This easy and healthy vegan acorn squash soup with carrots is perfect for a cozy fall or winter meal. It's creamy, flavorful, and packed with nutrients.
Ingredients: 1 medium acorn squash, halved and seeded. 1 tablespoon olive oil. 1 onion, chopped. 2 carrots, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon ground cumin. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. Salt and pepper, to taste. Coconut cream, for garnish optional. Pumpkin seeds, for garnish optional.
Instructions: Preheat oven to 400F 200C. Place acorn squash halves, cut side down, on a baking sheet lined with parchment paper. Roast for 45-50 minutes, or until tender. In a large pot, heat olive oil over medium heat. Add onion, carrots, and garlic. Cook until vegetables are softened, about 5-7 minutes. Scoop out the flesh of the roasted acorn squash and add it to the pot with the vegetables. Discard the skins. Add vegetable broth, cumin, cinnamon, nutmeg, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth, then return to the pot. Taste and adjust seasoning, if necessary. Serve hot, garnished with coconut cream and pumpkin seeds, if desired.

Ingredients: 2 acorn squashes, halved and seeds removed. 1 tablespoon olive oil. 1 onion, diced. 2 stalks celery, diced. 2 carrots, diced. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried sage. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 4 cups cubed vegan cornbread. 1/2 cup vegetable broth. 1/2 cup dried cranberries. 1/2 cup chopped pecans. Fresh parsley, for garnish.
Instructions: Preheat the oven to 400F 200C. Rub the inside of the acorn squash halves with olive oil and sprinkle with salt and pepper. Place them cut side down on a baking sheet lined with parchment paper. Roast for 30-40 minutes, or until tender. In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and carrots. Cook for 5-7 minutes, or until the vegetables are softened. Add the garlic, thyme, sage, salt, and pepper. Cook for an additional 1-2 minutes. Stir in the cubed cornbread, vegetable broth, dried cranberries, and pecans. Cook for 2-3 minutes, or until the cornbread is heated through and the mixture is well combined. Fill each roasted acorn squash half with the stuffing mixture. Return the stuffed squash halves to the oven and bake for an additional 10-15 minutes, or until the tops are lightly browned. Garnish with fresh parsley before serving.

Even though it is considered a winter squash, #AcornSquash belongs to the same species as all summer squashes.
The most common variety comes in a mostly green outer shell, often with a splotch of orange on its side or top. However, varieties, including the Golden Acorn and the White Acorn, offer gardeners and cooks options. This versatile squash also grows in variegated color.

Another great day of traveling and teaching Culinary Students all over the state of Michigan deserves a cup of tea. I pulled this one out to have another green tea option to enjoy. This one is from Cultured Cup called Curled Silver Dragon. While brewing it, I expected a light tea from its color. I was completely fooled. This tea has incredible depth and smoothness. Add in the lovely green malt and floral notes makes this a strong brew to pair with roasted winter squash, sauteed apples and bacon or Asian options (due to the hint of 5 Spice Powder).
