Bugünkü konumuz elimdeki tabakta gördüğünüz Dana Carpaccio! 1950 yılında Venedikteki meşhur Harry’s Bar’ın şefi tarafından Kontes Amalia Mocenigo için yaratılmıştır. Dananın en yumuşak yeri kullanılır, farklı sunumları olsada üzerine genelde roka, parmesan konulur ve zeytin yağı ile servis edilir. Kırmızı ve beyaz tonlarından dolayı yarattığı yemeği ünlü ressam Vittore Carpaccio’nun tablolarına benzeten şef yemeğe resssamın adını vermiştir. Günümüzde yemeğin popülerliği hem ressamı hem de yaratıcısını çoktan geçmiş durumda, fine-dining kültürünün olduğu her yerde çok tercih ediliyor. Tek uyarmam gerekenler ise eti kömür olana kadar pişirmeyi; ete dayak atıp, suyunu çıkarmayı veya binbir baharata boğup etin tadını yok etmeyi sevenler. Onların carpaccio’dan uzak durması lazım. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀🇬🇧 This is how I like my carpaccio at Lemore Manor. The estate has a brand new restaurant with lovely ambience and delicious dishes, will definitely recommend this. By the way, Carpaccio was created in 1950 by Arrigo Cipriani, owner of the famous Harry’s Bar in Venice, for countess Amalia Nani Mocenigo, as the doctors forbad her from eating cooked meat. Biliyorsunuz Michelin yıldızlı çok restoran paylaştım sizinle, paylaşmaya da bugün bir yenisi ile devam ediyorum. Londra dünyada bu işin merkezlerinden biri. Bu tarz rafine lezzetlere ulaşmak için çok avantajlı. Genelde benden İstanbul ile kıyaslamam isteniyor. Bence İstanbul yemek konusunda gizemli bir kent. Gizli kapaklı birçok hazinesi var. Bilen biliyor ama onlar da genelde bildiklerini kendilerine saklıyor. Ayrıca fiyat-kalite ilişkisi de rasyonel bir temele oturmamış İstanbul’da. Bu açıdan Londra, Paris, New York gibi Batı dünyasının metropollerinden çok, Uzakdoğu kaplanları gibi. Named after one of Asia's oldest and longest routes, which provided inspiration for the menu. Dishes are well-balanced and original with a modern touch; breads come from a charcoal-fired tandoor and vegetable dishes are a highlight.
