El Verde-One Year Later
August 24 marks the one year anniversary of our move to Belize. I really can't believe how fast that year passed. It has been a few months since my last post, and we have been quite busy.
The last few months of the school year, I had after school classes for the Santa Familia students nearly everyday, and we continued those classes through the summer, which meant I became a taxi service of sorts, too. Many of the students would have to walk or ride their bikes to our classes, and that is a little tough to do when carrying a guitar or violin or recorder and music, plus some of the students watch young siblings during the summer holiday, and the little ones had to come with them. Consequently, I set out between 1:00 and 1:15 everyday to pick the students up, teach, and then see them home around 3 PM.
We have guitar class, recorder class, crochet class, and violin group.

During the summer holidays, each Friday afternoon, the girls come to our house and cook. I have learned to make tortillas from scratch and have taught them how to make gumbo. I think they liked making spaghetti the most. The best part-they clean everything up!!
Four of the girls came for a sleepover. Not much sleep happened. None of the girls had spent the night away from home before, so they all ended up in bed with me (Matt was visiting NOLA). About 1 AM, it seemed they were all asleep, so I went to try to get a few winks in the guest room. At 4 AM-yes, just 3 hours after they went to sleep, they were all standing at the foot of the bed I was in. One of the girls woke up and saw I was gone, so she woke everyone else up to help find me. I am sure we all went to bed early that evening!
A year after we moved into our house here, the grass is green, the plants are growing, and we have almost finished our furnishings.
I thought we needed a little touch of home so I painted the table on our back porch.
I had to cage all of my fruit trees in the back yard to protect them from the agouti and iguanas that were eating them at night. My papaya has blooms already. It is so wonderful to witness the abundance of the Lord's gifts in nature!
We also had a monkey sighting a few weeks ago. On our way home from Mass, we saw this strange creature crossing the road a bit in front of us. Matt and I looked at one another and said in unison, "That was a monkey"! Though we have our routines now and know what to expect for the most part, our eyes are still open for the next wonderful surprise.

Clean Slate
Here I am, laying cozy in my bed with my wonderful big, fluffy duvet on top of me (my blanky).
I’ve been feeling this “Clean Slate” start happening back in mid-February of this year (2020). Who know that the world was also joining me with a Clean Slate.
Covid19 has taken place until the end of July, officially here in LA. & boy, do I tell ya... it’s pretty real out here with them face masks. I now carry one in my car & purse before heading out because literally, I mean literally, everywhere you go that’s based in LA, WILL NOT let you in without a mask.
Anywho - the real reason I am typing this is, because lucky for you guys, I am officially documenting how I am losing 35lbs of fat & keeping it off for good.
But before I begin,
Let me tell you this: I gained 15 lbs in 1.5 weeks.
How?
I didn’t stop eating. I gorged until i’d get sick, thinking “I know how to lose weight, done it before - do it again! & screw it, it’s quarantine.....:)”
My body starting swelling, my vision was getting blurred, my mind was foggy.. finally, this past Sunday, I lost all control. I fell into the hole.. of binge eating relapse. & I wen’t full out, rock bottom. And sat there. & faced everything that I just did to myself; mind, body & soul. It was a time-out. The only good thing I did during this purge was celery juice everyday! Which is honestly why I think I haven’t exploded yet. Like seriously...
Coming Monday, I chose to do a juice cleanse; because caloric wise, I already had ample. Technically my body doesn’t need real physical food for at least 2-3 days.. because I have enough energy (aka carbs {macronutrient} & calories {protein, fat & carbs}).
I began Monday morning with a fresh glass of celery juice & walked/meditated around my neighborhood. Then I made my favorite fat-burning detox drink that I found 5 years ago & use till this day: Grapefruit, Cucumber & Oranges.
Later, after being on my feet all day, I drank a Whey Protein Shake by 1UP Nutrition, mixed with a quarter cup of raw goats milk & water. This way, I was able to retain muscle mass without eating food. & the Goat’s Milk macronutrient content is Fat, Protein & no carbs.. which is like amazing. Because currently my goal is to burn fat, maintain as much muscle mass as possible & get lean.. with the ultimate goal of being shredded (with the hopes of quarantine being over by then -- Hello mansion & rooftop pool parties). In order to achieve my goal I have to do my best to drink as much protein & fat as possible, with very little carbs. Carbohydrates are energy, & if not being used, will store in the body as fat, as a survival mechanism to be used later if the body were to be malnourished.
I also sipped on regular water throughout the day. By 8pm I had so much energy. It was nuts, but by 10pm I was so hungry. So I made 2 scrambled eggs. (Fat, protein & a little bit of carbs) as a bedtime snack. But I woke up in the middle of the night like a fatty - gorged down two protein bars that are very high in carbs & are not even mine.. they were my roommates.. and I ate them... including her pineapple & papaya dried fruit..the whole fricken bag. Gone. Scarffed down my throat. Swalled. Gulp.
Today, I began my day drinking Zhi Cell & a raw egg yolk.
Ran 1 mile to pick up coffee for my morning walk & omg. Was I dying. Today I felt all the weight on me - a feeling I haven’t had in YEARS. Lately I have also noticed that my circulation isn’t the greatest. My toes and fingertips become easily numb and my knees hurt..
I ordered a Rose Coffee; Light Cream, Sweet Sativia & Hot.
It was so gross.
If I had it cold, on the rocks, it would have tasted fine. Or adding Heavy Cream since it was hot.. but I am too cheap to order iced coffee (did you know you get way more coffee if you always get it hot?) & I am currently too fat for indulgence of silky, beautiful Heavy Cream. Ugh, being skinny always feels so much better than what anything can ever taste like!
Drank water, had my celery juice.
