These Healthier Lemon Poppy Seed Muffins are a delicious and lighter version of the classic muffin. Made with whole wheat flour, almond flour, and a burst of lemon flavor, they are perfect for a guilt-free treat.
Ingredients: 1 1/2 cups whole wheat flour. 1/2 cup almond flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 2 tbsp poppy seeds. Zest of 2 lemons. 1/4 cup fresh lemon juice. 1/4 cup unsweetened applesauce. 1/4 cup Greek yogurt. 1/4 cup coconut oil, melted. 2 large eggs. 1 tsp vanilla extract. 1/2 cup almond milk.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine the whole wheat flour, almond flour, granulated sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest. In another bowl, whisk together the lemon juice, applesauce, Greek yogurt, melted coconut oil, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Add almond milk and mix until the batter is smooth. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your healthier lemon poppy seed muffins!

Start your day off right with these tasty and nutritious peanut butter breakfast cookies! These cookies are a great on-the-go breakfast option because they are packed with oats, whole wheat flour, and a hint of chocolate.
Ingredients: 1 cup creamy peanut butter. 1/2 cup honey. 1 teaspoon vanilla extract. 1 cup old-fashioned oats. 1 cup whole wheat flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup chocolate chips. 1/4 cup chopped nuts optional.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put honey, vanilla extract, and peanut butter in a large bowl and mix them together until the mixture is smooth. Whole wheat flour, baking soda, salt, and oats should be added. Mix everything together well. You can add chocolate chips and chopped nuts, if you want. Place spoonfuls of dough on the baking sheet that has been prepared. Use a fork to slightly flatten the dough. The cookies should be baked for 10 to 12 minutes, or until the edges are golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way.

Ingredients: 1 cup oat bran. 1/2 cup whole wheat flour. 1/2 cup all-purpose flour. 1/2 cup brown sugar. 1/2 tsp baking soda. 1 1/2 tsp baking powder. 1/2 tsp salt. 1/2 tsp cinnamon. 1/4 cup unsweetened applesauce. 1/4 cup vegetable oil. 1/2 cup plain yogurt. 1/2 cup milk. 1 egg. 1 tsp vanilla extract. 1/2 cup raisins optional. 1/4 cup chopped nuts optional.
Instructions: Turn on your oven and heat it up to 375F 190C. Put oat bran, all-purpose flour, whole wheat flour, brown sugar, baking soda, baking powder, salt, and cinnamon in a bowl. Add the vegetable oil, yogurt, milk, egg, and vanilla extract to a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. If you want, you can fold in chopped nuts and raisins. You can grease a muffin tin or use muffin liners. Fill each muffin cup about two thirds of the way to the top with batter. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. First, let the muffins cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Have fun with your tasty oat bran muffins!
