casey + alex vs. smartphones
when bored or taking a break from reviewing her case notes, casey plops down on the couch (most of the time accompanied by a beloved bag of potato chips) scrolling through instagram reels of cat videos that she sometimes sends to alex.
alex calls casey out from the dining table where she’s preparing her cases and yells at her to stop sending her stupid videos because her phone keeps pinging. under grumpy breath, alex opens casey’s messages to watch the videos she sent. she smiles and wonders whether it is time for them to try and adopt a pet.
other things casey does with her smartphone:
1. casey learns new recipes by watching youtube videos so she could impress alex with her cooking skills. she also browses tagged restaurants on instagram reels so she could take alex there if she thinks they’re worth it.
2. she leaves movie reviews on letterboxd, especially if the ending of a movie really upset her
3. when she’s antsy, she plays harvest moon/stardew valley
4. casey has pinterest boards that she updates regularly: “date with alex ❤️”, “small tattoo ideas”, “poems that remind me of alex ❤️”, “stupid memes”
5. she has a reddit account but never posts. she uses it just to read the ridiculously funny and the questionably morbid.
casey’s google search history:
how to handle anxiety symptoms / sous vide vs. pressure cooking / are all orange cats crazy / gone girl actress / is orange from the color or the fruit / do fish pee / is bloodbending illegal / duck penis / date night ideas / is mayonnaise better for grilled cheese / padded sliding mats / jurassic park survival guide / new ways to pleasure your girlfriend / silly cat names / sneaky ways to ask your girlfriend to marry you / will our cat attempt to eat our pet fish if we decide to also keep fish pets / gelato vs. ice cream / what to give wife for first anniversary
things alex does with her smartphone:
(the first thing alex does in the morning after brushing her teeth is checking whether she has important emails that need to be urgently responded to)
1. she has a binaural beats/nature sounds app so she can listen to them to help her with anxiety when casey is not around
2. her mobile games of choice are (a) duolingo - to channel her competitiveness and always get to number 1 on leaderboards; (b) merge cooking; (c) nyt games - to pass time when she can’t sleep
3. casey encouraged alex to start journaling to help relieve some symptoms of anxiety. for convenience, alex uses the notion app as a semi-journal, semi-to-do list. at the end of a tiring day and esp if casey is on a work trip, she scribbles a brief narrative of how her day went and how it made her feel. sometimes, she shares her notes to casey.
4. convenience apps: uber, uber eats, doordash, pocket yoga, skyscanner, wise, paypal, opentable, airbnb, booking.com
5. alex has subscription to both apple music and spotify. she insists that sound quality is better in apple music but spotify’s user interface is friendlier. she has different playlists for each mood, and made playlists for casey. she hasn’t shared all those playlists to her though.
alex’s google search history:
are there any advantages to castling queenside? / how do you politely ask someone for their instagram account but as a friend? / what does it mean when young people say that “this is sending me”? / how to tell your girlfriend you love her without having to say it explicitly? / are intrinsic motivations learned? / what restaurant serves the best grilled cheese in manhattan? / list of fragrances with subtle sillage appropriate to wear at work / what signs to look out for which indicates that your girlfriend wants to marry you? / list of the most romantic places for honeymoon / best galleries to visit while in Barcelona / how hard is it to raise a child?

Gifts and Being Spoiled - Non Allowance
Let’s discuss Gifts.
I’m not talking about $30 for a pedicure or a Starbucks gift card and tumbler. I’m talking about the jewelry, the cars, the thousand dollar bags and shoes, the stocks and bonds, the gold and silver bars, kinds of gifts. Unless you’ve grown up accepting gifts or have made enough money to buy these things for yourself, it may make you feel uncomfortable. Who wouldn’t? We’re talking about receiving thousands of dollars worth of gifts.
Hell, this is something that even the most experienced SBs have had to work to become accustomed to, and even now gifts of a certain caliber can make a lady a little bit nervous. The easiest way to become comfortable with receiving luxury gifts is by desensitizing yourself to the cost.
