Until this week, I had no idea that there was such a Canadian connection with @writerstearswhiskey. First listing at the @lcbo in 2011, Walsh distillers (Bernard and Rosemary Walsh) refer to Niagara on the Lake as a little piece of Ireland in Canada. Bernard (pictured here) has a great sweet tooth, and calls his favourite ice wine from @inniskillinwines a “national treasure”! • This Writers’ Tears Ice Wine Cask Finish collaboration with Inniskillin Wines was actually a product of the *last 17 months*. In January of 2020, they visited @niagara.on.the.lake once again, and throughout the day they selected 12 casks to bring back to Ireland. 75% of all ice wine in Canada is made from thick-skinned gold Vidal grapes, and Inniskillin is no exception. The aged Single Pot Still and aged Single Malt Irish Whiskey (aged and matured in American Oak, Bourbon casks) is finished for 12 months in Icewine Hogshead Casks and is the first Icewine finish of an Irish Whiskey. • It has notes of mango, lychee, and tropical fruits, has the nutty and oak spice elements you would already expect from Writers’ Tears. It isn’t quite as sweet as I would have thought; it’s got a lovely, smooth, rich mouthfeel, and a hint of sweetness. The limited release is of 3,500 bottles in Canada, the US, and at the Celtic Whiskey Shop in Dublin.
