So with the colder weather and a crazy schedule I have been cooking one pot meals or using my crockpot as of late. I had some bone in pork country style ribs and some vegetables on hand so I made it work lol - Not only does it keep with my low carb goals but it's also nice, warm and comforting. So for the veggies I did a simple Caldo or soup base with 1/2 medium white onion diced, 1/2 green bell pepper chopped, 2-3 carrots peeled and chopped, 3 cloves garlic chopped, 2 celery stalks chopped & half a small cabbage with core cut out and rough chopped. I had about 4 good size bone country style ribs. 2 cups low sodium beef broth with 2 tablespoon tomato paste incorporated. You can microwave the broth and paste then stir. For seasoning I used 2 Tbsp Uncle Chris's Seasoning, 1 1/2 tsp onion & garlic powder each, 2 teaspoon beef bullion, 2 teaspoon paprika, 1 tablespoon cracked pepper and 1 teaspoon kosher or sea salt. Mix seasoning and sprinkle on meat on both sides. Add your veggies first in the crockpot except the cabbage. Next place the meat and pour in the broth & tomato paste. Lastly the cabbage on top as it steams and cooks the cabbage will start to wilt and cook down till you will be able to get it more down in the broth. Cook on low for 6 hours or med to high for 3 to 4 hours. Check for taste add a pinch or kosher or seas salt if needed. Serve with fresh avocado, onion, cilantro, lime or pico de gallo. So for tonight's meal I made "Sesame Seed Lemon Herb Crusted Cod" w/ Bacon Wrapped Asparagus & Mozzarella Spinach Stuffed Mushrooms. This is a super easy meal to put together and still look fancy 💁🏻♂️ - The coating for the fish only comes out to 2% carbs well with in our daily limit. I like cod because it's a clean white flaky fish that takes flavor easily. Ingredients: 4 portioned fillets about 4 oz each, 1 pack Victoria Taylor's Zesty Lemon White fish seasoning, 1 pack Victoria Taylor's Toasted Sesame fish crust, 2 TBL spoons Melted "I Can't Believe It's Not Butter" or substitute, 1 TBL Canola oil, 1 TBL spoon lime juice. Sides: fresh asparagus bundles of 3-4 stems, 3-4 thin sliced bacon strips wrapping each bundle. Next 6-8 fresh mushrooms cleaned and de-stemmed. Filling: 1/2 cup shredded mozzarella, 1 1/2 TBL spoons Parmesan cheese, 3 TBL spoons chopped baby spinach, 1 tsp cracked pepper. Cooking Directions: Preheat oven to 400° - Make sure to dry the cod fillets, mix the two packs together in a dish, melt the butter adding oil & lime juice to it. Next pour the mix of butter/oil/ lime over the fish. Now run each cod portion through the seasoning crust and set aside. Cooking Times: Fish 22-25 minutes, Bacon Wrapped Asparagus 18 minutes and Stuffed Mushrooms 10-12 minutes. So I get asked for simple quick meals that can be done in advance and portioned. Here is one of my go-to meals in two different flavors both done with same marinade. So I'm using Lowery's Lemon Pepper Marinade with only 2g Carbs per TBL spoon and it doesn't take much. For the wing sauce I'm using HEB's Flying Saucy Wing Sauce in Parmesan Garlic & Mild Wing Sauce. Only 1g Carbs per TBL spoon. Rather then getting my wings from the grocery store that are much smaller I get mine from Sam's or Costco. One bag of wings is only about $9-$10 and the pieces are a better size and quality. I normally will portion the wings factoring about 3 - 4 per serving 6 - 8 in freezer ziplock bags with about 1 1/2 TBL spoons of the marinade. Once thawed drain excess liquid from the bag adding about 1 1/2-2 TBL spoons of Wing Sauce. You can marinade over night or at least 30 minutes in the sauce before cooking. So depending on the time frame it's up to you. Cooking pre-heat oven to 450°. Then on a glass pan lightly sprayed with non-stick cooking spray space out the wings. Cook for about 45 - 50 depending on the number of wings. I normally serve with plain Greek yogurt mixed with Hidden Valley Greek yogurt dressing seasoning. Also some slices of Cucumber/celery sticks. So tonight I made Beef Caldo but did it in a way that can save time and the quality of the soup ingredients. Usually beef caldo is cooked for several hours in a huge metal pot and the veggies are chopped in larger pieces to keep their shape and not over break down. What I do is season the meat, toss in almond flour to reduce the carbs, sear the meat in a hot pot or pan. Then I put the meat in a Crock-Pot on medium heat with a 2lb box of beef broth you can also use reduced sodium beef broth to farther cut back on the salt. No #Basic tuna salad here 😜 - Tonight I made "Spicy Tuna Cucumber Avocado Bites" 🌶️🐟🥑🥒🧀 - Ingredients: 2 pouches of "Sweet & Spicy" Tuna, 3 boiled eggs, 1 Hass Avocado, 1 english cucumber ( 1/3 peeled and finely chopped the rest into disk), 3 TBL spoons of fat free Ranch, 1 TBL spoon fat free sour cream, 1 TBL spoon dill pickle relish, 1 tsp kosher/sea salt, 1 tsp cracked pepper, 1/2 tsp onion and garlic powder, 1/2 tsp paprika, 1 tsp chopped cilantro, 1 tsp lime juice 1 green onion chopped, Mexican Blend shredded cheese and Crystals tobasco sauce. Mix all the ingredients except for the cucumber disk for the base, the avocado ( mash with 2 tsp of extra virgin olive oil, 1 tsp salt & pepper and 1 tsp lime juice), tobasco and cheese those go on top. Part 2: #BringingItTogether 👉💥👈" Zesty Southwest Chicken Pinwheels" ! 🇨🇱🤠🌶️🐓 - So now the easy part LOL 😂 So you will want to pour out the Chicken and the Asparagus in containers you can easily grab what you need. Two toothpicks per pinwheels, Your Southwest Zesty filling and your Siriacha Mayo. Pre-heat oven to 375° and get a large glass baking dish spray with Non-stick cooking spray. As you can see in the middle right picture you simple spread some of the filling, place 4 pieces of the asparagus as the smaller tip, then you will proceed to roll gently making sure not to squish your filling out. Secure with two toothpicks once rolled. Next once you have them all rolled you can take pieces of the red bell pepper and pablano pepper and arrange on the pinwheels. Then spoons some of the Siriacha Mayo over each one. I also put some of the remaining marinade pieces in the pan around them to release moister and flavor but not for eating. Cook for about 25 - 30 minutes depending on your oven. Tonight I made crockpot shredded taco chicken with some of the beans I made yesterday that have been refried well not with all the fat LoL - I used 3 boneless skinless chicken breast butterflied, 1/2 cup fat free stock with reduced sodium. 1/3 medium white onion diced, 1/4 green bell pepper diced, 1 TBL spoon chopped garlic & 1 can of petite diced tomatoes with onion/garlic. To season I kept it simple 1 TBL spoon Fiesta Brand Uncle Chris's seasoning, 1 TBL spoon chili powder, 1 to 1/2 tsp comino / cumin, 1 1/2 tsp onion powder, 1 1/2 tsp garlic powder, 1 tsp cracked pepper and 1 teaspoon reduced sodium chicken bullion. Cook on low for about 3 to 4 hours. Once chicken is tender and pulls apart with fork remove and shred with two forks. Adding a little of the liquid from the crockpot back after and checking for taste. Add a little kosher or sea salt if needed.
