#Rihaakuru is obtained through following a simple but time-consuming procedure. The extract is the result of hours of #cooking of tuna in water and salt, while carefully removing the scum (filleyo) that keeps forming. Once the tuna pieces are cooked and ready to eat or store, they will be removed from the water, as well as the bones, heads and fish guts. The pieces of Tuna, so cooked, get eventually processed into Maldive fish. The remaining "fish-soup" (#Garudhiya) is left with Bondi (balls of tuna scraps scraped off the bones), and is kept boiling in low fire until most water evaporates. #Badhige Let's time travel a little to an old #Dhivehi badhige. Brings to mind a #Maldives that a lot of us have only seen in a few vintage photos and rare videos. #Maldivian #cuisine also called Dhivehi cuisine is the cuisine of the Nation of Maldives and of Minicoy, India. The #traditional cuisine of Maldivians is based on three main items and their derivatives: coconuts, fish and starches. Tropical islands fringed by #white sandy #beaches, swaying #tropical palms and surrounded by gin-clear waters teeming with marine life – it also offers some of the most delicious #cuisine in the region. Traditional Maldivian cuisine, also known as #Dhivehicuisine, provides a wonderful variety of tastes and flavors, ranging from crunchy snacks and street foods accompanied by wood-fired chapati bread to complex and deliciously spicy curries. The cuisine of the Maldives is a rich assemblage of traditional flavors with strong influences from its neighboring countries, such as India and Sri Lanka.
