Cooking Adventures: Crab, Cream Cheese, and Scallion, Wontons
Y.All. We are making crab rangoons this week. Which is what any sane person would call these fried crab wonton situations. I wonder what legal wrangling went into this overly long and descriptive title.Â
I have always been dubious about both seafood and Asian food. But thereâs never been any doubt that crab rangoon is a wonderful thing. Itâs crab, and cream cheese, and fried. Who am I to cast aspersions?
Ingredients!

First, you make the dipping sauce, consisting of chinese hot mustard, honey, and soy sauce.

Then you make the wonton filling. Consisting of crab, cream cheese, chinese hot mustard, siracha, salt, pepper, and scallions.

Youâre meant to food process everything but the scallions and fold the scallions in later. I...didnât do that. combined with the fact that I always have issues blend/food processing anything, everything was quite pulverized by the time I was done with it.

Fill, fold, then fold again. Always with an egg wash on the edges to hold everything together.
Then itâs time to fry.

A few at a time they go into the oil. The goal, being that that they come out golden brown and puffed.Â
Drain on paper towels.
And serve with dipping sauce.

Despite using a candy thermometer. And the fact that oil ought to cool by virtue of use, I felt like most of my wontons were cooking rather rapidly and becoming dark rather quickly.
I was also worried about the filling to wrapper ratio. I have a tendency toward overfilling, so I stuck with the recipeâs recommendation of a teaspoon per wrapper event though it seemed rather scant. And the result was predictable. Although I still canât argue with crab + cream cheese + fried, i missed the filing a bit in the finished product. Rather like a cheap chinese restaurant where as long as they can list the ingredients you are forced to believe them. Not much else you can do.
The dipping sauce was nice and spicy hoo.

Sesame chicken â boned, marinated, battered, and deep-fried chicken which is then dressed with a translucent red or orange, sweet and mildly spicy sauce, made from soy sauce, corn starch, vinegar, chicken broth, and sugar.

The Food Eyecatches in Yuri!!! on Ice
So I just noticed that each dishâs name is the in the background of the eyecatches, and I feel silly for not having noticed them before! Iâm a huge foodie, so I decided to look into each of the dishes featured during the commercial breaks of the show! Sources, including image sources, are provided at the end of each section.
Episode 1: Pirozhki

Literally meaning âsmall piesâ in Russian, pirozhki (пОŃĐŸĐ¶ĐșĐž) are little pies or buns that can either be baked or fried. They can be stuffed with savory fillings, such as meat, fish, vegetables, or potatoes, or sweet fillings, such as fruit, jam, or cottage cheese. They are often glazed with egg to produce its signature golden brown color. The traditional pirozhki we see in the show appear to be filled with beef and possibly cheese. (x) (x)
Episode 2: Katsudon

Katsudon (ă«ă䞌) is a bowl of rice that is topped with deep-fried pork cutlets, egg, vegetables, and other condiments. The name of the dish is a portmanteau of the Japanese words tonkatsu (è±ă«ă), meaning âpork cutlet,â and donburi (䞌), meaning ârice bowl.â There many different variations of katsudon, and the one that we see in the show is the most well-known, called tamago-toji katsudon (ć”ăšă ă«ă䞌), meaning âegg-bound cutlet bowl.â A modern tradition has developed for students and athletes to eat katsudon the night before a test or sporting event for good luck, or afterwards as a reward, since the Japanese word âkatsuâ (ćă€) also can mean âto winâ or âto be victorious.â (So this is actually not a tradition specific to Yuuri, itâs a Japanese tradition in general.) Episode 3: Shochu

