We love @The Corner in Litchfield. Not only is the food fantastic but the beer selection is awesome, they always have an amazing craft beer selection. Just last weekend we stopped in because they had Sloop's All Day Rose which was fantastic. It's a Berlinerweisse that has red wine added to give it rose characteristics, ummm yes please! It was so delicious but I digress.

We had gone a previous time to have dinner and I ordered their on the bone chicken. It came perfectly cooked on the bone on top of a bed of potatoes, heirloom carrots, peas and a succulent gravy. I knew I had to re-create this bad boy at home.

On the Bone Chicken with Gravy and Vegetables

servings: 5-6

what you’ll need: cutting board, chef knife, high sided skillet, peeler, whisk, wooden spoon and sturdy spatula.

time to craft: 60-80 minutes

2 tbsp. olive oil

1 1/2 lb chicken, bone in

1/2 c. onion, chopped

3 garlic cloves, minced

3 tbsp. butter, separated

4 tbsp. flour, all purpose

4 c. broth, vegetable or chicken

1 1/2 c. carrots, peeled and chopped

1 lb. potatoes, fingerling and chopped

1 1/2 c. peas

Salt/Pepper, to taste

Prep chicken by drying with paper towels and season each side liberally with salt and pepper.

Heat the high sided skillet over medium high heat, add olive oil until it's coated the pan and slightly ripples. Add chicken skin side down. Cook for about 5-8 minutes and flip to the other side and cook for 5-8 minutes more. You want each side to have a nice brown crust. It will not be fully cooked but will finish cooking in the gravy. Remove from pan, set aside.

Lower the temperature to medium, add 2 tbsp. of butter and melt while scraping the brown bits from the pan with the whisk. Add the onions cook for 2-3 minutes. Add the garlic cook for 1-2 minutes more always scraping the bottom of the pan for all that flavor. Add flour and whisk the rue until nicely browned. Turn up the heat to high while you slowly add the stock, continually whisking. Continue to whisk until the broth and rue have completely combined and a simmer is starting. Simmer for 5 minutes, then add the remaining butter and the potatoes, simmer for 10-12 minutes. Add chicken back to the pan with the carrots, peas and cook for 20-25 minutes covered. Season gravy with salt and pepper. Serve and enjoy :)
