Geographic features including mountains, rivers, forests, and deserts also have a strong effect on the locally available ingredients, considering that the climate of China varies from tropical in the south to subarctic in the northeast. Imperial royal and noble preferences also play a role in the change of Chinese cuisine. Because of imperial expansion, immigration, and trading, ingredients and cooking techniques from other cultures have been integrated into Chinese cuisines over time and Chinese culinary influences have spread worldwide.
There are numerous regional, religious, and ethnic styles of Chinese cuisine found within China and abroad. Chinese cuisine is highly diverse and most frequently categorised into provincial divisions, although these province-level classifications consist of many more styles within themselves. During the Qing dynasty, the most praised Four Great Traditions in Chinese cuisine were Chuan, Lu, Yue, and Huaiyang, representing cuisines of West, North, South, and East China, respectively.[4][5] In 1980, a modern grouping from Chinese journalist Wang Shaoquan's article published in the People's Daily newspaper identified the Eight Cuisines of China as Anhui (徽菜; Huīcài), Guangdong (粵菜; Yuècài), Fujian (閩菜; Mǐncài), Hunan (湘菜; Xiāngcài), Jiangsu (蘇菜; Sūcài), Shandong (魯菜; Lǔcài), Sichuan (川菜; Chuāncài), and Zhejiang (浙菜; Zhècài).[6][5]A Quanjude cook is slicing Peking roast duck. Peking duck is eaten by rolling pieces of duck with scallion, cucumber and sweet bean sauce using steamed pancakes.[7]
Chinese cuisine is deeply intertwined with traditional Chinese medicine, such as in the practise of Chinese food therapy. Color, scent and taste are the three traditional aspects used to describe Chinese food,[8] as well as the meaning, appearance, and nutrition of the food. What is becoming clearer is the colossal and obviously deliberate official blind eye given to potential dangers of glyphosate-based pesticides by regulatory bodies not only in the EU and the USA, but also in China, which today produces more glyphosate than even Monsanto. Since the Monsanto Roundup patent expired, Chinese companies, including Syngenta, Zhejiang Xinan Chemical Industrial Group Company, SinoHarvest, and Anhui Huaxing Chemical Industry Company, have emerged as the world’s major producers of the chemical as well as largest consumers, a not good omen for the future of the legendary Chinese cuisine. Glyphosate is the base chemical component for some 750 different brands of pesticides worldwide, in addition to Monsanto-Bayer’s Roundup. Glyphosate residues have been found in tap water, orange juice, children’s urine, breast milk, chips, snacks, beer, wine, cereals, eggs, oatmeal, wheat products, and most conventional foods tested. It’s everywhere, in brief. Despite the overwhelming evidence, however, EU Commission bureaucrats and the USA EPA continue to ignore prudence in not banning the toxic chemical pending thorough independent investigation over longer time. If I were cynical, I would almost think this continued official support for glyphosate-based herbicides is about more than mere bureaucratic stupidity or ignorance, even more than simply corruption, though that for sure plays a role. The chirping of a forktail swift in the early morning fog is the first call of the day for the people of Anhui, China. Various other birds join into the morning song, the province coming to life, like a well orchestrated play. 
The greenery in the mountains and the hills intertwined with the province signal the beginnings of the warmer months. Spring and summer brought water and much needed sun to the otherwise cold days. And the snow begins to melt, creating streams of clear, running water for wildlife and the people alike. And the need for firewood collection begins to dwindle once more. 
Today was a nice day. With clear blue skies and white fluffy clouds, despite the fog that overtook a hazy morning. As soon as the sun rose, the grogginess seemed to lift from the grounds. And of course, as with most nice days, more people seemed to mill about in their hometowns, spread far and wide from one another. 
With the hills separating the region’s people from one another, communities learned to self-sustain. Their dialect and their traditions, their customs, began to diverge from one another. Although they were all the people of Anhui, each community couldn’t have been more different. 
And in one particularly small village somewhere hidden deep within the hills, this could never have been truer. Made up of small farmers and livestock herders, the people in the village lead a simple life. Street vendors started their day at the crack of dawn, hollering through the semi-busy streets in an attempt to sell their handmade products or local cuisines to the familiar faces of their home. Even a strongly accented Mandarin Chinese was almost nonexistent here; the villagers spoke amongst themselves in a dialect so distinct that no outsider would understand. 
Walking through the streets, Xue Han- later, he gave himself the name Vivian, realizes he doesn’t understand the chatter either. A Chang Sha native dressed in the traditional hanfu of the han people, the young man didn’t quite seem to fit in with the locals. 
The “foreign” man was here in search of someone in particular. 
But that didn’t matter when the people of the village would turn their heads to look at him with every passerby he met. Xue Han merely bows in acknowledgement each time. It was fine, the stares.
Until he’d run into a vendor and struggled to find the words he needed to say to get his point across. 
“Do you know a Miss Liu?” He asks tentatively in his native tongue. His Mandarin is thick and accented with his own dialect. Xueer cringes, unsure if the vendor at his stall would even understand. 
“Who are you?” comes the response in an equally accented voice. But Xueer only catches the first syllable to come from the vendor’s lips. 
Shaking his head, Xueer decides to wave off the man. It would be no use if the chicken tried to talk to the duck. 
He’d just have to find her on his own. Shouldn’t be as hard as it was- the village population was no more than 5,000 people- if even that. The residents here knew one another well. It’s just that Xueer knew no one. 
But for now- perhaps the angel in disguise would simply enjoy his time with the local people. Their day to day lives were so much more… mundane. 
It’s something Xue Han thinks he would have enjoyed.
Rather than bustling streets of cars and high rise buildings that would plague his existence sometime in the not-so-far future. 
After all, the people may disappear. Their loving villages may eventually die. But an angel never left. Or- only ‘left’ behind to watch over what was once was and what will be.
