Food and Beverage Safety and Hygiene Courses
As a part of the national qualifications system for the Food and Beverage industry, the WSQ food hygiene course Singapore was launched in the year 2006. This course was designed by the Singaporean government to upgrade the skills of workers employed in the F & B industry. It is a fast-paced course, lasting 6 hours of coaching followed by a 1.5-hour long assessment.
A Statement of Attainment is allotted to the participants that successfully complete the training along with the assessment. This certification will help the trainees fulfill the pre-requisites to operate at a food stall or a shop, in short, an entrance level qualification for food and beverage preparation and handling.
What does the course comprise of?
The WSQ basic food hygiene course entails practicing good personal hygiene, using safe ingredients during food preparation, handling food items safely, storing the food safely, maintaining overall cleanliness in the work environment by cleaning utensils, the equipment being used, storage area and service area.
Once the basic food hygiene course is completed, the trainee will possess the skill set and the knowledge that is required for the food and beverage hygiene and safety industry and he will be able to practically apply this training at his workplace. This training basically prepares the participants in food handling and food preparation in a commercial food preparation environment.
Personal Hygiene
The food hygiene refresher course places emphasis on maintenance of personal hygiene by its participants and the trainers also teach it as a part of the course material. The areas covered in the course are:
Hand washing procedures
Importance of personal hygiene in the industry
Prevention of food borne maladies by maintaining good personal hygiene
Working at a food station only in good health
Environmental public health food regulations
Using only wholesome and safe food ingredients during preparation
Wash and clean the food ingredient as per requirement
To prevent contamination of food, practicing safe defrosting
Preventing cross contamination by separating and labeling meat grinders used for processing pork, mutton, and beef.
Handling high risk food and ready to eat food carefully
Maintaining food hygiene during transportation
Course Assessment
The WSQ food hygiene course comprises of an assessment with a written examination, a practical performance test and the last round is the oral assessment. Once the assessment is successfully completed by a candidate, he will be certified competent for the F & B industry.
Personal hygiene is mandatory for course enrollment such as during the training the participants should have tidy hair, clean fingernails, and attend the course neatly attired. All the individuals who are willing to make a start in the preparation and handling of food such as kitchen managers, chefs, supervisors, sous chefs, kitchen assistants, cooks, food stall assistants or any food and beverage handler who wants to work in a licensed food establishment can enroll for the course.