Note: this is not desensitizing yourself to just start swiping your credit card for whatever purchase you want. This is to remove the feelings of doubt, shame, and insecurity that surround owning expensive items while those around you may not yet share in your wealth.
One exercise I did was write down every single thing I wanted to purchase. I broke it into the following categories: useful, nice, frivolous.
The useful items are things I would use on a consistent basis. Think computer, KitchenAid mixer, exercise bike, spa passes, etc. These will be more tailored to your own needs.
The nice items are things that don’t make or break any given experience, but would be fantastic to have and would increase my quality of life. Think multiple pairs of running shoes, a $300 outdoor hammock swing, new matching bedroom set, etc. Once again, these are more tailored to your needs.
The frivolous things are anything else. Think of the Chanel bags, the jewelry, shopping spree at Bloomingdale’s. Items that won’t make it break your experience of life.
Throw literally everything you can on this list and include the prices. When you see something on TikTok, add it to the list. When your coworker is talking about that sous vide, add it to the list. Big or small, just add it.
At this point you’ll have an idea of what you like and want, and how your SD can best gift you. Maybe you aren’t a clothing girl, but will go crazy in the homegoods section. Your gifting doesn’t have to look like mine, and that’s okay. This is your time to be spoiled!!
This brings me to my second thought: using your belongings.
It can be nerve-racking and ostracizing being the only girl with real gold in your ears. You may want to leave your good items in a safe or only wear them on special occasions.
Don’t.
Shoes and bags and jewelry and clothing is meant to be worn, not to sit in a dust bag for admiration. Your exercise bike is meant to be used. Running shoes are meant to be worn down. Don’t be afraid to use your gifts, because you’ll appreciate them more and will become used to using your most expensive items.
The last thing I would like to leave you ladies with is simple: Gratitude. Be grateful for the gifts that come into your life. Be grateful for the person providing the gifts. Be grateful for the journey of becoming a woman who has the capacity to receive. It’s okay fantastic to thank your SD/SBF for gifting you with something. In fact, most of these men are surrounded by people that use and take from them. Say thank you and mean it and watch how your experiences change.
Happy Sugaring ✨

Internet of dead bikes, etc
*Stacey Higginbotham:
Plan for death at the start of building your connected device
This week brings us the tale of yet another connected device that may become a useless chunk of scrap because its maker is going out of business. In this case, the affected product is the VanMoof e-bike, which cost buyers $5,000 and requires a working app for many of the bike's functions.
VanMoof has gone into the Dutch version of bankruptcy, and owners of the product have been told that if the servers shut down, users will have no way to get a security key needed to operate many of the bike's features. For buyers of connected products ranging from home hubs to sous vide cookers, the end of a connected device company often means the end of a functioning product.
But it doesn't have to be this awful for consumers. By planning for failure, startups (and large companies like Amazon or Facebook) can kill their products better.
— VanMoof promises users that their connected bikes will get "better and better" through software updates. What they don't advertise is that without their servers, the bike may not even work.
In the case of VanMoof, a rival connected e-bike company has created an app that will purportedly unlock the VanMoof bikes and provide some functionality. But relying on a competitor to hack together some software to control a device made by another vendor and hoping that, as a user, you can download your security key from the VanMoof servers, before those servers are shut down, is not an ideal scenario.
It's the equivalent of rushing through your home as a fire burns, trying to grab people, pets, important papers, and heirlooms while the walls crumble. Folks with go bags or even a sense of what to take first are in a far better position if the worst happens. And by now, every company building a connected device needs the equivalent of a go bag or at the very least, a checklist.
Design your business model and device differently
It starts with the design. When designing the physical product, designers need to think about graceful degradation. Put physical buttons on the device. Make sure the product functions as a bike, a juicer, an oven, or whatever else even if the additional software-based or connected features fail. When it comes to making decisions about the chips and services used in the hardware, consider ongoing maintenance costs and how long that hardware will get necessary security updates.
I've seen startups run into issues after they chose a hardware platform that required monthly payments that increase based on the device usage. One of the services was associated with keeping the product secure, so the device makers had the best goals in mind but realized too late that the initial design decision obligated the company to make annual payments that would rise as more people purchased and then used their devices.
