Chicken Alfredo Stuffed Shells
Chef’s Note: High intensity. DIVINE in taste though. Creamy rich alfredo but not heavy. Umami mushroom, juicy chicken. Nice taste in the baked ricotta with it's cheeses
Ingredients
1 package (12 oz) jumbo pasta shells
1 1/2 lb boneless skinless chicken breasts, cut into 1/2-inch cubes
1 tbsp + 1 tbsp olive oil, divided
8 oz sliced baby portobello mushrooms
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
1 1/2 cup + 1 cup + 1/2 cup shredded Parmesan cheese
1 cup shredded part-skim mozzarella cheese
1 tsp dried parsley flakes
4 tbsp unsalted butter, cubed
5 garlic cloves, minced
1 1/2 cups heavy whipping cream
a few dashes dried oregano (~1/4 tsp?)
a few dashes dried basil (~1/4 tsp?)
salad, for serving
Instructions
1. Cook pasta according to package directions.
2. Meanwhile, in a large skillet, brown chicken in 1 tbsp oil. Remove and set aside.
3. In the same pan, saute mushrooms in remaining 1 tbsp oil until tender; set aside.
4. In a small mixing bowl, combine the egg, ricotta, 1 1/2 cups Parmesan, mozzarella, and dried parsley.
5. Drain and rinse pasta with cold water
6. Stuff each shell with about 1 tbsp of cheese mixture. Place in a greased 13x9-in. baking dish.
This seems small, but trust me, you have a lot of shells to fill
7. Top pasta with chicken and mushrooms.
8. Start preheating oven to 350°F
9. In a large saucepan over medium heat, melt butter.
10. Add garlic and cook and stir for 1 minute.
11. Add cream. Cook 5 minutes longer, stirring occasionally. don’t let the cream boil over
12. Add 1 cup Parmesan cheese. Cook and stir until thickened.
13. Pour sauce over the casserole. Sprinkle with remaining 1/2 cup Parmesan cheese.
14. Cover with foil. Bake for 30 minutes.
15. Uncover and bake 10-15 minutes longer or until bubbly.
If desired, cover and freeze unbaked shells for up to 1 month.
To use frozen shells: Thaw in the refrigerator. Let stand at room temperature for 30 minutes. Bake as directed.
16. Serve pasta warm, with a side of salad

I tried the Kroger Simple Truth Organic Whole Baby Bella Mushrooms and these were pretty good.
These mushrooms tasted fresh while also firm but soft and went well with the meat sauce fiber pasta.
This was skillet cooked and later microwaved as part of a meat sauce fiber noodle pasta.
These mushrooms didn't taste salty.
I would eat these again.
Got at Kroger.

Mushroom and Charred Corn Tostada with Guacamole
Chef’s Note: Holy hell, the mushroom mixture smells Amazing umami taste
Ingredients
Guac
2 ripe large avocados, peeled
1/4 cup finely chopped red onion
1 1/2 tbsp lemon juice
1/4 tsp kosher salt
Main
2 cups yellow corn kernels (about 4 ears)
2 tbsp vegetable oil
2 poblano peppers, seeded and finely chopped
4 garlic clove, minced
8 oz sliced mushroom (I used baby bella, but feel free to use whatever you want, or mix and match)
3/4 tsp kosher salt
12 five inch corn tostada
Mexican crema, tableside (substitute sour cream)
This is the pour kind, not scoop kind
(opt.) ~6 tbsp crumbled Cotija or feta cheese
Instructions
1. Place avocados in a medium bowl; mash until smooth. Stir in chopped onion, lemon juice, and salt. Set aside.
2. Heat a large skillet over high heat.
3. Add corn to pan and cook until corn is caramelized and lightly charred, stirring occasionally. Remove corn from pan.
If using a nonstick pan, it doesn't char, just browns
Cast iron skillet will create a char
4. Add oil to the pan and swirl to coat.
5. Put the pan on medium heat. Add poblano and sauté 4 minutes or until tender.
6. Add minced garlic and mushrooms and garlic. Sauté 2 minutes.
7. Stir in salt and sauté mushroom mixture until most of the liquid evaporates, about 4 minutes.
8. Remove from heat. Add mushroom mixture to corn. Stir to combine.
9. Place tostada on a plate.
     ASSEMBLE
10. Spread about 1 1/2 tablespoons avocado mixture in a 4-inch circle in the center of each tortilla.
11. Top each with ~1/4 cup mushroom mixture
12. Drizzle with ~1 1/2 teaspoons crema mixture
13. If desired, sprinkle with ~1 1/2 teaspoons cheese.
