I just opened the denial letter from my insurance plan regarding my request to have them cover my current therapist. There reason for the denial: There is ONE (1) other therapist qualified to treat me in my is entire insurance plan. This therapist is over 460 miles away and on the other side of the state. Yes, virtual therapy is a thing but you've got to be kidding me!! There is only one therapist in the entire state covered in my plan. Hmm, I wonder why that is? This therapist is based out of San Jose and I'm in San Diego. If I want to see her in person am I going to drive 7hrs north for a one hour session and then drive 7hrs back?! That's fucking ridiculous. I will absolutely be appealing this because what the fuck are they thinking?! There is NO logic in their decision. Oh that's right. Insurance companies are about profits rather then the well-being of a human being. Sending me to see someone over a 7hr drive away is SOOOO much more profitable for the insurance company. To them, I'm a face on a piece of paper that has to be put in the shredder.
Additionally, my single case agreement with my dietitian has STILL not been approved by my insurance. I started working on this in January or February. A month ago I asked the case manager how much longer this will take and she said, "About three more months" Given I haven't heard from her since then (because there is nothing new to share with me) I have a feeling her comment was an incredibly low estimate and a more realistic estimate is 6-9 months. If that does happen it will have taken over a YEAR to get a single case agreement approved. I can't even begin to explain the amount of anger boiling in me over the ridiculousness of all of this. They make it this hard with the hope that you will give up and have to see someone that makes them more money. To them my healthcare equals money. I don't exist unless it's as a dollar bill. That's it. (That isn't sarcasm or exaggeration. This is literally why they exist.)

2. Practice social distancing

Although some stores do offer special hours for health compromised individuals, they’re not always convenient. Get fresh groceries and drop them off regularly or do the cooking yourself. 5. Keep the toiletries stocked

I think I want to move to California. Even taking increased cost of living into account, I could make much more money there. For example starting pay for a dietitian is 22-24 an hour in Utah :/ But I would only need to make 29 an hour in Sacramento, 34-36 in San Diego/Los angeles, and 38ish in Oakland to be equivalent to that, but most places there are starting at like $40 something

Quinoa Heart of Palm Salad Recipe for a Gluten-Free Diet hi I'm Ursula ridings registered dietitian at sharp healthcare today we're going to be cooking up some tasty gluten-free recipes here to help me do that is chef Bernard from the marine room in La Jolla and my favorite red quinoa yet - and I said I am gluten-free as well and those recipes of what I cook at my house so I am using ranked you know I tell us about it quinoa is fantastic not only because it's gluten free but it's very high in fiber and protein so you're getting a lot of bang for your buck with this grain and actually I should say that quinoa is actually a seed not a grain that's very true and a lot of people get confused about that but they say see now what I did I just I put a little bit of tangerine juice dial it with the zest and as you can see now we have the remaining ingredients on our table so tell us about it okay so we have some tomato which is very high in lycopene and with that lycopene it's helpful in reducing your risk for cancer fantastic and red onion for some flavor and some color and cucumber a boil up so we have some nice crunch here now whether your health requires you to eat gluten-free or not this is a very healthy dish the quinoa actually has a component called saponin and that helps to reduce cholesterol and so when you're getting ready to prepare your quinoa I understand you need to rinse it if that correctly giorious it and it's really simple it is two parts of water for one part of kilowatt now what I'm adding to this dish is my favorite oil local oil also which is extra-virgin avvocato all very important with all those ingredients cool to you farmers market not only you able to get a business rent but you're able to also support your local farming communities that's fantastic now when you rinse the quinoa do that briefly we do want to rinse off that bitter taste but if you rinse it too long then you're rinsing away that helpful component that helps to lower cholesterol a little bit of sea salt pepper sea salt so delicious but in moderation it does have the same sodium content as table salt but it does make for a delicious dish and nobody want to really make sure that you add that extra flavor what you do is you just have some beautiful basil and you just slice it remember you want to make sure that you chop it only one time the more you chop it the more oxidized and less fragrancy yes right so here it is this is our last touch we don't want to lose that health benefit either from that basil which is an anti-inflammatory that looks absolutely delicious I mean it is all about being in season being healthy and okay what's better than a nice red quinoa salad give this a try this recipe a try at home and you'll be sure to love gluten free grains it is a winner it is good for your heart is good for your soul enjoy mmm