Understanding the cloud architecture costs and decisions made when designing a connected device's software and apps also matters. Unlike with dumb physical hardware, where calculating the cost of any good sold ends once the device ships, connected devices have a continued ongoing cost more commonly associated with software.
Software gets around the ongoing cost issue by charging a licensing fee or charging for the product as a service. Hardware providers are trying to offset these ongoing costs with additional subscriptions, or in some cases by offering a SaaS model and throwing in hardware as part of a monthly fee.
Escrow funds, not source code
Any company selling a connected device should understand the monthly cost of supporting their servers and apps, and set aside the appropriate dollar amount to ensure that service providers get paid — even if the company runs into trouble. This means any product must have an escrow account with six months or a year of ongoing device upkeep fees allocated.
This means if a startup goes out of business, it has the funds to notify people that the connected device they spent money on will stop working after a set time as opposed to it just going dark on a random April night (hello, Insteon). Bigger companies may not need an escrow fund, but they, too, should kill underperforming devices with long lead times, discounts, and perhaps even refunds. Those strategies should be part of any initial planning for a new connected device.
We often hear of users demanding that companies put the source code for connected devices into escrow, so that users can run the code on their own servers and keep their devices operational. This strategy has three flaws.
The first is that the source code may not be enough to keep a device running, especially as elements like secure keys and certificate subscriptions are now part of connected device designs.
The second flaw is that not every device is suited for some side-loaded open source code. Meta is dealing with this as it pulls back from its connected video calling device, the Portal. Because the Portal has mics and cameras that a hacker might want to use to spy on users, Meta doesn't want to let people load software onto the product to keep it working; it represents too much risk. Instead, it would rather shut the devices down entirely.
Third, opening up the source code may make it easy for a select few to run a device, but it's not something the average consumer can or will do. So when thinking about escrow, think funds, not source code.
Learn from Amazon and others
There are examples of device deaths done right. Amazon actually provided a good example this year when it announced the end of its Halo wellness devices. Amazon made the announcement in April, and told consumers that 96 days later, the devices would stop working.
This was a relatively short amount of time, but Amazon promised full refunds to anyone who had purchased any of the devices within the prior 12 months, and immediately stopped charging subscription fees associated with Halo devices. It also refunded any unused prepaid Halo subscription fees and said it would delete all data associated with Halo devices without requiring the consumer to take any additional steps.
The ease of refunding customers was only available to Amazon because it was the sole retailer of the Halo devices, which isn't the case for every connected product, but it was clear that Amazon wanted to get out of the Halo business quickly and with minimum consumer fuss. So it made it incredibly easy.
Finally, Amazon asked consumers to ship the devices back for recycling and made doing so free, going far beyond what most companies are doing with dead devices.
Amazon isn't the only company that has ended its products' lives early. The German company behind the Neato vacuum, Vorwerk, shut down the vacuum division this year. But it also said it would maintain a staff of 14 people for the next five years to ensure the security and functioning of the vacuum’s cloud software and app. Vorwerk further said that it would provide replacement parts for up to five years.
I've seen other companies kill their devices with discounts for replacement gear and long lead times. That's the bare minimum, but it can still be frustrating for consumers. For example, I own a set of Arlo connected video cameras I purchased in the summer of 2017. In January of this year Arlo said it would classify my cameras as end of life as of April 2023, which means they would lose several features including free 7-day video storage, firmware updates, and email notifications.
Since the reason I chose those cameras in the first place was that I got a 7-day window to see my videos before they were deleted without paying for a subscription, I was nonplussed about the short notice but frustrated that my cameras were going to die after only six years. After user outrage, Arlo said that it would continue with 7-day video storage until July 2024 before the devices would lose security updates and that functionality. For me, this means the cameras I paid $220 for in 2017 would work for seven years.
Expiration dates for smart devices
Had I know all of that when buying my cameras, I probably would have been fine with the cost/benefits tradeoff. But others may not have. And this is why in today's day and age, every single device should come with a guarantee that the device will work for a set number of years.