Insta-Carted a quarter of Wild Caught Salmon because A) I am about to begin menstruating; Salmon has all the nutrients & minerals a females body loses & must replenish in order to have a smooth week.
& B) it’s high in Protein & Fat, low carbs.
Since I still had an egg-white left, I cooked it scrambled to pair with the Salmon. Yummy!
After I realized I ran out of celery & already made an instacart order, I panicked because now I had to come up with another $35 worth of groceries in order for Insta-Cart to deliver... Which I needed because my car isn’t working atm & going to grocery stores is like waiting in line to age 50 years.
To make myself feel better & take the edge off, I dove into one of the protein bars that my roommate has (I did replace the two that I ate last night.. but I also got myself ONE just because I knew I would want to eat hers -- there’s something about me wanting to eat other’s people food btw...its a little disturbing... or is it just me?)
Except... when I took the bite of the bar... I was full. It didn’t hit like it generally does. I was content.
Then I went for a walk and filled an entire glass jar of celery juice, which I enjoyed on my walk. Afterwards, I continued sipping water through out the day. & prepared my juices for tomorrow.

Corona Chronicles IV and V
Two in one blogs are an indication that time has started to blur. It takes me a couple of seconds to remember what day it is. I also feel slightly unmotivated to blog because I am not sure anyone reads these and I actually had to ask a friend to read my latest posts to see if these were any good. But I decided that I should do it for me.
Otherwise, a routine and the sense of normalcy has started to kick in. Yesterday I sat at the desk doing work for around 6 hours with a couple of water and bathroom breaks in between. I managed to finish a 2-hour ethics and harassment training for my employers and I know now what the Clery Act is and I would know how to file a Title IX case if it ever came to that. So that’s work done! I still have to do my taxes!!
In the evening yesterday, we ordered Mexican food and started watching Netflix’s latest offering: The Circle. The show has some really interesting characters trying to make it to the end of an experiment where people are eliminated based on interactions between each other through social media. These characters are in isolation so it definitely mimics our current state. This is indeed the time to watch shows about social experiments about isolation. The show Love is Blind is also pretty amazing. Today began with an hour-and-half-long group work out session. We began with the first fitness test in something called insanity workout. The bald instructor keeps saying “boom boom,” so I have decided to affectionately name him uncle Boom Boom. I was almost going to faint at some point in the middle of our fitness/cardio training so I am utterly out of shape. I haven’t swam in 3 weeks now. Then we moved on to pilates with a cheery lady who I haven’t had the chance to name yet. But she can talk non-stop while doing some pretty intense work-outs. I aspire to be like her. We ended with some self care yoga that left us feeling warm and fuzzy. As my roommate says, we still might have 2 years worth of pent up energy that needs to be spent. So the workouts will continue. Grooming in times of Corona My scratchy throat is so much better; my stomach is also fine. I think it might have just been a case of not being conscientious about what I was eating. I am too scared to drink coffee. I have been eating more fruits. Although, a part of me is scared that I will soon run out of papayas and I definitely do not want to go out to get some more. But eating more fruits is good for the skin. Speaking of which, I have not been great at maintaining a skincare routine since my mid twenties. I know how to but I haven’t been regular. A part of the problem is the fact that I don’t have the usual tools: surprisingly, I don’t have a mud face pack, aloe vera gel or rose water (things I always had at hand in my 20s). I ordered a vitamin C serum, some tea tree oil, a face pack and a cleansing brush on amazon to start a routine. There is no question of going swimming or to the gym but I’ll keep my legs smooth and shaven for myself, thank you very much. I plan to tint my hair with some henna that I bought ages ago. I’ll crack an egg in there, add some black tea and some coconut oil. The last time I did this hair routine, my hair was glowing.
Grooming in the time of social isolation is important because it is a reminder that we must take care of ourselves, for ourselves. It doesn’t matter if we can’t show off our silky hair and our painted nails to the world. We do, however, have to live with ourselves and it definitely helps if we look nice.

Japanese Flu Vaccine Effective Against Coronavirus The Japanese-developed drug, to fight the latest strain of the influenza virus, Favipiravir or Avigan, has proved to be effective against a milder case of Covid-19 according to Chinese medical personnel. They say that the drug doesn’t do much to the more severe symptoms but the fact that it can be effective against milder symptoms is a welcome news. I know retro viruses and corona viruses are different but given that retroviral drugs have been used to “cure” something as tough as HIV, I wonder if there’s something about using these on corona viruses. I wonder if the West is not taking seriously the fact that Indian doctors are very likely to be able to treat patients with Covid-19. This is not coming from a sense of pride over South Asian know-how but from the experience of seeing the superiority of Indian medical personnel more generally from having lived in different countries in the course of my life so far. Do not take Ibuprofen if you have Covid-19 symptoms Apparently, Ibuprofen is not the drug to take to relieve fever or pain symptoms related to Covid-19. The advice in the public sphere came from the French health minister, Olivier Véran who instructed everyone to take acetaminophen instead. NSAIDs apparently made symptoms worse. From the different things I’ve been reading, it seems like this disease has something to do with the inflammation-oxidation-immune systems in our body: which is pretty much every infection but if doctors could figure out the specificty of the mode through which this virus effects these interconnected systems, they could have the answer to what to do. Of course, all of this will take time. For now, I won’t take my favourite painkiller: Flexon—a beautiful cocktail of paracetamol and ibuprofen, if I feel feverish or feel pain. The Sky is Falling: Says a NY Doctor A New York doctor wrote that she might sound alarmist but the case is worrying and as a medical personnel who sees life and death situations everyday, this moment is particularly panic-inducing. She says that she is not confident about the medical profession and the infrastructure to be able to take on the surge capacity of this pandemic. She says that there will in two weeks arise a situation where doctors here in the US will have to make life or death judgements. Her insistence that we must be careful is important. SAS training Update.