Shochu (çŒé
) (not to be confused with the Korean soju [ììŁŒ] or the Chinese shaojiu [ç§é
]) is an alcoholic beverage typically distilled from rice, but it can also be distilled from a variety of sources including barley, sweet potatoes, and buckwheat (soba). It is typically 25% alcohol by volume, which is stronger than wine and sake, but weaker than whiskey and vodka. It originated in the Japanese region of Kyushu, and the particular shochu pictured here is from the Saga prefecture, which is where Karatsu (the inspiration for Hasetsu) is located. Itâs called âMakai heno Izanaiâ (éçăžăźèȘ), meaning âInvitation to Makai,â which is where the demons of Japanese folklore live.
This shochu is produced by using black koji and sweet potatoes; black koji is a kind of mold thatâs used to break down the starches in the potatoes so that they can start to ferment into alcohol. The kind of koji used greatly affects the final taste of the shochu, and black koji specifically gives shochu a signature strong aroma and a sweet and mellow taste. You can actually buy this exact shochu at Amazon.jp, though there are several countries they will not ship to, including the US. Episode 4: Ika Sushi

âIkaâ (ă€ă«) is Japanese for âsquid.â âIka sushiâ is actually an incorrect name for the particular dish pictured here, as sushi means sliced fish over rice. This particular dish is actually called ika no ikizukuri (ă€ă«ăźæŽ»é ă), meaning âlive squid sashimiâ (yes, LIVE). Itâs also a specialty of Yobuko town in Karatsu, which again is the inspiration for the showâs Hasetsu. Itâs made by taking a live squid out of a tank and preparing it immediately, which keeps the squidâs transparent look. Hereâs a video of the dish, where you can still see the squid twitching!!!! (x)
Episode 5: Kibi Dango

Kibi dango (ćććŁć) are sweet confections made with glutinous rice flour called mochiko (ăăĄç±łçČ) (which is the same flour used to make mochi) and are sometimes filled with a sweet flavored syrup. Three to four dango are usually served on a skewer, and theyâre often accompanied by green tea. There are many different kinds of dango, some of which are regional or are made during a specific time of year, like the hanami dango for cherry blossom season.
Kibi dango are from the former Japanese Kibi province, which is where the Okayama prefecture is today (Okayama is where the Chugoku, Shikoku, and Kyushu Championship took place in episode 5). Originally, kibi dango were made from millet, and those are inextricably tied to the Japanese legend of Momotaro (Peach Boy), in which he touts them as the "number oneâ dango in Japan. Kibi dango confectioners will often tie Momotaro into their marketing so their products have that same positive connotation. Both kibi dango and Momotaro are very important aspects of the cultural heritage of Okayama. The kibi dango pictured here appear to be made with Okinawan purple sweet potatoes and are dusted with kinako (é»çČ), which is roasted soy bean flour. (x) (x) (x)
Episode 6: Hinabe

Hinabe (ç«é)Â is the Japanese word for Chinese hot pot. Hot pot originated in the Chinese province of Sichuan, which is known for its spicy food, as a meal for port workers and fishermen. The idea was to mask poor and unappetizing cuts of meat (including offal, the insides and entrails of an animal) with lots of spices to disguise its low quality, but eventually hot pot became a very popular dish that now uses more fragrant spices and higher quality meat.
Having a hot pot meal is a unique experience (hence why Victor is so excited to go eat it!): Sharing family-style, you poach various raw ingredients--including all different kinds of thinly-sliced meat, seafood, noodles, dumplings, and vegetables--in different kinds of simmering broth (top picture) and then eat them when theyâre finished cooking (bottom picture). There are also usually lots of really flavorful dipping sauces to use!
In the eyecatch, the soup on the left is Chinese herbal soup, a non-spicy clear soup made with chicken stock, ginger, scallions, goji berries, and dates. Cooked ingredients pictured here include shiitake mushrooms, spinach, and daikon radishes. The soup on the right is mala soup (éș»èŸŁç«é), whose broth is made with Sichuan peppercorn, chili pepper, spicy bean paste, garlic, and a mix of aromatic spices--it can be so spicy that it can have a numbing effect! Cooked ingredients pictured here include chicken, daikon radishes, and wontons. Episode 7: Shanghai Gani