Companies can go beyond this date, but they need to establish minimums that get displayed on the box and for devices sold online, at the point of sale. This includes how long the device will get new features and essential security updates. The UK has already enshrined this idea in regulations that will take effect in April next year.
Additionally, knowing the device expiration date can help companies figure out how much money they should set aside in the escrow accounts. It also ensures that when another company buys a connected device maker, they can't simply shut it down. Connected devices have been around long enough that we understand the challenges they pose for business models and the challenges that result when those companies fail.
It's past time we start doing something about it.

i am sick and tired of much shit costs it’s fucking insane someone help us
in the mean time, i have started making A Lot more things at home that i would normally just buy. if you have the time i would recommend giving these a shot
Bread
bread is a big one, and as you improve quality and texture the price increases exponentially. even wonder bread, the thing everyone would say is Dirt Cheap is about 4.50$ per 20oz loaf where i live. most ‘artisan’ breads are 6$ or more
bread is supposed to be cheap and economical and it is when you make it at home. By Far the way to most easily incorporate this into your life is to invest in a bread machine. you can certainly bake a sandwich loaf without one, but it will obviously take more time. bread machines are dump and go.
i happen to have a zojuirushi bread machine, which works well for me but is $$$. there are certainly cheaper ones and bread machines are one of those things that end up in a thrift store or good will so check there as well. but even if you sprang for a new zojuriushi, it would pay for itself in about 80 loaves (assuming you hit a 0.90$ per loaf cost like i do)
i literally use one of the recipes that came with my machine. but there are loads out there. i would imagine most recipes are the same +/- 5% on about any ingredient i don’t think this matters
another path is the various ‘no-knead’ breads that are out there. these are similar in that you just put your stuff in a bowl, mix it up (maybe give it 2-3 folds over the course of 24-72 hours) and then you bake.
Mayonnaise
a stupid thing of mayonnaise costs SIX DOLLARS. eggs are still pretty expensive But for the same 6$ you can make about a gallon of mayonnaise.
i am sorry to have to recommend you own another tool, and you can make mayonnaise without a tool, but boy you should really just own an immersion blender to do this. they are not super expensive and will pay for themselves in no time
1 egg will make about 1 cup of mayonnaise comfortably. i say comfortably because you may be able to squeeze some more volume out of it it just depends.
mayonnaise is an emulsion of egg and oil, and sometimes the egg will hold more oil than others. but you can rely on about 1 cup everytime.
take make mayonnaise, take 1-2 eggs in a high sided container (deli containers from take out work best) and about a tsp of mustard per egg. (if you are like EWWW MUSTARD you can do it without however imo you will not taste it at this volume + it really helps mayo your mayonnaise.)
stick your immersion blender in there and combine everything and then slowly stream a neutral oil into your container. you are done when it looks like mayonnaise. it should be REALLY pale yellow. if it’s pretty yellow still you can probably add more oil.
SEASON IT with salt and pepper. you can also put other fun things in there if you want. herbs. lemon. garlic. go nuts
IF your mayo is broken (not together, oil at the top, etc.) take an egg yolk and another tsp of mustard, mix them in a separate high sided container. and then SLOWLY stream your broken mayonnaise into your new mix and it should come together
if raw eggs worries you, you can pasteurize your own eggs. but you need more equipment! you need a sous vide machine, or babysit a pot of water on the stove for about 90 minutes to keep it at 130F the entire time
but if you do that and then put those eggs in ice water, they are Pasteurized congrats.
Frozen Pizza
i love the convenience of frozen pizza but most of those suckers are like 8$ or more. you can take a pizza that you have made from scratch, bake it in the oven basically as normal, put it in a bag or wrap it in plastic or foil, put it in the freezer and now you have a frozen pizza
i don’t really do anything different for a pizza i eat for dinner or a pizza i intend for the freezer. i might under bake it slightly but most of the time i don’t. for best results put it on a wire rack to cool completely for an hour or so before you wrap it up.
i find that bags are too small for a pizza so i will wrap it in plastic. freeze your pizza flat.
i bake mine at 350F until it’s hot and the cheese is melty again. maybe 10 minutes just depends
that’s it for now if i think of anymore i will reblog

I first saw the Instant Pot at a friend's house. She had made sweet potatoes with it, and said that it took hardly any time at all.
