杉井酒造　静岡

●杉錦　生酛特別純米　26BY　2500円

使用米山田錦　精米歩合60％　日本酒度＋ 8　酸度2.0　酵母静岡HD-1　一回火入れ　alc15～16やわらかく太いボディの後にしっかりとした酸で締めます。白子、あん肝、ホワイトソース、ウォッシュタイプチーズなど濃厚でまろやかな旨味と合います。

●杉錦　生酛純米　八十八　25BY　2430円

使用米　麹米誉富士、掛米ひとめぼれ　精米歩合麹米70％、掛米90％　日本酒度＋17　酸度2.0　酵母協会701号　一回火入れ　alc13～14

低精白を使い明治初期の酒に近い低アルコールでドライな仕上がりに。醤油と味醂で甘辛く煮た魚、野菜。温度低めの燗で焼き鳥などと合います。

使用米　麹米誉富士　掛米ひとめぼれ　精米歩合70％　日本酒度＋ 5　酸度2.4　酵母アキタコンノ サッカロマイセス・エド　一回火入れ　alc15～16

日本最古の分離酵母で醸した山廃は冷（常温）では酸味の鋭さを熱めに燗をつけると旨味、コクが溢れ出してきます。冷ではロースビーフ、燗で濃い味の焼いたお肉と合います。

Yep, that's my AIDS/Lifecycle 2013 before/after pic.   

I rode last year because I needed to do something drastic to change my life.  The training was a blast.  I loved every second of learning to ride, meeting new people, and becoming part of the AIDS/Lifecycle community.  My friends and family were so incredibly supportive with their praise, their time, their encouragement and their donations.   Everything leading up to the ride was a lovefest. 

The ride itself was the most difficult thing I've ever done in my life.  I've equated it to childbirth on many levels -- complete and utter misery and then at some point you think "hey, I'll do that again!".  

Well, that's where I'm at.  I'm embarking on my second AIDS/Lifecycle ride.  And like most second-timers I'm getting a little bit of a late start on my training, I've drug two new riders into it and somehow I'm utterly confident this year's ride is going to be fun!
