Brewday - Robust Porter
It’s that time of year to start thinking about dark beers! My last couple have all been chocolate inspired stouts so I thought I’d turn my hand to a Robust Porter instead. Just in case you’re unsure what a Robust Porter is here’s a bit from the BJCP.
Although a rather broad style open to brewer interpretation, it may be distinguished from Stout as lacking a strong roasted barley character. It differs from a brown porter in that a black patent or roasted grain character is usually present, and it can be stronger in alcohol. Roast intensity and malt flavors can also vary significantly. May or may not have a strong hop character, and may or may not have significant fermentation by-products; thus may seem to have an “American” or “English” character.
Well I’ve deviated a little with having mostly roasted wheat, my malt bill being 80% Golden Promise, 7% Oak Smoked Wheat, 6% Roasted Wheat, 4% Heritage Crystal 150, 2% Pale Chocolate Malt & 1% Black Malt. I calculated for quite a low original gravity as the magic ingredient in this beer would be some honey from my local beekeeper which will bump up the ABV considerably after the mash. I’m now aware that the best time to use honey is several days into fermentation when it starts to die down a bit. This enables you to keep all those wonderful delicate honey characteristics which are just blown clean off if you add it to the boil and main fermentation.
Unfortunately I’m not sure went wrong with the initial brewing as I ended up at 1.040 when I was aiming for 1.049, I have a sneaky suspicion that doing a 45 minutes boil has knocked out my calculations, so I think I’m just gonna go back to doing the full 60 from now on. I appreciate the time saving and stuff that was inspired by Brulosophy but I’ve had a few brews that have been off what I expected since I’ve tried these methods. 
Anyway I was also a bit excited to use some of my first First Gold homegrown hops in this brew as well, I went for 35g of Fuggles for bittering, followed by 20g of First Gold for mid-late addition with a further 30g for the last 7 minutes. As I thought I’d need a few more IBUs in a Porter to balance out the malts. First Gold have quite a high Alpha for an English hops and are also supposed to have  Orange, marmalade and spicy qualities which would go very well in this Robust Porter. Of course all my IBU calculations are a best guess with them all being home grown.
So once the wort was cooled to 19c I pitched rehydrated Danstar London ESB yeast and we were gently fermenting away after 12 hours. The next phase is to come later this week, the honey addition. A little background on that dark mysterious liquid that is in the photo....
I popped down to my local Beekeeper with the intention of getting one jar (450g) of some Summer honey, but when he recognised me as the homebrewing guy the old man disappeared into his kitchen and returned with 2 jars of what I can only described as honey treacle. He said he’d been up on the moor to some bees he has up there and that this was the end bit of spinning out some extremely rich North York Moors Heather honey. He was just going to feed it back to his bees as it had a bit of wax in but I could have them for free as I was using it for brewing. I couldn’t refuse that offer. Good thing I undershot my OG as I now have 2 jars, I estimate about 800g if I avoid the detritus, which should get me back up around the 5.5% ABV mark.
When I come to add this I’ll use 500ml of water and bring it to the boil, then take it off the heat and as it cools add in the honey. Once cooled to around 20c I’ll add that directly into the FV. Taking gravity readings before and after so I can work out what my FG will be. Give it another week or so to finish up and then it’ll be time for bottling. Fingers crossed for a good beer with this one, I’ve been dying to get that beautiful dark honey into a beer.

Anders American Pale Ale Beer Recipe D.I.Y.
Hey Guys and Gals!
Are you looking for an awesome Anders American Pale Ale Wheat Beer Recipe? You now have no reason to look any further; you have just found what you have been looking for!
Ingredients:
Beer Style: Ale Recipe Type: all-grain Yield: 5.25 US gallons
Step 1
8 lbs – Pale Malt (2 Row) US (2.0 SRM) (Grain)
2 lbs – Vienna Malt (3.5 SRM) (Grain)
8.0 oz – Caramel/Crystal Malt – 10L (10.0 SRM) (Grain)
Step 2
1.0 oz – Cascade [5.5%] – Boil 60 min (Hops)
Step 3
0.2 oz – Cascade [5.5%] – Boil 15 min (Hops)
Step 4
1.00 tsp – Irish Moss (Boil 10 min) (Misc)
Step 5
0.2 oz – Cascade [5.5%] – Boil 5 min (Hops)
Step 6
1 pkgs – Nottingham (Danstar #-) (Yeast)
Step 7
5 oz of priming sugar
Directions
Step 1
Bring the water to a boil add in the grains it will now boil for an hour all following steps will be within this hour.
Step 2
Add hops once its at a boil 60 min
Step 3
Add hops 45 min in that being 15 to the end
Step 4
Add hops 50 min in 10 min to the end
Step 5
Add hops 55 min to the end 5 min to end
Step 6
Prepare a 2L yeast starter by stirring the yeast into the water then let mixture stand in cup for 15 minutes, make sure it is bubbling and then you will add it to your beer after the beer has cooled.
Fermentation Through Bottling
let cool in pot or primary before adding yeast, pour into carboy leave a at least a third of the carboy empty and put on airlock.
Chill wort, top off to 5 gallons, and stir to mix and aerate. Pitch yeast and ferment at 57F-70F for one week make sure your carboy is at least a third empty leaving space for frothing and foaming.
After 1 week rack into your secondary carboy and let sit for another week. The less exposure to oxygen the better it will taste.
Step 7
After the second week you will bottle the beer sterilize and then bottle and cap again siphon slowly so that that sediments don’t get mixed in.
Add priming sugar before bottling.
Estimate Of Your Numbers
Obviously when all numbers are all the same, gravity which shows you the sugar content if your original gravity is higher then it will have a higher alc. content. Final gravity higher will have a lower content.
Original Gravity: 1.052 (12.8° P) Final Gravity: 1.012 SG (3.0° P) Alcohol by Vol: 5.3% Color SRM: 4.2  Color Sample  Bitterness IBU: 27.7 Recipe Type: all-grain Yield: 5.25 US Gallons
