"Principesso" sounds like something you'd say as a joke among friends, or something a child would say - masculinizing a feminine form without knowing the grammatical rule

From the video itself we know that Charles knows about the 'principe/principessa' rule because 0.3 seconds after that first interaction he greets the other mechanics by saying 'principi!', the correct masculine plural of 'principe'

So I think it was a mix of inside joke plus "wait no I can’t really call a guy 'principessa' but I already started saying it so 'principesso' it is"