That wasn't enough for me, of course, but it was enough that I started to do research, and looked at the different sizes and their features, and started imagining what my life would be like if I had an Instant Pot. I had been living the slow cooker life, and the problem with a slow cooker is that you have to plan meals well ahead of time and start them in the morning.
The more I read, the more enamored I grew, and eventually I brought an Instant Pot home. In those early, heady days, I used it for everything. I made pulled pork and shredded chicken, I made batches of hard-boiled eggs for pickling, I tore through recipes for curry and chili and all kinds of things.
And eventually I grew tired of it. It lost its luster. I found cleaning it annoying, and started to question whether it was actually sacrificing some flavor for time.
I tried to spice things up. I made pancakes in the Instant Pot. I made yogurt. For just a moment it felt new and novel, but that was how I knew that the Instant Pot was going to be spending more time on the shelf. It still comes out sometime, but not often, and when it does, I see all its faults.
The sous vide machine was next. I had seen it in a cooking video and thought that it looked like something out of science fiction, cooking food in bags that sat in water, regulating temperatures to within a tenth of a degree.
I cooked steak with it, and it was the perfect medium rare, with the outside seared using a blowtorch. It was the best steak I had ever had, until the next time I made steak with the sous vide machine, which went even better. I did sous vide chicken, locking in the flavor with the vacuum sealer. I made chashu pork, which was melt-in-your-mouth tender. I made slow-poached eggs, which can be cracked right into a bowl of ramen since they've cooked to the perfect doneness right inside the shell.
And after having a lot of perfect steaks, I started to get tired of it. Everything comes out of the sous vide process looking watery and gray, and needs to be patted down, then seared with a broil function of the oven or better, a blowtorch if you want it to look nice and have a crispy crust. It required planning ahead, and having a big pot of water sitting around, and needs the vacuum sealer, and is overall a hassle when compared to just placing things into a pan. Some things come out weird even if you sear them. I made sous vide salmon and it was unpleasantly tender.
I would still use it from time to time, but it wasn't the same. I didn't yearn for the next thing to try with sous vide. Most of the time we don't eat all that much steak.
And now I can feel myself getting those familiar butterflies for an air fryer. I see them stacked up when I go visit Costco, and I think about where it would sit in the kitchen, and all the things that I would do with it. I look at the price and try to justify it by calculating amortized expense over its whole lifetime.
And I'm sure there are interesting things to do with an air fryer, and I'm sure that it would make the food taste better, just as I'm sure that it would start to annoy me in various ways, and that over time, I would come to regard it in the same cold utilitarian way I regard the other appliances.
That slow, painful realization that you've fallen out of love with a kitchen appliance.

The Art of Sous Vide Cooking: Unlocking Flavors with Precision
Tumblr media
In the quest for culinary perfection, sous vide is a technique that has been transforming kitchen practices, from high-end restaurants to home kitchens. The term "sous vide" is French for "under vacuum," and it refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath. This technique offers unparalleled control over the consistency, taste, and nutritional quality of the cooked item. Here’s why sous vide cooking is becoming an essential part of modern culinary arts and how you can master it at home.
What is Sous Vide Cooking?
Sous vide cooking involves sealing food in an airtight container—usually a vacuum-sealed bag—and then placing it in a water bath that is set to a specific temperature. The idea is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and to retain moisture.
Benefits of Sous Vide Cooking
1. Precision and Consistency: The temperature control is precise, typically within 0.1 degrees Celsius. This means that once you have found the perfect temperature for your dish, you can replicate the results time and again.
2. Enhanced Flavors: Because food is cooked in a vacuum-sealed bag, none of the flavors are lost to boiling water or evaporated into the air. Spices and marinades are also more effective as they remain in direct contact with the food throughout the cooking process.
3. Increased Nutritional Value: Sous vide cooking allows for better retention of nutrients that are often lost through traditional cooking methods. By cooking the food in its own juices, you retain all the flavors and nutrients.
