Spring Vegetable Crustless Quiche
Cut back on carbs but still enjoy a hearty, filling quiche...go crustless. This throws together quickly, is hearty, and will be a new family favorite...economical too. The Knorr Spring Vegetable mix is on the shelf in the soup aisle when youâre shopping. Use kale or spinach or chard or mustard greens or whatever greens - fresh or frozen youâre inspired to use. Give this a whirl and see what you think...
4 eggs, whisked
1 1/2 c. milk
1 - .9 oz. envelope Knorr Spring Vegetable mix
2 c. wiltable greens, chopped into ribbons
1 c. shredded feta or Swiss or Gouda cheese
Preheat oven to 350 degrees. Grease a deep baking dish. In a mixing bowl, stir together eggs, milk and Spring vegetable mix seasoning, set aside. In the baking dish, layer greens then the cheese. Pour the liquid eggs/milk/veg mix over all covering contents. Slip this into the oven baking for 50 min. or so until a knife blade placed into the center comes out clean. Serve with a crisp green salad and melon chunks on the side - mmmmmm.Â
When Iâm not thinking about how to speed through my food prep time, Iâm sewing cotton pocket canvas aprons for my online shop - www.etsy.com/shop/topdrawerthreads .
Or Iâm putting the finishing touches on hand knit hats worked by me from upcycled recycled yarn gleaned from local sources for my other shop - www.etsy.com/shop/topdraweryarns .

Gordon? Gordon dear? Oh ... you're with your girlfriend. Thought you were avoiding me. Hope her meals are okay and nutritionally sound. You know what a delicate constitution you have! Grandma
The scent of 18âł pepperoni and salami pizza with cheese stuffed crust invades Gordons nostrils. He opens the box, the heat creating condensation on Fourâs front window.Â
The cheese is so thick itâs like pulling chewing gum, so heavy itâs sliding off as he brings it to his mouth. Heâs going to get so blocked up scoffing this but it will be soooooo worth it.
He bite in ... a volcanic mix of cheese, tomato sauce, and pepperoni oils slides down his chin... as the call comes in
His chin is burning, he hits the audio only call button with grease covered fingers... Brains is gonna kill him for that...Â
âHey Grandma, â he answers chirpily, âYes, Iâm having a delicious green salad with crumbled feta and some salt and pepper croutons. Mmmmmm... wonderful. Just a quick bite before heading home, will see you soon.â
Closing the connection, he returns his attention to the box of heaven...

