Uit de keuken van Marianne Verblackt: Rode Koolschotel van Frank!

Deze week staat in het teken van Halloween; een oud Keltisch feest om een geslaagde oogst te beschermen tegen kwade geesten en demonen. In het oude Engeland en Schotland werd vroeger kool gebruikt als ingrediënt om de bekende verlichte hoofden van te maken. Maar nadat Halloween door immigranten naar Amerika was meegenomen, werd de kool aldaar vervangen door de pompoen; deze was immers groter en makkelijker uit te hollen. Om de rode kool tijdens Halloween niet helemaal te vergeten en natuurlijk ook omdat het gezond en lekker is, presenteert De Week Van De Cateraar de griezelig lekkere Rode Koolschotel van Frank!

  Benodigdheden:

500 gr rode kool, 1 appel, ¼ citroen, kaneel, enkele kruidnagels, klein scheutje azijn,

suiker (naar smaak) ¼ bl.  ananas stukjes. en evt. zout.

500gr gehakt, gehaktkruiden, 1 ei, paneermeel

500 gr aardappelen, margarine, scheutje melk

Bereiding:

Rode kool koken met, ¼ citroen, kaneel, kruidnagel, suiker, azijn en appel. Iedereen die van zoet en fruitig houdt, kan ook nog ananas toevoegen.

Daarna gehakt rul bakken met ei en de gehaktkruiden toevoegen.

Aardappelen koken en puree van maken.

In een ovenschaal eerst de rode kool, daarop het gehakt en daarop de puree. Paneermeel erover strooien en een paar klontjes margarine. In de oven de boter laten smelten en daarna even onder de grill tot er een mooi bruin korstje is ontstaan.
