Maybe possibly controversial opinion but while Dany was definitely treated the worst in the adaptation, I don't think she was actually adapted the worst. Not in the earlier seasons at least.
I'm not saying she was adapted well even in those early seasons. Far from it. But she was adapted more accurately than Jon and Arya. Because they are honestly unrecognizable. I binged seasons 1-6 before reading the books and I honestly found them a little boring/cliched. And then I pick up the books and it's like, "What? These two are amazing!"

I’m happy to announce that I’ll be hosting Book Gendrya Week from the 5th to the 12th of August 2024. Women’s Day ASOIAF

A day late but it’s okay! Happy International Women’s Day! And here are my two favorite ladies (also my favorite characters alongside Jon) from ASOIAF! The amazing Daenerys Targaryen and incredible Arya Stark! These two are some of the most amazing and proactive female characters I’ve ever seen! In a world where many of those in power or have privileged backgrounds, these two are the kindest and most compassionate characters and they view common people as their equals and as worthy of protecting. They are also two of the most intelligent and perceptive characters (Arya escaped Harrenhal with her own cleverness and wits and Dany proved her strategic skills when she came up with her own strategies for taking Yunkai and Mereen). Now neither of them is perfect, they are both gray characters with their flaws (like their insecurities regarding themselves and how their youth means they have some inexperience) but they are both willing to learn and adapt. I’m proud to be a fan of these two amazing women! And I hope GRRM has a great ending in mind for them. Also hope to see them meet and then become besties! Happy Women’s Day!

So. Like. Can we talk real quick about Arya as a Water Dancer? Because she calls herself one, but it seems kind of…conceptual. Similar to the way she calls herself a wolf or a cat or mouse, save for the fact she literally has been a wolf and a cat (or…spiritually? What is warg…). Because if we look at it from a purely practical point of view, she really isn’t. She has lessons with Syrio in the time between Ned finding out about Needle and the purging of House Stark. After that she is not learning anything about water dancing. 
Syrio’s lessons are helpful, no doubt. He is the one to really start her on her journey of being able to size people up effectively and not just in an instinctual way. He has her chasing cats which helps her in catching food. His phrases are what she repeats to herself for the most part. He teaches her to adapt herself to the situation. 
“It was the third time he had called her "boy." 
"I'm a girl," Arya objected.
"Boy, girl," Syrio Forel said. "You are a sword, that is all." He clicked his teeth together. "Just so, that is the grip. You are not holding a battle-axe, you are holding a—” - Arya II, AGoT
Who cares what people call you or think you are? When you are holding a weapon you are a weapon. When you need to be quiet and unnoticeable, you are a mouse. When you need to be fierce, be a wolverine. Be what you need to be to survive (or get what you want/need). It’s a lesson that takes her far.
From a martial point of view, though, it is Jon’s advice she uses the most. Stick them with the pointy end. It is what she does the most, in part because of necessity. She doesn’t have Needle for most of ACoK since they take it from her at Harrenhal and she doesn’t get it back until ASoS. She has another sword, but it is a Westeros blade not Braavosi and she still isn’t doing any Water Dancing with it. 
When she gets to Braavos Needle gets buried under rocks. When she kills in Braavos it is either with poison or  a dagger/finger blade. We are right back to stick them with the pointy end. Unless Arya shifts gears in TWoW and finds sell swords/swords of Braavos, I doubt her swordsmanship improves for now. Not to say that she never uses Needle or doesn’t work on it post the Battle for the Dawn (I doubt she ever goes back to Braavos, though, unless the Faceless Men get real chill real fast).
I think her being kind of unconventional in her fighting style really fits her, though. There is more than one way to be a lady. There is more than one way to be a girl and there is more than one way to be a fighter. She is making her own way and I love that for her.

Little Leia Organa reminds me of (book) Arya Stark. A clever, curious, empathetic, tough, mischievous little noble girl who feels a little out of place, has a good relationship with her loving parents. Her Dad gets to be good cop and spoil her and mom is great but bad cop and secretly “despairs of making her a lady.”
