a rice, urad dal, besan flour mix with some spices like salt, chili powder, cumin seeds and asafetida or can use easily available Chakli masala. Prepare a semi - harden dough. Keep it aside for a while and then give it a spiral shape. Once done, deep fry it in an oil to make it crispy and crunchy. However, you can bake it too.
4. Karanji

They are perfect to eat with a hot cup of tea anytime of the day. Most communities have a variant of this recipe and are known in Gujarat as Gujiya and Karchikkal in Karnataka.
Prepared with Semolina, Maida or Wheat flour and stuffed with grated coconut roasted in Ghee, Sugar, Cardamom, and Cashew and deep fried to form a scrumptious sweet dumpling.
5. Chirote

Chiroti is a traditional Karnataka sweet that is prepared on special occasions and religious festivals. It is also a very popular dessert in traditional Maharashtra’s cuisine and is called Chirote.
Prepared by kneading and rolling out Maida flour into layers and fried in ghee. This fluffy dessert is coated with sugar, cardamom, cashews and almond.
6. Sakarpara

Shakkarpara also known as Shankarpali, characterised by its diamond shape. It consists of sugar, ghee butter, milk, maida flour, salt, and semolina. It's another version called 'Tikat shakkarpara' is a savoury, spicy dishe. The only difference in this, is that it uses a lot of spices to make it spicy and savoury. But I really love this version of Shankarpali.
Prepared with a ghee, maida, salt/sugar and some spices like cardamom powder, asafoetida and grated cashew. It is then kneaded into a semi - hardens dough which is then kept aside for a while. Thereafter, it is rolled into a flat dough, which is then cut into the shape of diamond and then deep fried in an oil or ghee giving it a crispy, crunchy texture.
7. Rava Kheer

Here’s another easy dessert recipe for the festive occasion of Diwali.The sooji kheer recipe gets done in about 20 minutes and is so simple that even a newbie can make it easily. This semolina pudding is easily digestible and works well even as baby food.
To make rava kheer, roast semolina with a ghee till its colour changes to golden brown (You will be able to smell its fragrance). Add milk, sugar and keep on stirring to make it little thick and dense. Now give a final touch with cardamom powder, dry fruits (any of your favourite) and then enjoy this mouthwatering sweet dish.

My tryst with the Jodhpuri kachori began some distance away from Jodhpur. Tucked away in the by lanes of Sowcarpet, one of Chennai's oldest neighbourhoods, is Maya Chaats - a tiny hole-in-the-wall eatery that mostly serves just two dishes. A flaky onion kachori and a sticky, sinful mawa kachori guaranteed to give you a sugar rush. The owner of this establishment is very proud of his Jodhpur roots and believes that no city does the kachori better. It's also ground zero for the city's local food scene, where international travellers and locals rub shoulders at busy eateries that function more efficiently than factory assembly lines. It's here that I validated the claims about Jodhpur's kachori hegemony. The Kachori might have originated in Uttar Pradesh, but Jodhpur has elevated this anytime snack that tastes equally good whether its piping hot or at room temperature. It's also here that the Mawa Kachori was invented. But there's more to Jodhpur's comfort food than just the ubiquitous kachori. We pick five places you must check out in the city:1. Janta Sweet HomeIt's a fitting name, this eatery is a great leveller in this city with patrons across classes making a beeline for their signature Kachori. A short walk from Ghanta Ghar, on Nai Sarak, Janta is busiest during the afternoons and evenings. Onion prices were hovering above the Rs 100/kg mark while I checked in to Janta, but the Pyaaz ki kachori was still on the menu at the same price. While Janta has expanded beyond this original outlet, this is the spot that locals still swear by. 3. Shri Mishrilal - Lassi and JalebiThe Mehrangarh fort towers over Jodhpur's Sardar Market Giridikot and the area around the clock tower. Shri Mishrilal is one of the most historic eateries in the area with a legacy that dates back to 1927. Their Makhaniya Lassi is just what you need on a sunny afternoon or the perfect finish to a hearty breakfast. Flavoured with cardamom and kewda, this creamy lassi is finished with a generous dollop of makhan and the perfect antidote to the spicy mirchi vadas and kachoris. While you're here, also check out their jalebis with rabri and the besan ki chakki (gram flour barfis that melt in your mouth).

Shri Mishrilal is one of the legacy eateries in Jodhpur that dates back to 192.4. Pokar Sweet HomeThe name is almost misleading, while Pokar has an extensive array of sweets, including an interesting Chandrakala - crispy maida fritter with a dal filling; it's their savouries that are their calling card. The Qubuli (also spelt kabuli) is an interesting pulao with layers of rice, gravy, vegetables and dry fruits. Jodhpur's mirchi vada is almost as popular as its onion kachori and this one's the clear crowd favourite.

Let’s End our day with Ram Ladoo at Evening-GrocioNoida.
Ram ladoo is a street food delicacy from popular delhi street food cuisine. The whole combination of ladoo served with green spicy chutney is a tangy and savoury chaat recipe. It is actually a round shaped ball ladoo made with moong dal and chana dal batter and served with grated radish toppings.  You can make these ladoos on special weather like during monsoon and enjoying the pleasant smell of rain.       TOTAL TIME : 4HRS 20MINS     |         SERVINGS : 18
INGREDIENTS REQUIRED :
FOR PAKODA:
¾ cup moong dal
¼ cup chana dal
1 inch ginger
2 green chilli
1 tsp cumin / jeera
pinch hing / asafoetida
pinch baking soda
½ tsp salt
oil for frying
FOR CHAAT:
¼ cup green chutney
¼ cup tamarind chutney
3 tbsp radish, grated
2 tbsp coriander, finely chopped
pinch chaat masala
pinch aamchur / dry mango powder
pinch salt
HOW TO MAKE RAM LADOOS :
1. firstly, in a large bowl soak ¾ cup moong dal and ¼ cup chana dal for                 4 hours.
2. now drain off the water and allow to rest for 5 minutes.
3. transfer the dal to the blender and add 1 inch ginger and 2 green chilli.
4. blend to smooth paste adding water only if required.
5. transfer the batter to the large mixing bowl.
6. also add 1 tsp cumin, pinch hing, pinch baking soda and ½ tsp salt.
7. beat and mix well until the batter turns frothy.
8. now dip your hand in the water, and start dropping them one by one to hot oil.
9. keep the flame in lower to medium stir occasionally.
10. also, fry the vada till they turn golden brown.
11. drain off the vada on to kitchen towel to absorb oil.
12. place the fried pakoda into the serving plate.
13. top with 3 tsp green chutney and 2 tsp tamarind chutney.
14. further top with 3 tbsp grated radish and 2 tbsp coriander leaves.
15. now sprinkle pinch chaat masala, pinch aamchur and pinch salt.
16. finally, enjoy ram ladoo topped with more green chutney and tamarind chutney.
