Just thinking about Wolfgang representing a sheep, but could also be representing a lamb because he's the first to die. The lamb, on top being representative of Jesus Christ, symbolises purity and innocence. Wolfgang will be the only person in the group who has no blood of any kind on his hands as a result of the killing game. He never got to kill anyone nor was he be forced to condemn someone else to death in the class trials to survive, and now he never will. By virtue of dying first, he remains the most spotless and untainted student of them all.