What’s good about papaya? Everything. I love eating papaya and had been eating it almost everyday. Anyways, today is my SAS studying session. I am also juggling another class. Have to self discipline myself, focused, and work towards my goal. Its not going to be easy. I am in Unit 4 for SAS Programming: Essentials and so far stuck on what I am suppose to do. I have to score 90% or higher with Capella’s exam in order for Capella to pay for my SAS certification exam. I am also juggling a full time job and anticipating on big things happening for me in 2020. Retaining information while studying SAS isn’t easy to be admitting it. I had prior experience (with little knowledge still) of JavaFX, Python, and R. Something I noticed while learning how to use the software system for coding is the need to type down everything exactly how it is. With computers, computers do not speak the human language. We as humans would need to type down exactly how it is in technical terms so the software can understand it. Spending hours understanding, trial and error, and putting this information and retaining it is super important since I want this certification exam paid for. Again discipline isn’t easy but I will have to follow through.

When Hunk gets homesick, he tries to recreate his mother’s banana cake, but it’s not at all turning out the way he planned. What is it that made his mom’s cooking so special? Is there anything Pidge can do to help?

Blegh.
Hunk couldn’t stop himself from spitting up the food into his napkin. Despite his best efforts, he didn’t understand what was going wrong. Banana cake, completely devoid of any alien ingredients, shouldn’t have been difficult to make. The three full baking pans sitting on his kitchen counter proved otherwise. If anyone took a taste from a pan at random, they would most likely comment on the tastiness of the dish. But it wasn’t good enough for Hunk.
He tried everything. Normally, he would cook by eyeballing his measurements, but it came out wrong. He then tried following the recipe to the T, modifying it by using alternate ingredients, and even checking the expiration dates on the packaging. The cakes just didn’t taste the way his mother used to make them.
It was the middle of the night, and all he wanted was to indulge himself in a comforting snack. He was in the middle of planning his fourth attempt -- substituting papaya for banana -- when a woosh from the door interrupted his concentration.
“You couldn’t sleep either, huh?” Pidge stepped into the kitchen and grabbed a plastic cup from the cabinet.
“Kinda,” Hunk said. He untied his apron and tossed it onto the counter. “As soon as I got into bed, a little homesickness hit me. I thought that whipping out one of my family recipes would help me feel better. It’s not really working the way I planned, though.” Defeated, he sank into a nearby chair. “What about you? What kept you up?”
The smaller paladin began filling her cup with a bit of water. “I actually went to bed a few hours ago, but then I woke up and couldn’t get back to sleep.” She finished the drink in a few gulps. “I was thinking of getting some work done, but figured that my mind needed just as much rest as my body. I started wandering around and heard something happening in the cafeteria. Now, here we are.” Pidge pointed at the counter, and with Hunk’s nod of approval, hopped up to sit on it.
“Well, at least your brain gets to take a break,” Hunk said. “I’m overworking mine just trying to figure this stuff out.”
“Hmm… Not that I doubt your culinary skills, but maybe you could use another set of eyes?” Pidge picked up a whisk and scrutinized it as if it were an ancient tool unearthed from an archaeological dig. “Whenever something isn’t working out for me, I always ask Matt or Dad for help.” She took a look around at the used bowls and utensils.
As far as Hunk knew, he had nothing to lose. He shrugged his shoulders and playfully smirked. “Sure, why not? Couldn’t hurt to try!”
In a surprisingly quick agreement for sleep-deprived teenagers, they set to work.
Pidge’s first thought was to wonder why Hunk didn’t just inject banana bits into a loaf of bread. She then assumed that there was no difference between banana bread and banana cake. At this point, Hunk decided to give her simpler tasks like mixing and measuring. It wouldn’t be until later when Pidge would admit that her only successful cooking experience amounted to boiling a pot of water.
They read the recipe together, both taking their time and keeping a serious attitude. Every action one person made was announced out loud for the other to verify that it was correct. Pidge was disappointed that she couldn’t be of more help, but the repeating motions of her tasks put her in a meditative state. Hunk was as present as ever, allowing himself to be vulnerable by again following the preparation instructions exactly as they were written.
More than two hours later, the frosted cake was chilling on a shelf in the walk-in refrigerator. It would take at least another half an hour for the frosting to set.
Hunk wiped his brow with the back of his hand. “Thanks for helping me out! I really -- geez, you look exhausted.”
The excitement from baking had finally subsided, and Pidge’s fatigue punctuated its presence with a yawn.
“You can head to bed if you want,” Hunk assured, “I’ll let you know how it turns out.”
In response, she hastily shook her head. “No, I’ll wait with you!” she yelped. “I’m a little worn down, but I wanna know how it tastes myself, while it’s still fresh. Besides, we still have to clean up this mess,” she said motioning to the counters. And so they did.
Their area of the IGF Atlas, aside from the idle beeping and occasional personnel walking through the hallways, was relatively still. The peacefulness was a stark contrast from the constant activity that they normally encountered when everyone else was awake. It was refreshing, to say the least.
“You know,” Pidge started, “I used to help my mom bake stuff when I was little, but I had no idea that it could be so physically taxing. And I know you’ve been doing food stuff since forever.” She began scraping off excess batter from the sides of a large mixing bowl. “What made you want to learn how to cook when you were so little?”
Hunk occupied himself with dividing his failed attempts into single-serving pieces for the crew. “I don’t know, there were a lot of reasons,” he shrugged. “You already know how much I love my family. When I was little, I wanted to get involved with the grown ups, and it just so happened that the thing they did most often was cook.”
“It’s important to you, and you never gave up on it,” Pidge mused. “If you were so invested in cooking, why didn’t you focus on becoming a chef? What made you go to the Garrison?”