âGaniâ (èč) is Japanese for âcrab.â Specifically, this is Chinese mitten crab (äžæ”·æŻèč), also known as the Shanghai hairy crab, which is named for its furry claws that look like mittens (warning: pic is kind of creepy!). Itâs a popular dish to eat in autumn (which is when the Cup of China takes place, hence its appearance here), and itâs a delicacy: It can cost $100 USD for two pounds of crabs! The crab pictured here has been steamed, which is the traditional Shanghainese way of preparing it, and itâs often served with dipping sauce made of rice vinegar, sugar, and ginger. (x) (x) (x)
Episode 8: Borscht

Originating in Ukraine, borscht (Russian: Đ±ĐŸŃŃ or Yiddish: ŚŚÖžŚšŚ©Śâ) is a sour soup found in many Eastern European cuisines, and all of them have their own variation of the dish. There are so many different kinds of borscht that it would be difficult to cover them all here, so Iâd check out the Wikipedia article if youâre interested. The borscht pictured here most likely includes meat or bone stock, sautĂ©ed vegetables, fermented beetroot juice (which provides the signature red color), sour cream (probably an Eastern European kind called smetana), and parsley. Episode 9: Tsuboyaki

Wow, I cannot even believe how much trouble this one gave me. So from what I can find, it appears that this is a dish that you can really only find in Russian restaurants in Japan. (Itâs kind of similar to pasta alfredo in that way, which is a dish thatâs really popular in in Italian restaurants in America, but is not a traditional Italian dish, and the only places that youâll find it in Italy are restaurants that cater to tourists.)
Anyway, so âtsuboyakiâ (ă€ăŒçŒïżœïżœ) means âpot roastâ in Japanese (though it usually refers to sazae no tsuboyaki, which is grilled turban shell), and itâs a Japanese take on Russian cream of mushroom soup that Japanese restaurants call âguribamiâ (ă°ăȘăăŒă) (âgribyâ [ĐłŃОбŃ] is just Russian for âmushroomsâ), which you can see in the âafterâ eyecatch. It sometimes has potatoes or seafood in it, and it has a baked soft bread or puff pastry on top. You can then poke through the bread to eat it with the soup. The closest traditional Russian equivalent I could find is called gorshochke (ĐłĐŸŃŃĐŸŃĐșĐ”), which are usually hearty meat-and-vegetable stews baked in traditional Russian clay pots with lids. The bread on top is optional, but the dough acts like a lid that keeps all of the heat inside the pot, and the bread then absorbs all of the yummy aromas! (x) (x) (x)
Episode 10: Paella

Paella is a saffron rice dish that originated in the Spanish region of Valencia. Itâs baked in a traditional pan called a paellera, pictured here. Itâs traditionally cooked over an open fire while burning orange tree branches, pine branches, and pine cones to infuse it with an aromatic smoke. Traditional Valencian paella (paella valenciana) usually includes chicken, rabbit, green beans, and other vegetables, but the more well-known take is the seafood paella (paella de marisco) pictured here. This paella includes mussels, shrimp, prawns, and calamari. (x) (x) (x)
Episode 11: Gambas a la Plancha

Gambas a la Plancha is Spanish for âgriddled prawns.â The prawns are prepared using a griddle or large frying pan over an open fire, which retains all of the juices from the prawns that would otherwise drip through a regular grill. Itâs a simple dish, usually made with olive oil, garlic, parsley, and lemon. Theyâre commonly served in Spain as tapas, which are small appetizers or snacks. (x) (x)
Episode 12: Pinchos

Pinchos, Spanish for âthornsâ or âspikes,â are traditional Northern Spain snacks often eaten in bars or taverns while drinking wine and socializing. Theyâre an essential part of local culture particularly in the Navarre and Basque regions of Spain (though youâll usually find them on a skewer in Basque, where theyâre called âpintxosâ). Theyâre similar to tapas (and are sometimes just called tapas in some parts of Spain), but pinchos will always have a toothpick or skewer, often attached to a piece of baguette-style bread. Common ingredients in pinchos include cooked or smoked fish, seafood, pickles, cheese, peppers, eggs, and jelly spreads. (x) (x) (x)