Summer wrap up
Well it's been a year since i've blogged on here. Thought I would give a summer 2010 update. To sum up this last summer and to give a forecast of fall for me and the kids. I have been working at the local Kroger since last December. Finally transferred from the Hebron Kroger and the 30 minute commute. I work early mornings and afternoons taking care of the chef case and cooking with the Bistro staff. I have enjoyed working in the culinary trade and have had thoughts of going back to school perhaps getting a culinary degree along with nutrition or dietitian degree. 
Right now I am still paying for the debt from the 12+ times my ex-husband has taken me to court these last 5 years. The court has ordered him to pay these court fees but he has not. I have just received notice from Washington state stating that my ex is still trying to change child support. He has not been paying child support for over a year. Not sure why it's taking so long for the state to give penalties for this but I do hope that the constant filing he does in the court system will be put to an end. So school will need to be put on hold for me until the finances are there. I had to take my kids out of private school since I could not afford the costs. Public school was not a good change for us and we are currently doing homeschool which was started this fall. The curriculum is called Classical Conversations. My mother has generously been teaching my kids and is also a tutor for the school which meets once a week to prepare children and parents for the week with new material. My father has also gotten involved with teaching. I am hopeful that this will give my kids the learning environment and attention they need to succeed. They spend much of their time at my parents house where they can get attention and discipline from a male role model. I think that at the age my boys are at, this is a time where they need this since neither one of their fathers have tried to engage as fathers or role models. I have been and will continue to be in prayer about what is best for my kids and their education. So far this seems to be working out well for them.
We spent time this summer with Aunt Jeanette in San Diego California where we spent a week surfing and the kids spent a wonderful time at surf camp. We also had delicious food and stayed at a beach house where we could relax and grill out by the pool. In August, Clayton and Jordan took a road trip with their grandparents and Jordan went on a 12 day hike with his grandfather and uncle around Mt. Rainier. It was such a great opportunity for him to experience and he said he enjoyed it very much and I was glad he could go.

Sourcing Food in These Times
There is no need to recount details of empty grocery store shelves. If we haven’t seen them for ourselves, the media makes us aware of the current situation. Most experts assure us that our food supply is adequate but supply chain disruptions lead to shortages now. And then there’s the food security crisis for millions of Americans.
These problems are too big to address here and I am no expert. I am a gardener, dietitian and home cook. But, I have embraced a new household role as “hunter-gatherer” and will share some resources with you.
Many of us with a place to grow food and the other resources to do so—time, inclination, climate—are rethinking our garden plans for the upcoming season. I recently posted on Vegetables That Grow in Less Than 2 Months. Maybe some of us will plant extra rows to freeze, can or share with neighbors or even a food bank.
To supplement my garden produce and food stores I signed up for deliveries from Imperfect Foods. Their tagline is “Grocery items that help reduce food waste—delivered for up to 30% less than national supermarket chains.” My first box was perfect for a St. Patrick’s Day dinner—parsnips, potatoes, Brussels sprouts. I added garden carrots and beets for my take on a New England boiled dinner.
Imperfect Foods offers an organic or conventional produce box and you can add or subtract items from the weekly box. There is an option to choose every other week and various boxes to fit your household size. Pantry items are available too such as tricolor quinoa that isn’t quite tricolor so offered through Imperfect Foods. Ditto the dried mangos I ordered—a little darker than their usual standard. You can learn why each item is available—imperfection, surplus etc. They’ve been around since 2015 and started in San Francisco. Check to see if they deliver to your zip code. The whole process is very easy with delivery updates to your phone.
I couldn’t find any dried beans or other legumes when I was out today for a quick trip to the grocery store. Then I remembered talk of bean clubs which I’ve read about on other blogs. Searching online I found Rancho Gordo in the Napa Valley of California. It checked all the boxes: heirloom beans, small business, “local” California company, free shipping with $50 order, no membership required. I purchased a gift card for my son and family. Shipping not expected until April 15 because of demand but that’s ok with me.
Consider this from the San Diego Sustainable Living Institute: ”With farmer's markets closing up, many small farms are losing one of their only avenues for income. That means at the same time people are having trouble finding healthy nutrient rich and immune boosting foods, we are risking losing many businesses.” The piece goes on to list local/regional farms that are available and open for your support. Some continue with farm stands while others offer pickup or delivery. Check your local area for options.