The boy chuckled at her. “I was like anyone else living in the modern world -- tech was a part of everyday life. Being the curious guy I was, I wanted to learn more,” Hunk stated matter-of-factly. “It was fun to show kids my age that I was smart, and then I kind of just got addicted to building up the knowledge.” He paused to think as he carefully put the pieces of cake into sealed containers.
“As fun and challenging as engineering is, sometimes it can feel too constricting. Like when you add two and two, it has to be four; there’s no other option,” he said as he put the containers away. “Cooking is my escape from that. I can treat recipes as guidelines instead of clear-cut rules. I’m allowed to tweak ingredients and do whatever I want. It’s a total game changer that lets me cater to specific tastes.” Hunk walked over and placed the now empty baking pans in the dishwasher. “I can make things the way people like.”
“The way people like, huh?” Pidge contemplated his words as she added cutlery to the load. “In that case,” she muttered, “what do you like about your cooking?”
Hunk’s face grew warm, and he wasn’t sure why. “Me? Well...” He moved to sit at the nearest cafeteria table and rubbed his arm. “If I had to pick one thing, I’d say that I like when my cooking can make people feel like they’re home, wherever they are. As long as people are happy when they eat my food, then I can be happy too.”
Pidge plopped next to him and straddled the metal bench. “Yeah?”
“Yup, that’s why I wanted to make this cake.” Hunk placed his arms on the table and rested his head on top of them. “It reminds me a lot of the happy times I spent with my family. Gosh, I miss them so much, you have no idea--”
He immediately bit his tongue. The apology fumbled to escape his mouth as quickly as possible. “I’m so sorry, I forgot! I have no right to complain, you’ve been through so much with your family, even before we met, and I--”
“Hey, hey!” Pidge smiled and waved her hand dismissively. “Don’t worry about it! That’s all over now, so it’s okay.” She used the nail of her thumb to trace the bench’s tiny nooks. “It was a horrible thing to experience, not knowing where Matt and Dad were, or what could have happened to them. I missed them so much, and my mom…” Possessed with sudden conviction, she looked up and said, “But if I knew that this was where we’d end up, I wouldn’t change that experience for anything.” She returned her attention to the bench after giving him a firm nod. “I’m happy that all that bad stuff brought me here, to this very moment.”
Hunk lifted his head to look back at her. She was smiling.
“And besides,” she reminded with a nudge, “I couldn’t have found my family without the help of my new family.”
The two beamed and bumped fists.
Hunk couldn’t help himself from chuckling. “Very true.”
“I mean, look at us,” Pidge motioned between them. “You and I can be really different at times, but at the core, we’re the same. I picked up an interest in tech for the same reason that you picked up cooking -- it made me feel connected to my family. My relationship with computers and machinery helped me get closer to my brother… It even helped me get closer to you…”
She wasn’t sure what made her do it, but Pidge closed her eyes, leaned forward, and rested her forehead on Hunk’s upper arm. “It’s been ages since we had a chance to talk like this. Outside of my family, you’ve always been the easiest person for me to talk to, even when we were Garrison newbies. I never really need to think about what to say or how I’m going to say it… It all might have just been a coincidence, but I’m glad engineering brought us together.”
“Me too,” he sighed serenely. “I always say that cooking brings people together, but technology was able to do that for the two of us.”
A few moments passed, with the pair simply enjoying each other’s company.
The older teen feared that his heart could be heard on the other side of the galaxy. He wondered if she could hear it too.
The other gently took off the glasses dangling from her ears and pocketed them. She could’ve fallen asleep that way, with how comfortable and safe it felt.
But neither of them were brave enough to move further or closer. They didn’t want it to end. This was a bubble of nirvana in the middle of a war.
Regrettably, they couldn’t stay that way forever. Pidge was the first to break the peace. “This… This was really nice.”
“Yeah…” Hunk nodded. “It felt good to make something with you, without any interruptions or disagreements.”
“Can’t help it,” she shrugged. “That’s just what happens when you work with someone who even considers single-modulation.”
“Oh shut up!”
The pair had to quiet their laughter in consideration of those who were asleep, which accounted for most of the crew. Unfortunately, the giggles had already grabbed hold of them. The more they tried to stifle the noise, the harder it got. Inside the cafeteria, their tittering crescendoed into outrageous howling. For no reason, cackles spurred on even more cackles, and their hilarity bounced off of everything in the cafeteria, fully enveloping them. Bits of their mirth managed to escape the closed doors, but thankfully, at the volume of whispers.
Their laughter was disrupted by an abrupt beeping. The timer signaled that the cake was ready to be served. An ominous mood was suddenly born from the soft, high-pitched cries. The procession to the refrigerator and back again was precarious -- aside from their footsteps, silence thickened the air.
Carefully cutting a square piece for herself, Pidge sampled their creation. Much to Hunk’s dismay, she gagged. “DSH ISH DUHDSHISH!”
“I knew it!” he cried out. The apron he had always pridefully adorned was taken off, crumpled up, and thrown to the floor. “I can’t do it! This is the one thing I miss most besides my family, and now it’s even worse than tasting different -- it tastes disgusting!”
Once Pidge’s aggressive coughing had been reduced to throat clearing, she grinned and cut out a slice five times the size of her original serving. “I guess that’s what I get for trying to talk and eat at the same time, but man oh man! I said, this is delicious!” She took a few gulps of water to wash out any offending crumbs that remained. “Your mom is a genius, and you’re incredible! I can’t believe we made this together!”
Hunk raised his brow at the latest creation, unsure of whether or not to grant it his trust. Seeing Pidge unashamedly eating nearly a third of the original cake allowed him to give it a chance. When he took his first bite, Hunk could hear the sizzle of sapasui and the cacophony of his family’s laughter. Where he held his fork, he felt the smooth taro leaves used for Uncle Filo’s pork lau lau. The euphoria embraced him the way his mother did when he first cooked a meal without her help.
