Preparation
In a bowl, rinse and soak the split chana dal for 45 minutes in warm water.
In medium or low-medium heat a heavy-bottom kadai or saucepan. Once it is heated, add the urad dal and roast it for a few minutes. Don’t let it brown.
Remove it from the heat and set it aside.
In the same pan, fry the rice flour for a few minutes. Check whether the flour is warm. Once it is warm, remove it and set it aside.
In a blender, add the roasted split, chana dal, and urad dal. Grind it until it becomes a fine powder.
Add the ground dal powder, curry leaves, sesame seeds, salt, asafoetida, and red chilli powder to the rice flour. Combine the flour thoroughly to get an even mixture.
Now add the butter and water, and combine them well with the flour.
As you combine, add the soaked channa dal to the dough and mix. Make it into a semi-soft dough as you knead. Let it rest for a few minutes, then divide the dough into small balls.
Now grease a zip-lock bag or piece of parchment paper.
Meanwhile, heat oil in a kadai at medium or medium-high flame.
Grease your fingers with oil and flatten the ball into a thin round in a greased ziplock bag or on parchment paper.
Fry the rolled-out thattai in the oil by flipping each side till it's crisp and the oil stops sizzling. Remove it from the oil and place it on the kitchen towel.
Your thattai is ready to be served.

Grind sugar and cardamom together into a fine powder. Set aside and roast the coconut until slightly golden, then let it cool.
Mix the fried gram dal powder, powdered sugar, and roasted coconut together. Set aside. 
Take a large portion of dough (slightly larger than a lemon) and roll it into a thin circle.
Use a lid to cut the dough into small, thin circles. Place a tablespoon of the sweet stuffing in the center of one circle.
Grease half the edge with a little water, fold it over into a semicircle, and press to seal.
Use a somas cutter to trim the edges, ensuring some of the sealed area remains intact to prevent opening during frying.
Repeat the process with the remaining dough, rolling the scraps to form more circles.
Keep the prepared somas covered until frying.
Heat oil in a pan. Test the oil by dropping a small piece of dough—if it rises immediately, the oil is ready.
Fry 2-3 somas at a time, allowing them to puff up and turn golden brown.
Drain the fried somas on tissue paper.
Allow them to cool completely, then store the crispy somas in an airtight container.

Now add the vegetable broth of your choice or 3 cups of water. 
Meanwhile, in a small bowl, mix the cornflour with 3 tbsp of water and make it into a smooth slurry.
Reduce the heat, keep stirring, and slowly incorporate the corn slurry into the soup.

A Simple Handova
Handova is a delicious Gujarati cuisine that can be enjoyed as a snack or a meal. Made with a fermented mixture of lentils, rice, and veggies with a dash of green chillies, ginger, mustered, and cumin. In this blog, we’ll see the step-by-step process used by the exporter of sunflower oil to make handova.
 Ingredients
Moong dal - ½ cup soaked
Urad dal - 1 tbsp
Tuvar dal - 1 tbsp
Rice - 1 tbsp
Garlic cloves chopped - 1 tsp
Ginger chopped - 1t sp
Green chillies chopped - 2 tsp
Mustard seeds - ½ tsp
Asafoetida - a pinch
Fenugreek seeds - 5
Grated and tightly packed bottle gourd - 1 cup
Turmeric powder - ½ tsp
Coriander powder - ½ tsp
Coriander leaves chopped - ¼ tsp
Sesame seeds for topping
Curry leaves chopped - 1 tsp
Turmeric powder 
Curd - ½ cup
Baking soda - ¼ tsp
Salt as required
Oil as required 
Method
In a bowl, add the rice, moon dal, tuvar dal, and urad dal, and rinse it a couple of times. Add chana dal to it if needed.
Once rinsed thoroughly, soak it in water for 5 hours.
Strain the soaked dal, add it to a blender, and add the curd.
Blend it until you get semolina consistency. If it is difficult, blend it in batches and do not add water.
Now remove the batter, add baking soda, and mix well. 
Cover it and let the batter ferment for 9 hours or overnight. The batter will have a faint sour aroma or tiny bubbles the next day.
Grind the ginger, garlic, and green chilies. 
In a kadai, heat 1 tablespoon of oil and add mustard seeds to it. Once it crackles, add 5–6 fenugreek seeds, asafoetida, and curry leaves. Once it is cooked, add ground ginger, garlic, and green chilli paste.
Let the raw aroma go away, and add the grated bottle gourd. Add the coriander and turmeric powder and mix well. 
Switch off the flame and add the coriander leaves and tempered mixture to the batter.
Add the required salt.
Now spread oil in the pan and keep it on low flame.
Pour 2 ladles of handvo batter into the pan and gently shake it so that it spreads evenly in the pan. Sprinkle the sesame seeds on top.
Cover the pan with a lid and cook on low heat.
When the sides are golden, gently flip them using a spatula. 
Cook until you find golden spots.
Remove from the heat and serve with coriander chutney.

