鮭魚鹹派Quiche au Saumon
起床後,梳洗過,化上妝,帶著一點點迷失的表情,一個人上咖啡館去吃早餐。
背靠著牆的長條沙發座位,跟前的圓桌上放著一大杯咖啡牛奶、一大杯水、一份牛肉可頌、一小份巧克力甜點。
毫無遮蔽的視野觀望著顯得悠閒清靜的晨間咖啡館,那些看似安逸的人們,有多少人成功的掩飾了內心的荒涼?
那個戴著口罩的女生有什麼故事?
那個別著耳機讀著日文口袋本的男生有什麼故事?
(男生為什麼總喜歡把皮夾放在桌上?)
那個在洗手間外頭大聲管人閒事的中年男子有什麼故事?
那對緊鄰著日光斜灑的落地窗安靜對坐的銀髮先生女士又有什麼故事?
有一首歌這樣唱著:一路上有人坐在地鐵張望擦身而過的廣��,有人怕錯過每段躲不過的新聞報導。
歌裡沒有唱到有沒有哪一些人還真摯誠懇地看著世界。
歌詞裡唱著:一路上有人能白頭到老,有人失去青春年少。
歌詞外的世界是,不論是否與一個人白頭到老,人終將失去青春年少,無一倖免。
歌詞裡唱著:有人在回憶中微笑,也有人為了明天而煩惱。
確實是,當世上值得微笑的只有回憶,當明天值得期待的只有煩惱...
然後我才突然驚覺,人的一生,就是一條單行道。
無法雙向通車,無法迴轉,也不會有美麗的事蹟迎面而來。
單行道上也不需要再尋找,要相信不用再尋找。只需要埋頭向前,走到底,不是死胡同就該萬幸。
人的誕生就是一個隨機的或然率,本身並沒有獨特的意義。
試圖為人的一生找出必然不可的意義,終究只是一場徒然。
也沒有太多故事。就算有,也盡是那些千篇一律。
再也不耐於這些自問之後,我離開咖啡館前往超市購物。
我需要一個滋味孰悉的Quiche。
<食材準備>
低筋麵粉-250g
蛋黃-1個
水-50ml
無鹽奶油-125g 切小丁
鹽之花-1 tbsp
<做法>
1.麵粉過篩,倒入攪拌盆
2.加入鹽,以叉子拌勻
3.加入蛋黃,以叉子拌勻
4.加入奶油,以手指將奶油及麵粉搓成細緻麵包粉質地
5.分批加入水,一邊以手搓成麵糰狀
6.以保鮮膜包好,放入冰箱冰隔夜
麵團做好,先享用買菜時順道在烘焙坊購買的這款鮭魚菠菜Quiche。
這家烘焙坊的Quiche貨源很穩定,雖然口味就很固定的那一兩種,但想吃Quiche的時候,也只能選擇到這裡來買。
然而老實說,不是我理想中Quiche的滋味,總覺得少了那一點點什麼...
隔天起床,簡單盥洗後就將麵糰從冰箱中取出退冰,為了讓麵團擀起來不那麼費力。
然後煮杯咖啡,一邊聽點音樂,瀏覽一些不顯重要的東西。
一邊想著這樣的生活還可以過多久...或是說,還要過多久...
可是我...還是喜歡聽故事,說故事。
我還是相信那些渾然天成的意義。
<食材準備>
鮭魚-250g
乳酪(Dutch Gouda Cheese)-130 刨絲
鮮奶油fat 30%-200ml
鮮奶-300ml
全蛋-2個
蛋黃-2個
鹽之花
肉豆蔻
卡宴辣椒粉
粉紅胡椒粒
<做法>
1.製作前30分鐘,將麵團自冰箱中取出退冰
2.烤盤及烤盅刷上奶油,將麵團擀成2mm的派皮後鋪到烤盤及烤盅上,並用手指仔細整理派皮,確認派皮完美貼合於烤盤各角。派皮鋪好後,用叉子在底部戳洞
3.鮭魚以鹽、橄欖油調味後,放入以200度預熱的烤箱,以200度烤30分鐘。烤好的鮭魚撕成小塊狀
4.烤鮭魚的時候,製作蛋奶填餡。取一只攪拌盆,加入鮮奶及鮮奶油,以攪拌棒略為攪拌
5.全蛋及蛋黃加入4,以攪拌棒攪拌均勻
6.加入適量鹽、肉荳蔻粉、卡宴辣椒粉於5,攪拌均勻
7.烤箱以220度預熱
8.鮭魚均勻鋪於派皮上
9.乳酪均勻鋪於鮭魚上
10.以過篩器將6過篩倒入烤盤中
11.將烤盤放入預熱好的烤箱,以220度烤40分鐘。以小烤盅製作的Quiche烤30分鐘即可
12.Quiche出爐後,撒上少許卡宴辣椒粉及粉紅胡椒裝飾
13.放至溫度下降,內餡凝結至可輕鬆以手拿取,即可享用
這次的備料一樣可以做出1大2小的Quiche。
小的Quiche有個好處。
烤好的Quiche總是需要等,等放涼,等凝結,等合適的入口溫度。
然而面對Quiche,我們卻從來不能等。
於是30分鐘一到,將小Quiche自烤箱中取出,留下大的Quiche繼續烘烤。
然後以面對Quiche時所能展現的最大限度耐心,給它一點時間變涼,凝結。
結果,還是在未達傳統微溫的狀況下迫不及待享用了它。
要怎麼對別人訴說這等美味。
有了搶先的滿足,完整的Quiche就能合乎程序的進行。
出爐,撒上裝飾,然後等...
經過等待,下刀後你會看見,正好的美麗凝結。
只是它的滋味永遠比不上那個等不及品嘗的小Quiche...