It tasted like home.

“Please tell me what it is.”
“I don’t know what you’re talking about.”
The next day, Hunk’s face was practically pressed to the screen of his tablet; his supplementary gesticulations were frantic. “C’mon mom, you can’t hold out on me forever. I know you! You must’ve purposely left something out, like a specific method or a secret ingredient, in case our family recipes fell into the wrong hands.” With his fingers, he drew an X over his chest. “I promise -- I won’t write it down, and I won’t tell anyone, but I need to know!”
“First of all,” she said, “those recipes are for food that’s meant to be shared, Hunk. And I swear, I didn’t leave anything out! In fact, I added as much detail as possible so that you could make it exactly as I do.” She frowned, unsure of how to remedy the issue.
Hunk only groaned in response. “Moooom, I told you. Following the recipe, including exact measurements, was one of the first things that I did. And it didn’t come out right at all!”
Hunk’s mother closed her eyes in thought, then jabbed her finger accusingly. “You didn’t accidentally confuse milliliters and liters again, did you?”
“No mom, I didn’t. I haven’t messed up like that since I was a kid!” Hunk sighed. “Besides, I couldn’t have made any mistakes this time because Pidge was here to help me. She double-checked everything.” He threw up his hands in defeat and slumped in his chair. “Whatever, maybe it was just a fluke. No one in the universe makes banana cake like you can.”
His mother let out a short giggle at the compliment. “Maybe so. I really do wish I could help you out, honey. I honestly haven’t made banana cake since the last time I saw you.”
“Wait, what!? How is that possible? You love baking it all the time. Why would you stop?”
“I don’t know! I never noticed.” She nonchalantly scratched her chin with a finger. “Most of the time, I just saved it for you because it felt easier to put together when I knew you’d be there to enjoy it... Cooking isn’t the same when you’re just doing it for yourself, you know? It made me feel better, knowing that the one I loved the most was smiling because of my labor.” Nostalgia washed over her. “I remember ever since you were little, and I’d be exhausted after coming home from work, but when I knew how happy the cake made you, it gave me some kind of hidden strength. I guess you could say that it was like your smiles helped my cooking taste better.” She flashed her son a grin. “Gosh, that reminds me, remember that one time when you -- Hunk wait, where are you going!?”
But Hunk had already bolted to find Pidge. He wondered if she liked cannolis.

Free Radicals and Antioxidants….What’s It All About? What they are and the damage that they do. Scientists have found that the body forms unstable oxygen molecules, called free radicals. Every cell in our body produces tens of thousands of free radical molecules each day. To get technical, for a moment, a free radical is basically an atom with an odd number of electrons in its outer ring. Since electrons have a very strong tendency to exist in a paired rather than an unpaired state, free radicals indiscriminately pick up electrons from other atoms, which in turn convert those other atoms into secondary free radicals, thus setting up a chain reaction, which can cause substantial biological damage. This, in short, is bad. There are also many kinds of free radicals, which we are exposed to everyday, for example, pollution, radiation, cigarette smoke and herbicides. But, here is the good news. Antioxidants come to the rescue when we eat whole, healthy natural, unprocessed foods. Taking what we have said about how free radicals comes into being, we can now say that when you provide antioxidants to your body, you are altering the free radicals and bringing them back to a stable state. This happens because antioxidants donate their electrons to the free radicals, which neutralizes them and prevents them from causing harm. Bottom line, taking in antioxidants regularly is important to lessen the risk of so many diseases caused by free radicals circulating within your body including cancer, atherosclerosis, inflammatory joint disease, asthma, diabetes, senile dementia and degenerative eye disease, just to name a few. How do I get my daily dose of antioxidants? Many antioxidants are naturally found in whole foods and the best way to take antioxidants is through clean eating and eating healthy every day. So, which antioxidants are naturally found in which foods? Here are 5 known antioxidants, what they do and which foods are a source of this essential counter-balance to damaging free radicals. 1. Vitamin E. Vitamin E is an antioxidant vitamin involved in the metabolism of all cells. It protects vitamin A and essential fatty acids from oxidation in the body cells and prevents breakdown of body tissues. Beta-carotene is a precursor to vitamin A. It is present in liver, egg yolk, milk, butter, spinach, carrots, squash, broccoli, yams, tomato, cantaloupe, peaches, and grains. 4. Coenzyme Q10. CoQ10 boosts energy, enhances the immune system, and acts as an antioxidant. A growing body of research suggests that coenzyme Q10 may help prevent or treat some of the following conditions: heart disease, high blood pressure, high cholesterol, diabetes, and others. 10 Tips For Healthy Skin

1. Drink Water
Drinking water may not directly impact your skin’s hydration levels, but it does benefit your largest organ indirectly. Your body requires proper hydration to carry out key functions that support healthy skin. When hydrated, it can move along beneficial fluids more effectively and flush unwanted toxins, helping to minimize inflammation and support your skin’s moisture barrier. Water is also essential to the production of structural proteins like collagen and elastin that keep your skin strong, plump and elastic. So, while eight glasses of water a day may not be the miracle cure you’re looking for, it does help you maintain a healthy, youthful looking complexion.
There are several ways to ensure your body is getting the hydration it needs. In addition to drinking water, you can incorporate water-rich foods into your daily diet. Foods like cucumber, tomatoes, watermelon and strawberries are more than 90% water, making them excellent sources of hydration. Another great pick: celery. It’s no secret that antioxidants are skin care superstars. But, what do they really do? In short: Antioxidants neutralize and protect the body from free radicals. Free radicals are unstable and highly reactive molecules that come from a variety of sources, including air pollutants, chemicals, UV rays and cigarette smoke. These atoms are missing an electron and, in an effort to stabilize, seek out other molecules to bond to. If this continues to happen, it triggers oxidative stress which plays a role in premature aging of the skin.
