In s4 finale, Carmy indicates that he was aware Adam trying to poach Sydney. So after Carmy makes the change in the partnership agreement, giving the restaurant to Syd and Natalie, what was going to be Carmy’s plan if Sydney had decided to go and work for Adam at his restaurant? He would have just stayed at the Bear then? There is something upsetting to me about the fact that Carmy knew and didn’t say anything this whole time.

Everyone was expecting her to leave to do something better, including Carmy, that's why Unc and Natalie pushed for her to sign the agreement. Carmy knew he was fucking things up and making it harder for her. He quit before she could quit again. He knew she would stay if he wasn't in the way. But what he didn't know is that she would have stayed regardless of if he left.

He didn't confront her after Shapiro called him because it just confirmed to him that him leaving is the right thing for him to do, so that she can stay and not have a reason to leave. He knows she didn't want to go to Shapiro because she idolizes him or wants to learn from him or even likes him. Carmy thought he's the reason she wants to leave, which is partially true, but as we heard Sydney explain to TJ, he's also the main reason she wanted to stay.

Lmao and yes. When the camera panned over to Shapiro to show how much more advanced Carmy was skill-wise, that man was in his whole feelings.

There is something to be said about how adamant Shapiro was to acquire Sydney from Carmy. He's definitely trying to poach her, I didn't believe him for one second when claimed that wasn't his intention.

When he was telling Sydney about being at the restaurant and eating the food, he praises the scallop dish, saying it was new and unlike Carmy. Sydney says they came up with the dish together, but that's just not true. That dish was all Carmy. This season made it painstakingly clear that all the dishes were from Carmy. Sydney lacked a majority of the creative input.

I'm only theorizing at this point, but I think Shapiro knew exactly what type of environment she was working in. He knew that dish was all Carmy and that Sydney would be itching to have a bigger role. That's why, in their lunch talk, he promised her full reign of the kitchen. However she wanted to lead the kitchen, that's how it would be. Sounds way too good to be true for a man that just met her.

Shapiro wants Sydney to spite Carmy. He knows exactly who to poach to get under Carmy's skin.

He could hire any of the crew at Ever to come and be his CDC, someone who he is more familiar with, but he is going out of his way for Sydney, hounding her at the Ever funeral, and pressuring her to give him an answer.

The former chef of Ever poaching Sydney is not just because Sydney’s a great chef, but it’s also probably resentment at Carmy for being better…
