This easy homemade avocado salad is bursting with fresh flavors and creamy textures. It's a perfect side dish or light meal for any occasion.
Ingredients: 2 ripe avocados, diced. 1 cup cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 lime, juiced. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Dice the avocados, cherry tomatoes, red onion, and cilantro and put them all in a large bowl. Add olive oil and lime juice to the salad. Toss the ingredients together gently to mix them. Add pepper and salt to taste. Serve right away or put in the fridge until you're ready to serve.

This crockpot beef, avocado, and lime soup is a hearty and flavorful dish perfect for a cozy night in. The combination of tender beef, creamy avocado, and zesty lime creates a satisfying meal that will warm you up from the inside out.
Ingredients: 1 lb beef chuck roast, cubed. 4 cups chicken broth. 2 avocados, diced. 2 limes, juiced. 1 onion, chopped. 3 cloves garlic, minced. 1 jalapeno, seeded and diced. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Place cubed beef, chicken broth, onion, garlic, jalapeno, cumin, chili powder, salt, and pepper in a crockpot. Cover and cook on low for 6-8 hours or until beef is tender. Before serving, stir in diced avocado and lime juice. Garnish with fresh cilantro and additional lime wedges if desired.

These shrimp fajita bowls are a tasty and nutritious meal option packed with flavor. Tender shrimp, sautéed bell peppers, and onions are served over rice and topped with creamy avocado and fresh cilantro.
Ingredients: 1 lb shrimp, peeled and deveined. 2 bell peppers, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 1 cup cooked rice. 1 avocado, sliced. 1 lime, cut into wedges. Fresh cilantro for garnish. Sour cream or Greek yogurt optional.
Instructions: Warm up the olive oil in a big pan over medium-high heat. Slice the onions, bell peppers, and garlic and add them to the pan. For about 5 to 7 minutes, or until the vegetables are soft, cook. Add salt, pepper, chili powder, cumin, and smoked paprika to the shrimp. Move the vegetables to the side of the pan and add the shrimp that has been seasoned. About two to three minutes on each side, cook until the shrimp is pink and opaque. Give cooked rice to each bowl to serve. Mix in shrimp and fajita vegetables on top. Put lime wedges, sliced avocado, and fresh cilantro on top. If you want, you can serve it with Greek yogurt or sour cream. Have fun with your tasty shrimp fajita bowls!