Antioxidants are naturally occurring vitamins and minerals that fight free radicals by donating an electron, thereby reducing their reactivity and protecting the skin from damage. Your body produces antioxidants naturally, but you can also find them in everyday foods like berries and leafy greens, as well as surprising sources like coffee and popcorn. Here are some common antioxidants that are beneficial for your skin and the foods they can be found in:
Vitamin C: Most fruits and vegetables, especially berries, oranges and bell peppers
Vitamin A: Milk, butter and eggs
Vitamin E: Nuts, seeds and leafy greens
Beta-carotene: Brightly colored fruits and vegetables like carrots, mangoes and spinach
Lycopene: Red and pink fruits and vegetables like watermelon and tomatoes
Lutein: Leafy greens, corn, papaya and oranges
Anthocyanin: Purple-colored foods like blueberries, pomegranates and beets

3. Embrace Healthy Fats
Other key components of healthy skin are essential fatty acids (EFAs) like omega-3 (linolenic acid) and omega-6 (linoleic acid). These healthy fats serve as the building blocks of healthy cell membranes and are an integral component of the skin’s moisture barrier. In addition to helping the skin retain moisture and absorb beneficial vitamins and minerals, a healthy lipid barrier keeps out irritants that can cause dryness and inflammation.
Unlike antioxidants, EFAs cannot be synthesized by the body and must be sourced from your diet or topical skin care. Here are some sources of these beneficial fats:
Omega-3: Salmon, mackerel, sardines, flaxseeds, chia seeds, walnuts, eggs
Omega-6: Soybean oil, walnuts, sunflower seeds, almonds, cashews
A non-essential fatty acid (“non-essential” in that your body can produce it on its own) is omega-9 (oleic acid). These highly occlusive oils are particularly beneficial for dry skin due to their ability to seal in moisture and soften skin. Sources of omega-9 include extra virgin olive oil, rosehip oil, avocados, nuts and sesame oil.
4. Limit Sun Exposure
One of the greatest threats to healthy skin is sun exposure. UV rays are the prime cause of melanoma, which the Skin Cancer Foundation cites as the most common – and most dangerous – form of skin cancer. The American Cancer Society predicts that in 2019 alone, 96,480 new cases of melanoma will be diagnosed in the United States. The course of action to minimize your risk of developing melanoma is to protect yourself from exposure to UV rays: Seek shade, apply SPF and wear protective clothing.
Sun exposure also contributes to premature skin aging. Eminence Organics President Boldijarre Koronczay says: “UVA rays destroy collagen, contribute to a lack of elasticity and tone and cause thicker looking skin.” Sun damage can cause the skin to take on a leathery appearance, punctuated by the appearance of deep lines and wrinkles. Over time, age and liver spots also emerge due to sun damage that has accumulated over many years of exposure. In addition to protecting your skin with SPF, incorporate high quality after-care products into your routine to improve your chances of minimizing damage.
5. Curb Your Sugar Intake
Sugar is one of the worst offenders for aging your skin. Remember free radicals? In a process called glycation, sugar bonds with proteins to produce those same unstable molecules. Free radicals not only destroy collagen and elastin (structural proteins that keep your skin strong and supple) but also prevent your body from producing more. Without these essential building blocks, your skin loses its strength and elasticity, and fine lines and wrinkles begin to set in.
If you can’t fathom striking sweets from your diet, try swapping naughty for natural. 6. Limit Stress
From accelerating the aging process to increasing sensitivity and causing flare-ups, stress has an unfortunate way of showing up right where you don’t want it: on your skin. One way stress impacts your skin is by triggering the release of cortisol (aptly called the “stress hormone”). High cortisol levels accelerate the aging process by breaking down collagen and elastin; they also signal your skin to produce more oil, contributing to the development of acne. During times of stress, your body also releases inflammatory chemicals like interleukins as part of its fight or flight response. While inflammation is necessary to protect your health, it can exacerbate already uncomfortable skin conditions.
Breathe deeper. Take time to notice your breath. When the breath is shallow, it indicates the body is in contraction and tense.
A great way to limit stress is to take pause. Genieve suggests beginning your day with grounding exercises like deep breathing and meditation: “Breathe deeper. Take time to notice your breath. Take time to notice your breath, increase the length of the inhale and exhale and watch how your body relaxes.” Betina also touts the benefits of a meditative practice: “A newer thing I took up just two years ago was meditation – it has been such a game changer for me. 7. Exercise Regularly
Regular exercise can do wonders for maintaining and improving the health of your skin. A sweaty workout raises your heart rate and increases blood circulation, which is necessary to deliver oxygen and essential vitamins and nutrients to your cells. Exercising regularly can also counteract the aging process by reducing cortisol levels and activating the release of healing endorphins. Genieve says: “Moving your body is medicine. It allows for detoxification by flushing all of the organs, it increases respiration, it lubricates joints and strengthens muscles. Breathing and moving can help balance hormones and move waste stagnating in the intestines. All of this leads to healthier, happier skin.”
One thing to keep in mind: Always cleanse your skin after a workout. Sweating is your skin’s natural way of detoxing but without a proper wash, any toxins that have been released can seep back into your pores. Allow yourself extra time post-workout to rinse sweat and debris from your skin so it can experience the full benefit of your workout.
8. Try A Digital Detox
One of this year’s top spa and wellness trends is to disconnect from your devices – especially before bed. Why? MindBodyGreen explains: “Shutting off electronics and light can help your body do what it needs to do in the evening: produce melatonin and wind down to go to sleep.” During REM sleep is the optimal time for your skin to repair and regenerate: Melatonin counteracts environmental damage, Human Growth Hormone accelerates cell regeneration and your body’s stem cells reproduce at a quicker rate.