Below are several fine examples of why we need to start promoting ourselves as a nacho town! Autozone Park Stacey G. Letâs ease into this with a little barbeque talk. I think we can all agree that the Rendezvous BBQ Nachos at the Redbirdâs games is what put us on the nacho map. Tortilla chips, Rendezvous bbq, cheese sauce, bbq sauce and jalapeños, if you like. Nothing goes better with a cold beer and a baseball game. Rendezvous Justin Fox Burks Speaking of the Rendezvous nachos at Autozone Park, theyâre also available in the restaurant, naturally, but did you know they also have a pretty fine vegetarian nacho too? Brainchild of the Chubby Vegetarian, the rice and beans nachos include Brimâs chips, red beans and rice, cheese dip, barbeque sauce, and jalapeños. You wonât miss the meat. Really. Central BBQ Stacey G. C-BBQ takes BBQ nachos to the next level. Theyâve got marinated slow-smoked pulled pork on a bed of tortilla chips topped with BBQ sauce, cheese sauce, shredded cheese (thatâs right, TWO cheeses), jalapeños, and a light dusting of BBQ shake. Adventurous diners can substitute barbeque potato chips for the tortillas, and those who donât like pork can order them with sliced beef brisket, pulled chicken or sliced turkey breast. Go on vegetarians and vegans, ask for them with the grilled portabella. Itâs cool. And for those watching your waistlines or pocketbooks, half orders are also available. RP Tracks The barbeque tofu (yes, tofu) nachos at RP Tracks are legendary. In Memphis we even barbeque (and fry) our tofu. Dang itâs good! Tossed atop freshly made tortilla chips, black bean chili, shredded lettuce, cheddar cheese, tomatoes, sour cream and jalapeños, it satisfies vegetarians and meat eaters alike. Vegans may also order it dairy-free. Ed. Note: These have been my favorite for a good long while. Tops The newcomer to the BBQ nacho party is Topâs, and they only have them at a few locations. There are two variations. The âloadedâ comes with chips, beans, meat, sauce, cheese, lettuce, tomato, onion, jalapeños and sour cream. They also serve âregularâ with just chips, cheese meat and sauce. I think the most exciting thing about these nachos is seeing what customers will do when given free reign. (Think cheeseburgers topped with barbeque meat.) I have already caught wind of a gal adding slaw. It is Memphis after all. Sweet Grass Next Door Stacey G. Next up, the king of all nachos. The Badass Nachos started as a secret menu item that was only available when the chefs at Sweet Grass Next Door felt like braising briskets or when there were major sporting events. Not surprisingly, it quickly became a neighborhood favorite. Sweet Grass now braises over 100 pounds of brisket per week. They cut and fry some corn tortillas from Tortilleria La Unica on Summer and cover them in red chili sauce (basically, an enchilada sauce), queso, sautĂ©ed onions and peppers, braised beef brisket, tomatoes, pickled jalapeños, sour cream, cilantro. Best off all? You can order them on a plate large enough to take a nap on! Carolina Watershed Another newcomer to the nacho scene, Carolina Watershed makes theirs with pork rinds, pulled pork, jalapeños, scallion cream, a provolone, mozzarella and parmesan cheese blend, and serves them with an egg on top â which basically means you can have them for breakfast. Bleu Bleu, inside the Westin Hotel, actually does serve breakfast nachos, at least on the weekends. Nachos Rancheros features eggs sunny side up, baked kidney beans, pico de gallo, sour cream, Monterey jack cheese sauce with jalapenos and homemade tortilla chips. Good morning! Slider Inn Slider Inn nachos are the gold standard in town, and really do taste better on the patio. They come in several varietiesâchili, chicken or plain. Super thin and crispy chips are piled high with chicken or chili or both, black beans, shredded cheese, pico, sour cream and jalapeños. They are baked in the oven so the cheese gets a lil crispy, which is kind of the best thing ever. Now, listen up. Take these nachos to the next level in any one of these ways and thank me later: 1. Add guacamole. 