4. Convenience and Flexibility: Food can be prepared in advance, stored in the refrigerator or freezer, and then placed in the sous vide cooker. It requires less hands-on time during cooking, making it ideal for busy lifestyles.
Getting Started with Sous Vide Cooking at Home
1. Equipment: To get started, you’ll need a sous vide precision cooker—an immersion circulator—which you attach to a pot or container filled with water. Additionally, a vacuum sealer is highly recommended for sealing food in bags.
2. Basic Process:
Season your food as desired.
Place the food in a vacuum-seal bag and remove the air.
Set the sous vide machine to the desired temperature and time.
Place the bag in the water bath and let it cook.
Once done, you can quick-sear the food in a hot pan for a flavorful outer crust.
3. What Can You Cook? Almost anything! Sous vide is particularly famous for transforming tough cuts of meat into tender delicacies. However, it’s also great for eggs, vegetables, and even fruits for desserts.
Tips and Tricks
Pre-sear your meat: For an enhanced flavor and appearance, sear meat before vacuum sealing and cooking.
Ice baths: For items you don’t plan to eat immediately, use an ice bath after cooking to stop the cooking process and preserve texture.
Experiment: Don’t hesitate to experiment with different temperatures and cooking times to find what best suits your taste.
Conclusion
Sous vide might sound fancy and intimidating, but it's quite accessible and straightforward with the right tools. It's a game-changer for anyone looking to step up their cooking game, offering restaurant-quality results in the comfort of your own kitchen. Whether you're cooking steak, vegetables, or custards, sous vide ensures high-quality, delicious dishes every time.
Give sous vide a try, and you might find it’s your new favorite way to cook!

Delicious Sous Vide Steak Recipe for Perfectly Cooked Steaks
Tumblr media
The sous vide cooking technique originated in France and has gained popularity among professional chefs and cooking enthusiasts around the world. It allows for precise temperature control, resulting in perfectly cooked steaks with consistent results. Sous vide cooking is known for its ability to retain the natural flavors and juices of the meat, making it a preferred method for many steak lovers.
Cultural Background and Significance
The sous vide cooking technique originated in France and has gained popularity among professional chefs and cooking enthusiasts around the world. It allows for precise temperature control, resulting in perfectly cooked steaks with consistent results. Sous vide cooking is known for its ability to retain the natural flavors and juices of the meat, making it a preferred method for many steak lovers.
Health Benefits of Sous Vide Steak
- High-quality protein from the steak helps in muscle repair and growth. - Steak is a good source of iron, which supports healthy blood circulation. - This recipe does not contain any carbohydrates, making it suitable for low-carb or ketogenic diets. - When cooked properly, sous vide steak retains more nutrients compared to traditional cooking methods.
Tips for a Perfect Sous Vide Steak
- Temperature and Timing Ensure that your sous vide water bath is set to the desired temperature for your preferred doneness. Adjust the cooking time based on the thickness of the steaks. Thicker steaks may require additional cooking time. - Searing For an extra flavor boost, sear the steaks in a hot skillet or grill pan after sous vide cooking. Pat the steaks dry before searing to achieve a nice crust. - Seasoning Don't be afraid to season the steaks generously with salt and pepper to enhance their flavors. Experiment with different herbs and spices to customize the seasoning according to your taste. - Resting Allow the steaks to rest for a few minutes after searing to allow the juices to redistribute and enhance their tenderness.
Variations of Sous Vide Steak

Kitchen 101 - 7 Clever Hacks Using Cling Film Wrap!
Tumblr media
Introduction
If you are a restaurant operator or manage a commercial kitchen, you know how important it is to have a cling film wrap or a plastic wrap in your kitchen. Not because it’s a convenient tool for wrapping food, but also because it can be used in various clever ways to simplify tasks and improve efficiency.
From preserving freshness to creating makeshift piping bags, you can use a cling wrap to revolutionize your restaurant kitchen.
In this blog post, we will explore 7 innovative hacks that make use of cling film wrap beyond its traditional use, allowing you to do the best in your kitchen and make the best out of this essential kitchen essential.