Betina advises: “Stop scrolling on your phone or be on your computer at least 1 hour before bed. In fact, if you can, try to avoid all screens once the sun goes down! Ok, let’s be real, that’s almost impossible, so I suggest wearing blue light blockers. This will not only help you from damaging your eyes from the light of the screens, but once the sun goes down, your body will want to produce melatonin, but won’t if you are being exposed to that blue light! Get the most out of your sleep by blocking that light or staying away from those screens.”
9. Get 8 Hours Of Sleep
Getting enough sleep is just as essential as disconnecting before bed. In fact, studies reveal that lack of sleep contributes to more fine lines and wrinkles, uneven skin tone and less elasticity. Genieve emphasizes: “Get more sleep! Getting less than 8 hours of sleep is so last year…The more sleep you get, the healthier you are. All the repair processes occur when your body is in deep sleep. It’s during this time that hormones and neurotransmitters are produced that create optimal health, fight off disease and work on epidermal tissue, muscles and joints.” By getting enough hours of sleep, you give your body enough time to perform the functions that keep your skin healthy.

From Chapati to Sticky Rice
People who have spent considerable time in India have repeated to us time and time again the same line, “India will change you.” And to neither of our surprises, this turned out to be the case. Here are few examples:
We learned quickly that every day would be a challenge, and that nothing can be taken for granted in India. Getting from A-B, finding a restaurant, finding a pharmacy, finding a bathroom, heck even walking next to each other in a crowd can be tough in Delhi. Travelling here forces you to maintain a calm and composed state of mind even in the most trying of situations. Given that timetables and stated schedules are meaningless, letting yourself get flustered at the first hiccup can be a trip ruiner.
True Statement: If you can travel in India, you can travel anywhere in the world.
We experienced sensory overload pretty much every day. I’ve never been in a place that had so many smells, sights and sounds ricocheting off each other at all hours. While we continuously felt overwhelmed by this, we soon learned to appreciate the vibrancy of the everyday chaotic routine of India.
Living healthy is incredibly easy to do when you put yourself in a healthy environment. For two months we didn’t eat meat, rarely drank alcohol and didn’t consume dairy. Restaurants aren’t marketed as “vegan” or “farm to table”... they just are. We found ourselves sleeping incredibly well, practicing yoga nearly every day and reading more than we ever had in our lives. There is a reason that India is the yoga and meditation capital of the world… it is the perfect cure for the everyday chaos of living in such a country. Our New Year's resolutions are to continue this healthy lifestyle as we continue our travels and re-enter the “real world” in April.
India constantly reminded us that the best way to get our questions answered was by talking to other people. Finding information online, if it exists at all, is often outdated and incorrect. The blogs we were reading tended to be 3-4 years old, and many of the restaurants/attractions we went out looking for had inaccurate pins on Google Maps. Instead of burying our heads in our iPhones, we were reminded of the old fashioned way of asking for help. Human-to-human interaction, to no surprise, was our lifeline when we were lost or confused (which was often). Locals were more than willing to point us in the right direction after we showed them a restaurant/guest house on on phone, and a few times they even walked us where we needed to go (without asking for anything in return) just to make sure we didn’t get lost.
Most important of all: trust your gut. If you don’t like a guesthouse, leave. If you don’t trust a taxi driver, look for another. If a menu looks questionable, the food is probably also questionable & you should keep searching. Letting your gut and intuition guide the way is the only way to survive long term travel in India. Decisions should be made from the heart and from the gut, not because a guidebook says something or Trip Advisor suggests it. The best way to experience India is through an open mind and flexible schedule. Things will go wrong, and your ability to roll with it will make or break your trip.
When we get asked about out two months in India we speak in incredibly fond and honest terms. We say “It’s crazy. You should go. You need to go. If you are able to slow down & let things happen how they may, travelling in India will simultaneously astonish you, startle you, and ultimately, change you.”

And just like that… exactly two months from the day we landed in Ft. Cochin, India, we hit the road for Chiang Mai, Thailand! Our 21 hour travel day looked something like this:

From the moment we were dropped off in front of our guesthouse in Chiang Mai, we were struck by the silence that surrounded us. People weren’t honking their horns, dogs weren’t barking, construction wasn’t being done on every corner… we could even walk side by side without the fear of being run off the road. Compared to Delhi, Chiang Mai felt more like Disney World than the second biggest city in Thailand. It was refreshingly eerie.
Chiang Mai is the capital of Northern Thailand, and one of the most popular tourist destinations in the country. The charming “Old City” is a one-mile by one-mile grid, surrounded by a picturesque moat dating back to 1292. Buildings don’t rise above three stories, and there are cafes on every corner with reliably fast wifi. The developed, yet chilled out vibe of the city is what makes it one of the most frequented destinations for digital nomads and expats to settle in.
We spent our days exploring the city by pedal bike, and our nights eating street food at the market and listening to live jazz at a bar down the road from our guesthouse.
I ran a few times while in India, specifically in Goa, but gave up after being chased by dogs on more than one occasion. In Thailand I was able to run again, with the boundaries of the Old City creating a perfect four mile running path.
One afternoon we ventured into to the beautiful countryside for a traditional Thai cooking course. We arrived at an organic farm 30 minutes from Chaing Mai, and promptly went to work pounding green curry paste, stir-frying pad thai and chopping ingredients for papaya salad. After these dishes were cooked and eaten, we escaped to a set of hammocks overlooking rice paddies to sleep off our meal. An hour later, we were awoken by the chef to begin cooking our second round of food: fresh spring rolls and mango sticky rice. It was a successfully glutenous day.