2. Substitute buffalo chicken for regular chicken. 3. Substitute steak 4. Substitute falafel, and 5. Substitute the same al pastor meat they use for Taco Tuesday (dressed with cilantro, onion, pineapple, and salsa). Iâm not done wowing youâhalf orders are also available. Tsunami Letâs move into some really fun territory. Asian nachos. Chef Ben Smith was inspired by longtime customer and friend, Margot McNeely, who came back from Puerto Rico raving about some seafood nachos she had. He decided to do his own version with fried wontons, seared tuna, crema, Sriracha, scallions and jalapeños. They are the perfect bite and definitely the lightest and most refreshing nachos there ever were. Wokân in Memphis The Wokân in Memphis Mongolian Beef Nachos get their Asian flare from beef. Fried wonton chips are topped with shredded braised Mongolian beef, bell peppers and onions, and finished with Sambal mayo, fried garlic, sesame seeds, scallion and cilantro. Look for them at the Puck Food Hall. Macielâs Donât leave Macielâs out of the nacho party. Theirs come with crispy chips, beans, lettuce, tomatoes, onion, carrots, cilantro, jalapeno, sour cream, chipotle, cheese and your choice of spicy shrimp, pollo tinga, asada, pastor, or chorizo. (Spicy shrimp! Spicy shrimp!) Ciao Bella Ciao Bella makes an Italian version of nachos that is pretty spectacular. They include sun-dried tomatoes, Bolognese sauce, Alfredo sauce, mozzarella, black olives, banana peppers, red onion, and tomatoes over homemade tortilla chips. Grecian Gourmet The Greek nachos at Grecian Gourmet are in the current weekly rotation, and it seems they get better every time I try them. Pita chips are loaded with meat sauce, feta dip, lettuce, tomatoes, black olives, red onion and banana peppers. Also available to add to the party: gyro meat and chicken. Chef Tamâs Chef Tam has not one, but two (!) nacho options on her menu, and they are completely different. First up, the totchos. Seasoned fried tater tots are smothered with their Muddy Mac & Cheese, Applewood smoked bacon, pico and a drizzle of their signature sauce. (The Muddy Mac is already practically a meal in itself â Itâs loaded with crawfish, crab and shrimp.) Second, the peach cobbler nachosâChef Tamâs play on a Southern culture classic. Cinnamon sugar chips are topped with peach cobbler filling and cinnamon sugar dusted vanilla ice cream. Using the chips to scoop up the peaches, sauce and ice cream is like getting that perfect corner bite on a regular cobbler every.single.time. Babalu Babalu Tapas & Tacoâs has stepped into the ring with a dessert nacho of their own. Chocolate Nachos consist of cinnamon sugar dusted chips, topped with Nutella and fresh fruit. This is the place to go when you need to wind down from work or have a dinner date out with your girlfriends or your loved one. They have delicious cocktails and an expansive menu of great sushi! I cannot recommend this place enough and after being here a couple times, I can definitely say this is my favorite place for sushi! ALL THE ROLLS: Amazon Roll, The Beach, Godzilla Bomb, Green Eggs and Ham, Hot Popper, Lion King, Pretty in Pink, Roja, Salmon Skin Roll, Spanish Fly, Spicy Gringo! They are all so delicious and I canât wait to come back and order them again! 4/5
Truffle Salmon: Thinly sliced and drizzled with hot sesame oil topped with ikura and ponzu sauce. 4.5/5
Charred Edamame: Order it spicy with garlic, soy, and togarashi. This has a spicy kick but not too spicy as well for those who are not spicy lovers. 4/5
Mango Crab Rangoon: Crispy wonton wrappers stuffed with crab mix, mango, cream cheese, scallion. Such a unique take on crab rangoons which I have a personal weakness for! 4/5