1, Tahap pertama isi panci sedang dengan air lalu rebus dengan api sedang hingga air berbutir kecil, pada proses awal mendidih.
2. Seperti membuat poached egg, aduk-aduk air dalam panci dengan sendok sayur dengan gerakan memutar cepat hingga air mulai panas.

3. Kocok telur dalam mangkuk. Selagi air masih berputar cepat, tuangkan telur kocok, aduk sebentar lalu matikan api dan tutup panci.
4. Setelah 2 menit buka panci, telur akan mengapung di permukaan. Angkat segera dengan sendok peniris dan tiriskan hingga air habis.

5. Taruh di atas roti panggang, beri garam dan merica. Kucuri saus cabai jika suka dan nikmati selagi hangat. Telur ini cocok buat mereka yang sedang mengurangi asupan lemak.

One of that called Pisang Rai. This cake is made from a banana and wrapped in flour dough then boiled and served with grated coconut sown, so that will be more fresh. In addition, this cake will remind us with Pisang Ijo cake (green bananas), but the difference is a typical Balinese culinary sown with grated coconut.

[日安小廚房]大蒜朝鮮薊奶油雞肉鳥巢菠菜麵
依舊是一道懶人快速料理。
起床後,吃一小碗優格,一點水果。
煮杯咖啡歐蕾,在瀰漫著精油香息的空間中研究一會兒林布蘭蘊含在光影之下的哲學。
然後在德佛札克的樂音中烹煮這道《大蒜朝鮮薊奶油雞肉鳥巢菠菜麵》。
用先前不明原因下買的大量各式義大利麵條,以及櫥櫃裡的常備懶人料理用罐頭。
也能說是一種清冰箱。
<食材準備-兩人份>
有機鳥巢菠菜麵-2人份
朝鮮薊大蒜醬-半罐(90g)
雞里肌-250g 切丁
香菇-4朵 切片
罐頭玉米粒-80g
鮮奶油-10 cl
蒜頭-4瓣 切末
發酵奶油-20g
布列塔尼海鹽
普羅旺斯香料
現磨黑胡椒
百里香
<料理過程>
1.鳥巢菠菜麵放入沸騰的水中煮至Al Dante(4-5分鐘)
2.煮麵同時取另一鍋,加入發酵奶油及蒜頭炒香
3.加入雞肉煎炒至上色
4.加入香菇,炒軟
5.加入朝鮮薊大蒜醬拌炒
6.加入玉米粒拌炒
7.加入鮮奶油,拌勻
8.以海鹽、黑胡椒、普羅旺斯香料調味
9.加入適量百里香增加香氣
10.加入煮好的鳥巢菠菜麵及適量煮麵水,略為拌炒至麵條均勻裹上醬汁即可
這道麵點食譜的發想,既是懶意,也是清理。
原本,沒有對滋味抱有太大期望。
結果,卻是意外的美味。
溫潤柔滑的適度濃郁,絲毫沒有膩感。
一份作為隔日中餐飯盒。
一份就著暖度品嘗,作為周日午餐。
斟一杯前晚睡前開瓶的紅酒作為佐餐酒,徹底違反白肉白醬白酒哲學。
說起口感,當然也是不太合適。
但一邊烹煮時就一邊一口一口啜飲,這樣無序無拘束的日常,也自由。
