Part 2: #BringingItTogether πŸ‘‰πŸ’₯πŸ‘ˆ" Zesty Southwest Chicken Pinwheels" ! πŸ‡¨πŸ‡±πŸ€ πŸŒΆοΈπŸ“ - So now the easy part LOL πŸ˜‚ So you will want to pour out the Chicken and the Asparagus in containers you can easily grab what you need. Two toothpicks per pinwheels, Your Southwest Zesty filling and your Siriacha Mayo. Pre-heat oven to 375Β° and get a large glass baking dish spray with Non-stick cooking spray. As you can see in the middle right picture you simple spread some of the filling, place 4 pieces of the asparagus as the smaller tip, then you will proceed to roll gently making sure not to squish your filling out. Secure with two toothpicks once rolled. Next once you have them all rolled you can take pieces of the red bell pepper and pablano pepper and arrange on the pinwheels. Then spoons some of the Siriacha Mayo over each one. I also put some of the remaining marinade pieces in the pan around them to release moister and flavor but not for eating. Cook for about 25 - 30 minutes depending on your oven. For tonight I made a kicked up version of a #ChickenBaconFlatBread πŸ—πŸ₯“πŸž sandwich. I know we train ourselves to avoid carbs like the plague but here is a great option that's also carb smart. So I bought the original #Flatout original flat bread the nutrition breaks down to 50 calories, 7.5 carbs and 4.5 g protein since we will only be eating half in one serving. Totally doable with in the daily limits of our food metrics and hey extra protein πŸ˜‰. This is a quick and easy go to meal that you can eat half now and half tomorrow for lunch. The leftover chicken you can put in the fridge for other meals or freeze it for a quick meal later in the week. So the kicked up part of my flat bread sandwich is the delicious sauce it's a twist on a #SiriachaMayo 🌢️ - but no need to worry it's not going to be very spicy because we will mellow it out a little. πŸ˜‰ Ingredients: I pack of pre season chicken breast slices or split boneless chicken breast if you want to season your own, 1 pack FlatOut flat bread any flavor you like, 1 bag chopped hearts of romaine lettuce, 1 avocado, low fat colby jack cheese πŸ§€ or your preference, real bacon crumbles, 1 green onion chopped, black or green olives, I can't believe it's not butter, and banana peppers (optional). Siriacha Mayo twist ingredients: 3 TBL spoons of fat free mayo, 2 TBL spoons fat free sour cream, 1 TBL spoon dill pickle relish drained, 1 to 1 1/2 tsp siriacha depending on how much heat, 1 tsp chopped green onion, 1 tsp chopped cilantro, 1 tsp lime juice, 1 tsp onion & garlic powders, 1 tsp cracked black pepper and 1 tsp paprika. #BringingItTogether : Cook the chicken in a pan with some Non-stick cooking spray during flipping spray a little butter substitute on cooked sides to keep moist. Next cut avocado in half you can rub a little extra virgin olive oil on exposed surface of half you will save to keep it from turning and keep the seed in it. Part 2: " Flanksteak Asparagus Pablano Pinwheels" πŸ–πŸŒΆοΈπŸ‹πŸŒΏ - #BringingItTogether πŸ˜‰ - Directions: First set out the 8 oz pack of Cream Cheese to bring it to room temperature. Mix the chopped portion of the Pablano pepper we set aside from prior prep with the cream cheese. Add fresh cracked pepper. Next lay the flank steak out checking for any sliver skin or extra fat and use a thin sharp knife to trim off this well help the steak be extra tender and less chewie. Next spread the cream cheese mixture on one single side of both flank steaks, lay strips of pablano pepper along top edge, arrange asparagus in a row along top edge over pepper strips. Then rolling and tucking the veggies as you go form a roll. Now you will need to section the flank steak roll. I did mine in about 3 inch sections as it will shrink some with cooking. You should be able to get 4 per roll. Secure each pinwheel with a tooth pick or part of a wooden skewer. Spray your baking dish with Non-stick cooking spray and arrange your pinwheels. Spray with "I can't believe it's not butter" cook at 400Β° depending on size and oven 15-25 minutes. Then let rest for about 3-5 minutes after you take out. So today I made my Breakfast/Brunch "Fancy Tex-Mex Wonton Quiche" 🀠 πŸ‡¨πŸ‡±πŸŒΆοΈ - It's a Great way to #KickOff πŸ‘’ your day! You will need: One cup cake pan, non-stick cooking spray and a measuring cup for easy pouring. Ingredients: 7 large eggs, 12 wonton wrappers, 3 strips low sodium bacon chopped, 3-4 Asparagus chopped, 1 whole green onion chopped, 1-2 sections of roasted pablano pepper diced, about hand full of spinach minus the stems sliced, 2 tsp chopped black olives, 2 1/2 TBL spoons Rotel drained (regular or mild), 1 cup shredded cheese ( Pepper Jack, Mexican Blend or Colby Jack), 2 TBL spoons fat free sour cream, 1 TBL spoon almond or regular milk and 2 TBL spoons I can't believe it's not butter. Seasonings: 1 tsp black pepper, 1 tsp paprika, 2 tsp Kosher or Sea salt and *optional few dashes of tobasco sauce. Directions: Pre-heat oven to 350Β° Filling: Next mix all your veggies, bacon, olives and Rotel together in a bowl then set aside. Then beat your eggs, sour cream, almond/regular milk, butter substitute, seasoning and optional tobasco sauce till completely combined. Now lightly spray the inside of the cup cake pan and place one wonton wrapper in each space. (Make sure the bottom is flat and rest is up against the sides). As seen in the mid-right side picture you will see how to #BringingItTogether ! πŸ‘ Pour just a small amount of egg mixture in each wonton enough just to cover the bottom, spoon some of the filling in to each, sprinkle some cheese on top, pour more egg mixture on top making sure not to over fill. We want to leave a little space between for the quiche to rise. Lastly another sprinkle of Cheese on top and a spray of butter substitute. Bake for about 20-23 minutes, remove spray with butter substitute and let sit for about 2 minutes before serving. Topping ideas: Avocado, sour cream, pico de gallo and jalapenos.