Mmmmmm. I love a killer salad. And Watermelon and Feta Salad is just that. Grilled watermelon. Yeah. It totally wants to be grilled. It is soooo good that instead of the polite, âNo. You go ahead. I insist.â people will will avoid eye contact to grab an extra spoonful. The recipe is out of Fire Food: The Ultimate BBQ Cookbook. A big thank you to Quadrille for letting me share the recipe with you! My review of the book is right after the recipe.
If you love it, please come find me again! Or hit that âfollowâ button! đ
Recipes excerpted with permission from Fire Food by Christian Stevenson (DJ BBQ), published by Quadrille May 2018, RRP $22.99 hardcover.
Grilled Watermelon and Feta Salad
I love a salad, especially one with feta! Itâs like a naughty and nice salad all in one. The best salads have cheese, and this recipe also works with grilled halloumi.
serves 4â6
BBQ set-up: Half and half technique
½ watermelon, cut into 2.5cm (1-inch) slices 50g (1 ž oz / 1/3 cup) pine nuts 200g (7oz) feta cheese, cut into chunks Small bunch of mint, leaves picked Small bunch of flat-leaf parsley, leaves picked and roughly chopped 100g (3 ½ oz / ž cup) pitted black olives ½ red onion, very thinly sliced Juice of ½ lime
Remove the rind from your watermelon and grill the slices over the direct heat. Once you have some lovely char from the grill on one side, flip over. I usually grill my watermelon for 3â4 minutes a side.
You want to keep most of the moisture in the flesh, but youâll struggle to get a good char until some of the outer moisture has been cooked off. Allow the watermelon to cool, then cut into cubes, removing as many of the seeds as you can.
Toast the pine nuts in a small dry frying pan (skillet) over the direct heat, until golden.
Grab a big old bowl, chuck in all your ingredients and gently toss. There ya go.
My review of the bookâŚâŚ Fire Food: The Ultimate BBQ Cookbook Author: Christian Stevenson (DJ BBQ) Edition: Hardcover
This is a terrific BBQ book! I have a collection of barbecue and grilling books, and this is a lovely addition. Heâs got nice strong flavors, and there are some dishes and methods that are fun things I hadnât thought of before. There are both grilling and smoking recipes in the book. The author has a whimsical, easy-breezy, high-energy tone.
There are beautiful, inspirational photographs throughout. Itâs a very giftable book with cool, recessed cover lettering, and nice thick pages.
My thoughts and pics of the recipes Iâve tried: 1-2) Zaâatar and Honey Glazed Spatchcock Chicken â p 94. We love spatchcock chicken on the grill. Super moist and it cooks through perfectly. The zaâatar and honey flavor are beautiful. 2-3) Babaganoush â p 140. I never thought of making babaganoush down in the coals! Itâs a total game changer. The smoky flavor is brilliant.
4-5) Grilled Watermelon and Feta Salad â p 162. Oooooh. I think this is my favorite thing in the book. It tastes so special. Itâs the kind of salad that everyone is competitive over, rather that giving the polite, âNo. You go ahead. I insist.â
6) The Perfect Butt â Pulled Pork â p 44. Great pulled pork. I wrapped it in the butcher paper, but skipped the foil til the rest, so it could keep absorbing the smoky flavor. 7-9) Baby Back Ribs with Szechuan Mopping Sauce â p 58. Yummy ribs. The Szechuan peppers are a nice background note here. Itâs not overly spicy at all.
9-10) Breaking the Law! Breaking the Law! Baked Beans â p 155. These are very unusual baked beans. Half of the volume of the dish is vegetables. 9 & 11) Dirty Carrots with Maple Syrup and Cumin â p 139. This is the only one weâre not crazy about. I thought it was too much char, but my fire might have been hotter than his coals.
12) French Toast Grilled Cheese â p 21. Wonderful. Everyone loved this super decadent breakfast. 13) Crab Cake Sandwich with Avocado and Corn Salsa â p 28. Delicious. The recipe makes way more of the tropical salsa than will fit on those burgers, so someone gets a refreshing, light lunch the next day. 14) Smoky, Tangy, Cheesy Meatbally Sub Sandwich from SmokyCheeseBallVille â p 36. Total yeah. My kids loved this. The marinara has a big puttanesca vibe with the garlic, capers and anchovies. This should be planned as a linner, because itâs plenty filling for lunch and dinner.
Some others I have flagged to try: Korean Philly Cheesesteak â p 25 * The Ultimate Cheeseburger â p 77 * Butterflied Wild Venison Haunch in Oyster Sauce â p 88 * Prawn Tacos with Grilled Watermelon Salsa â p 99 * The Perfect Steak â Smacked Ribeye â p 100 * Scallops with Grilled Pineapple and Chorizo â p 114 * Beach Bar Grilled Octopus â p 122 * Dirty Loaded Lobster Rolls â p 128 * Dirty Oyster Taco â p 131 * Hankâs Poutine â p 171
*I received a copy to explore and share my thoughts.

Let battle commence (again)
So well yes here we are middle aged and fat, sound familiar? I'm sure it does. I have been a lifelong dieter; I have memories from as young as 10 years old losing weight over the summer break from school. OF course I then regained that the following term by finding the bakers outside of the school gates and consuming some fine pastry item and a cream cake at least a couple of times a week. Back to the present day I find myself 50lbs over there the BMI scale says I am healthy. I can't say that any of it is muscle so it's not far wrong. I was doing okay until about 18 months ago when I lost the stop button. My blood sugar is borderline diabetic and I find myself oh so sleepy after foods with refined carbohydrates. If that doesn't give me the kick up the arse I don't know what will. Today then I have started the 8 week BSD, I have also been playing with the Weightwatchers plan so I hope to be able to run one alongside the other. This will require not getting hung up on Smart points of individual foods but rather looking at the day overall and that I think is doable. I started this morning with the blueberry and Green tea shake. The verdict? Mmmmmm- doubt it will be a favourite, maybe too many almonds or the Blueberries weren't very sweet. I guess I'll need to experiment with that one. Surprisingly I managed to last until lunchtime but added a wee snack of Cathedral City cheese portions to see me through to lunch. Lunch was the Feta a jewelled stuffed pepper- that was excellent the mint lemon juice and salty feta combination was just lovely. I did add 50g of cottage cheese just to bind it all together.
