Lemon Cilantro Baked Tofu Meal Prep To Go *Vegan* Yields 3 meal preps. Each one packs 204 Calories, 13 grams of Protein & provides you with a heap of Vitamins A & K. Prep Time: 10 minutes Cook Time: 35 minutes Ingredients: -½ Block of Extra Firm Tofu -2 Scallions sliced - whites & greens separated -1 can of Unsalted Corn rinsed -1 can of Kidney Beans rinsed -½ cup of Chopped Spinach -⅓ cup of Sliced Bella Mushrooms -2 cloves of Garlic smashed & minced -½ Lemon’s worth of juice -2 tsp of Cilantro -Dash of Salt -Dash of Pepper -Drizzle of Light Olive Oil Steps: -Press your tofu dry. -Rinse & dry all veggies. -Preheat the oven to 425 degrees Fahrenheit. -In a saucepan, slowly cook minced garlic & scallion whites with a drizzle of light olive oil. After about 2 minutes, add in spinach & mushrooms. Mix everything & cook for another 2 minutes, then add kidney beans & corn. Mix everything together until it is fully incorporated & saute for about 10 minutes. -Cut tofu into squares. -In a small bowl, mix a dash of pepper, cilantro & lemon juice. -Place tofu squares on a cookie sheet & saturate each side of each piece with your lemon-cilantro-pepper juice. Throw in the oven to bake at 425 degrees Fahrenheit for about 20 minutes, flipping halfway thru. -Spoon out bean & vegetable saute from your saucepan & top with baked tofu squares.
