Tried making apple tarte tatin using the apples we picked last Saturday. Turned out not bad. The apples were slightly sour, the pastry was crispy at the bottom while being soft, moist and sweet from soaking in the brown sugar syrup. I say syrup instead of caramel because I didn't caramelise it long enough, as I used brown sugar, it was hard to tell whethee the sugar had caramelised or not. When I saw it was brown enough in the pot, I thought it was done but after adding it to the tart and baking it, it looked light brown, I wanted it to look darker and have a richer caramel taste. Apple tarte taten. Elmalı tart taten. Taten kardeşler yapmakta oldukları tartı yanlışlıkla yaktıklarında ortaya bu güzel tart çıkmış. Yanlışlıkla icat edilmesine rağmen çok hassas ve yapılması zor. Aşağıya yazacağım tarif ile gayet başarılı oldu. Deneyip kendi değişikliklerinizi eklerseniz haber verin. Tarifi: Hamur: 170g un. 100 gram tereyağı. 20 gram şeker. Bir kaç yemek kaşığı buzlu su. Tereyağını küçük küpler halinde kesip buzdolabında soğutun. Ardından un ile karıştırın. Elinizin sıcaklığı ne kadar az temas ederse o kadar iyi. Şekeri de ekleyip. Sert ama bütün bir hamur olana kadar azar azar su ekleyin. Hamur hazır olunca streç filme sarıp 1 saat buzdolabına alın. 23 cm çapında bir tart için bu hamur yeterli. Tatlı: Orta boy 5 elmayı soyun herbirini 6 dilim (dilim sayısı biraz size kalmış) kesin. Çekirdeklerini çıkarın. 23 cm tavaya tereyağı koyun. Fırına girebilen tavanın tabanını bir iki mm kalınlığında yağ ile kaplayın. Üzerine 1.5 su bardağı şeker yayın. 2 tarçın çubuğu ve varsa 2 yıldız anasonu da şekerin üzerine yerleştirin. Elma dilimlerini tavanın önce dış kenarına sonra içine doğru dizerek yerleştirin. Tavayı ocağa alın. Orta ateşte şeker eriyip altın rengi karamel olana kadar pişirin. Ocaktan alın üzerine biraz tarçın serpin. Buzdolabındaki hamuru merdane ile açıp elmaların üzerine serin. Hamurun kenarlarını almaların kenarlarına doğru bir spatula ile iterek düzeltin. 175 derecede ısıtılmış fanlı fırında 20 dakika pişirin. Fırından çıkar çıkmaz bir tabağa ters çevirin ılık servis edin. Not: tava fırından çıkarken çok sıcak olacak. Sapını elinizle tutmayın. Çevirirken yanmayın. Attempting gluten free puff pastry from scratch. Did some math first! Made the dough and butter parts, combined them and got two folds done tonight. The next 4 folds will have to wait a day or so. So far I think it is mostly working? I'm hopeful at least.