Crispy Chickpea Falafel 
Falafel, what a fancy dish! Crispy on the outside and tender on the inside with aromatic spices, this is a perfect snack. With a fancy name and Middle Eastern roots, the preparation is as simple as blend, shape, and fry. Here is a step-by-step process by the exporter of sunflower oil for blending, shaping, and frying the delectable falafel.
Ingredients:
Chickpeas dry - 2 cups
Garlic cloves -  6
Onion cubed - 1 
Coriander chopped -  ½ cup
Cumin grounded - 2 tsp
Coriander powder -  2 tsp
Black pepper powder - 1 tsp
Red chilli powder as per preference
Salt - adjust to taste
Chickpea flour - 2 tbsp
Oil for frying
Method:
Rinse and soak the chickpeas in water for 12 hours or leave overnight. If the chickpeas are too old, let them soak for another two or three hours.
Once soaked, rinse them and drain them using a strainer or colander.
Now take a blender and add the chickpeas, cumin powder, pepper powder, coriander powder, red chilli powder, salt, onion, garlic, chopped coriander, and chickpea flour. Blend it into a coarse mixture. Note: Do not add water while blending.
The texture will look like that of semolina. To ensure the dough has the correct texture, take a tablespoon of the paste, place it in your palm, pat it, and shape it into a ball. If the mixture holds its shape, it is ready. If not, process it until you achieve the right texture. Once the texture is ready, add the baking powder.
In a kadai, heat oil on a medium flame enough for partial frying. 
Once the oil is hot (check by dropping a small portion), shape the dough into balls and drop them in the oil one by one. Do not overcrowd.
Flip it once one side is firm or golden brown. Fry them on a medium flame until golden brown.
Remove it from the oil and place it in a strainer to drain the excess oil.
Serve it hot with a dip of your choice. Your crispy falafel is ready to be munched.

Once combined well, add the spring onion greens and set them aside.
Meanwhile, in a small bowl, mix all-purpose flour with water.
Now take the spring rice paper roll and place the cooked stuffing inside the wrapper. 
Brush the edges with the flour mix and roll the stuffing gently but tightly. Seal the edges of the wrap carefully.
Once the rice paper is rolled, heat the oil in a large frying pan.
Gently slide in the spring and roll in the oil.
Once they are golden brown, turn them on the other side and fry.
Once done, place it on kitchen paper towels to remove excess oil.
Serve them hot with chilli garlic sauce or sauce of your choice.

Paneer Kali Mirch
Paneer is another versatile dish. Bland when eaten raw and versatile when added flavours, paneer is an Indian cottage cheese. Listed at the top of every Indian menu are all three-course meals: appetiser, main course, and dessert. It is not only a dish that is served at home, but it can also be made at home. In this blog, we’ll prepare a perfect paneer kali mirch recipe that goes with roti or chapati, along with sunflower oil manufacturers in Tamil Nadu.
Ingredients:
Cubed paneer
Kewra or rose water - 1 tsp
Medium or large onion - ½ cup chopped
Ginger - ½ inch chopped
Garlic - medium cloves 3 chopped
Green chillies chopped - Acc. to preference
Cashew nuts - 10
Javathai/Jaadipathir - 1 or 2
Cloves - 2
Cardamoms -2
Cinnamon - 1 inch
Full-fat curd (beaten) - ¼ cup
Bay leaf - small size 1
Red chilli powder - Acc. to preference
Shahi jeera - ½ tsp
Oil
Garam masala - ¼ tsp
Coriander powder - ¼ tsp
Salt as per taste
Black pepper - crushed 
Water
Instructions
Begin with preparing the onion paste.
In a heavy-bottomed pan, add a tablespoon of oil. Once it is hot, add the cinnamon stick, cardamoms, cloves, and mace strands and sauté until it crackles.
Add the chopped onion and sauté until it turns a light golden brown on medium heat.
Once light golden brown, add the ginger, green chilies, garlic, and cashew nuts.
Mix until it is golden brown. Once done, remove from heat and mix it in a blender.
Add water to grind it into a smooth, fine paste.
In the same saucepan, add 2 tablespoons of oil, and once it is hot, add the bay leaf and shahi jeera and let it crackle and become fragrant.
Now add the onion paste and sauté it for 4-5 minutes till the oil separates from the paste. Add the crushed black pepper and sauté for a minute.
Now add the spice powder and sauté till it mixes very well.
Remove it from the heat and let it cool down. Now add the whisked curd and quickly stir till it mixes well with the onion paste. Now add water and mix well.
Now, on medium heat, simmer the gravy till oil specks on the top. If the gravy thickens, add water. 
Now add the paneer cubes and mix well. Switch off the heat and add 2 tablespoons of cream. 
Lastly, add a teaspoon of kewra or rose water and garnish with crushed black pepper, mint leaves, or coriander leaves.
Paneer Kali Mirch is ready to be served with chappati, roti, or naan.