7 Clever Ways to Use a Cling Wrap
1. Preserving Food
A cling wrap can be used to preserve food in your commercial kitchen. You can use it to wrap and cover leftover food or vegetables and fruits to keep them fresh for longer. Wrapping and covering them in a film creates a tight seal that prevents air exposure and moisture loss in the product, helping in maintaining the quality of product and extending its shelf life.
Moreover, you can use a cling wrap for hot food packaging purposes such as packing sandwiches for on-the-go meals for your customers. This way, the sandwich will retain its heat and moisture, and your customer can enjoy the sandwich later.
2. Sealing Freshness
A commercial kitchen is filled with hundreds of ingredients. Keeping them fresh and maintaining their flavor is of utmost importance. You can use a cling wrap to seal the freshness of your meat, sauce or other ingredient. It acts as a reliable barrier against moisture, air, and odors. This helps to preserve the freshness and quality of the ingredients, ensuring that they can be used for a longer period of time.
Simply wrap your ingredients tightly and ensure that there aren’t any gaps or exposed areas and put them in a shelf or refrigerator. This hack also helps prevent cross-contamination between different ingredients, maintaining the integrity of each individual flavor.
3. Sous Vide Cooking
If you have dishes on your menu made by sous vide cooking, you must be using plastic airtight bags. You can use cling wrap as a substitute to these airtight bags as cling wraps provide a reliable and watertight seal while ensuring that the food remains protected and cooks evenly.
To prepare for sous vide, simply wrap the food tightly in clinging wrap and ensure that no water can seep in during the cooking process. You will have a tender, flavorful dish ready for your customer.
4. Convenient Piping Bag
Piping bags are very essential for every commercial kitchen, especially for decorating deserts, but they are also very expensive. Instead, you can grab a roll of cling film, spread it over, spoon your icing or cream onto it, and carefully roll it into a cylindrical shape. Secure the ends and snip a small hole in one corner, and voila! You will have a simple yet very effective pipe bag to add stunning finishing touches to your culinary creations.
5. Speedy Cleanups
Cleaning kitchen equipment after having busy day in your restaurant kitchen is a big task. Well there cling wrap can help bypass this process! Use cling wrap to cover your mixing bowls, pans, and utensils before use. When you are done, simply peel off the wrap and you will have a clean and protected surface behind.
6. Preventing Splutter and Splashes
Slutter and splashes are very common when using a blender or mixer. This is especially true if the lid of the mixer pot is loose or missing. At such times, you can use cling wrap and place it over the top of the mixer or blender pot and prevent splattering and minimize mess.
This further helps you protect your kitchen surface from messes or stains.
7. Sealing Containers and Bottles
If you have liquid ingredients stored in jars, containers or reusable food packing vessels, it is important to ensure that they are properly sealed to prevent any leaks or spills. This can be ensured by using cling wrap.
Just remove the cap or lid of the vessel, place a layer of cling film over the opening of the vessel and then screw the cap back on. The cling wrap helps create an airtight seal and thus prevents leaks and mess, and also preserves the ingredients.
Conclusion: It’s Not Just A Cling Wrap!
The cling wrap in your commercial kitchen is not just a staple for food storage but a versatile tool for various tasks. It can be used for preserving food, sealing freshness and can even be useful in sous vide cooking. Furthermore, you can also use it to minimize the extensive cleaning process and prevent spills and leaks in loose kitchen containers.

The Sous Vide Basics
The term "sous vide" is French for "under vacuum." The process involves sealing food in a bag and cooking it in a water bath at a precise temperature. This method ensures your food is cooked evenly, maintaining its juices and enhancing its flavors. Because the temperature never goes above your desired doneness, it's virtually impossible to overcook your food, even if left in the bath longer than the minimum cooking time.
Necessary Equipment
Getting started with sous vide cooking requires a few specific tools. The most important is a sous vide immersion circulator, which maintains the water bath at a precise temperature. Next, you'll need a vacuum sealer and bags to create an air-free environment for your food. Alternatively, you can use zip-top bags and the water displacement method to achieve a similar effect. Lastly, you'll need a container large enough to hold the water bath and the food you're cooking.
