I tried to pick out recipes I use that are few ingredients and also relatively low effort.

Quiches are great because you can make 1, and then have several days of meals ready to go. If you don't generally have the ingredients or time to make pie crust, they sell frozen ones you can just keep in your freezer until you're in the mood! The broccoli (and even onion) can be substituted for other things to make a variety of quiches.

I absolutely love this one. You don't have to chop very much because you're going to blend it all anyway. If you don't have a blender, then you could just chop it all small or enjoy it chunky. I have added bell peppers, serrano peppers (gives it a spicy kick), and butternut squash to bulk this up. Just throw whatever veggies you want in, cook, and then blend smooth. The optional half-and-half can be replaced with any dairy you want, really. If you don't have vegetable broth, any broth works, or water in a pinch.

Very easy and delicious! Adjust the seasoning to your preference. Great with pasta and jar sauce, over rice, or by themselves. I bought a cookie dough scooper to make making meatballs easier and more consistent. You could probably use any ground meat you want. I don't think it'd matter much.

Additional suggestion: make tacos or fajitas. Tacos, it's just ground meat and seasoning (I've made tacos with tofu before, too), plus whatever extras and tortillas you want. Fajitas are slightly more work, since it usually necessitates sliced onions and peppers. If raw chicken icks you out, you can buy shredded rotisserie chicken and just use that, or I think even canned chicken chunks would get the job done. Taco and Fajita seasonings are easy to buy and have on hand, though, I usually make my own blends-- it's not too much extra work, generally.