Tumblr media
Cooking Techniques and Tips
With your equipment ready, it's time to cook. Seal your food—be it meat, fish, or vegetables—in a bag with any desired seasonings or marinades. Then, set your sous vide machine to the desired temperature and time. Once it reaches the set temperature, immerse your bagged food in the water. Ensure that it's completely submerged and cook for the recommended time.
After the cooking process, depending on what you're making, you might want to finish off your food on a grill or hot skillet to achieve a flavorful sear. Remember to let your meat rest after searing to redistribute the juices evenly.
Exploring Recipes and Possibilities
One of the joys of sous vide cooking is its versatility. There are endless recipes online catering to every palate. Whether you're preparing a tender steak, succulent chicken, or even a creamy cremebrulee, there's a sous vide recipe for it.
Moreover, sous vide cooking affords the luxury of time. Since overcooking is nearly impossible, you can focus on other tasks or meal components without the fear of ruining your main dish. Check out here to know more about the best sous vide recipes.

The cooking times can range anywhere from 1 to 48 hours, depending on the thickness and type of food. But don't worry, sous vide's forgiving nature means your food will not overcook, even if left for longer than the minimum required time.

How to Prepare Sous Vide Steak
Sous vide is a popular French term that means "under vacuum." This method allows you to cook meat at a precise temperature, ensuring perfect texture and even doneness from edge to edge.
This technique is perfect for steaks. The results are tender, juicy, and flavorful.
If you want to know the process of preparing Sous Vide Steak, follow the guide in this article. Visit here to learn more about sous vide steak.
Tumblr media
Prep the meat
Sous vide is a French technique that allows you to cook meat (like steak) to the perfect temperature. This technique is hassle-free and saves time.
Vacuum-seal the meat in a bag, and then submerge the bag in water. This precise cooking method produces a juicy steak with a nice seared exterior.
Start by preheating your precision cooker to 130degF (57degC). Then, season each steak with coarse salt, ground black pepper, minced garlic, and herbs like rosemary or thyme.
Once the steaks are seasoned, place them separately into each vacuum-sealable bag. Add a sprig of thyme to each bag, and seal the bags securely.
Take the s water bath and pat them dry. Then, you can serve them or finish them by searing them in a cast iron skillet on the stovetop.
Vacuum-seal the meat
To be perfectly cooked, sous vide steaks must be vacuum sealed before being immersed in the hot water bath. It is an innovative method to trap all the juices and flavors in the bag.
You can also use vacuum seal bags to prepare meals for kids who may not eat certain foods. Soups, casseroles, stews, lasagna, spaghetti, meatballs, and mashed potatoes are easy to make and freeze in these vacuum-sealed bags.
Tumblr media
Another benefit to using vacuum sealing is that you can easily season the meat before cooking it in your sous vide water bath. This is especially important if you're using cuts of meat that don't traditionally have a lot of flavors.
Cook the meat
Steak is the crucial and most flavorful food to prepare using sous vide cooking. This method produces an even internal temperature, keeps in all of the steak's natural juices, and ensures that it remains tender.
However, you should not overcook the meat in sous vide water bath. If left in the bath for too long, your steak will lose some of its moisture.
It's best to plan on 1-3 hours of cooking time for a 12-pound steak. A larger meat cut, such as a tri-tip or a skirt steak, may need more time to reach your desired doneness.
Once the steak is finished, you can quickly sear it for added color and delicious char. Then, serve it with your favorite sauce.
Sear the meat
Searing the meat before cooking sous vide is essential for a well-done steak. It locks in the seasoning flavors and develops a tasty crust on the outside.
The key to searing a steak is high heat and a heavy-bottom pan such as a cast iron skillet or grill. This method is easy and fast and produces perfect results for a perfectly cooked steak.
Tumblr media
The sear is quick, so you should be able to get the steak on the grill or in the skillet within a minute of pulling it out of the water bath. After the first minute, flip it over and continue to sear until you've got a nice deep brown. Then, based on your taste preference, add a little butter to the pan for more flavoring. You can spoon some of the drippings from the pan over the steak to add extra flavor.