7-Eleven's are on every corner in Thailand and are the perfect place to escape the heat (the AC is always on full blast). You can find everything from soy chocolate milk to fresh mango, and even pay for bus tickets at the checkout counter. Even the most run down 7-Eleven in Thailand is more helpful than most of our hostels were in India.
Almost equal to the number of 7-Elevens in Chiang Mai are the number of Thai massage parlors. In an effort to discern the quality establishments from the ones looking to prey on backpackers, we followed the suggestion of our guesthouse owners and went to their favorite place. A Thai massage is more in line with a 60 minute full body stretch session than a traditional western relaxation massage, which is why they get mixed reviews from travelers. The masseuse takes full advantage of their feet, legs, elbows and forearms in their attempt to stretch and contort our bodies into once thought impossible positions… and we loved it. At $6 USD for a full hour, it is no surprise that I returned a few days later for a follow up.
One afternoon we took out 40-year-old rented bikes and ventured to the only public park in the Old City. To our delight, the park was in pristine condition and full of westerners doing acro yoga, tai chi, and slacklining. We spent the next few hours doing yoga, reiki, reading, napping and admiring the acrobatics going on around us.
I’ve been getting beard trims throughout our time abroad, but the time had come for a proper haircut. We asked our guesthouse for a recommendation, and after showing us on the map where the nearest place is, they warned us not to go after 5pm because that’s when the barbers start drinking. It was 7pm... and we decided to give it a go anyway. When we showed up the whole family was having a big feast outside the parlor, complete with several bottles of alcohol scattered on the tables. They greeted us with big smiles and welcoming “Sawadees” (hello in Thai), and we asked, “Haircut?” A woman who looked like she hadn’t been drinking (too much) jumped up and led us inside. She threw a towel over my shoulders, we exchanged less than 10 words about what I wanted, and she started clipping away. Twenty minutes later, I had a fresh haircut and beard trim. If she had been drinking, she hid it well.
Once a quiet and somewhat remote town in Northern Thailand, Pai is now properly on the backpacker trail in SE Asia and can easily be accessed from Chiang Mai by a 4 hour minivan ride than includes 762 turns (they sell shirts in Pai say “I survived the 762 turns to Pai”). Once you make it through the harrowing journey, you are greeted by a delightful town full of vegan restaurants, reggae bars & backpacker bungalows. Pai tends to get a bad rap from old timers and long term travellers because of how rapidly it has changed over the last 10 years, but to us it was an oasis. The resort -- yes we stayed at a “resort” -- where we spent the week was 12 dollars a night for a private bungalow, which included a fabulous free yoga class each morning along with free breakfast.
We hiked one afternoon with our new friends from Auckland to a waterfall just outside of town. Per a few blogs online, we learned that a dog often serves as a tour guide on this particular hike. 15-minutes into the hike, a gorgeous pup strolls out of the woods and joins our ranks. For the next three hours Winston (as we named him) guided us through two dozen river crossings and patiently waited as we took photos at the waterfall. When we were ready to turn around and head home, Winston once again took the lead and showed us the way. Thanks for everything, Winston!
In Pai we went to the 12th Annual Pai Reggae Music Festival. Their were ads all over town highlighting the event, saying the festival was on Saturday and Sunday, started at mid-day and was located on the grounds of a specific hotel just outside of town. We popped the hotel name in Google Maps, saw it was a few mile walk from our place, and opted out of taking a taxi. After a 2.5 mile walk in the hills we made it to the festival!
Just kidding. Google Maps was wrong. We were nowhere near the reggae fest. We headed back into town, and ended up teaming up with other lost souls who were also searching for this mystical festival.
After another 2 miles, we finally made it! It was 4pm, and we soon learned that the festival didn’t start until 7pm. Our first question to ticket counter… “Why does your poster say mid-day?” Their response was, “Great question.”
We headed to the nearest restaurant to grab a beer, and found out that the entire restaurant was full of festival goers who also showed up too early and were now killing time playing cards, drinking beer and swapping travel tales.
We returned at 7pm with a whole crew of new friends, and boogied until midnight. Who doesn’t love Thai men singing in English with a Rasta accent? We sure did.
Camryn found a picture on Instagram a few weeks ago of a gorgeous sunrise in an obscure corner of Northeast Thailand that we hadn’t read about in any of our guide books. We asked a few people if they had heard of this magical place called Phu Chi Fa, and no one recognized the name. Immediately, we were intrigued. After two weeks in Chiang Mai and Pai, we were craving an off-the-beaten-track adventure. We got it, no doubt.
After a quick Google search, we read a few blog posts from travellers (dating back 4-5 years) saying that this town was their favorite in all of Thailand and not be missed. Details on getting there were hard to come by, as some said they took a bus there… others said the bus was no longer running and were forced to rent a motorcycle... some hired a private taxi. We chanced it on faith, and showed up at the bus station in Chiang Rai looking wide eyed for a sign saying Phu Chi Fa. And we found it :)
After a casual 3 hour bus ride, we were dropped off in front of a police station in a tiny village that only exists so people can visit the Phu Chi Fa mountain at sunrise. We read online that English is not spoken here, so we were all prepped and ready to use our hand signals and phone calculator to aid in bargaining. After a 15-minute walk down the only street, we found a gem of a guesthouse. We dropped our bags, ate a forgettable meal at a roadside restaurant by pointing at pictures of food on the wall, and went to bed early. Tomorrow’s adventure would come in only a few hours.
Our phone alarms greeted us at 3:30, 3:35, 3:40 and 3:45 am. We were out the door at 4am heading back to the police station to catch a songthaew (like a pickup truck with benches in the back) to take us halfway up the mountain. We were dropped within a 30 minute hike up to the top of Phu Chi Fa mountain, which we eagerly scampered up by headlamp with all of our warm clothes on.
We were one of the first to the top, however within the hour nearly 300 Thai tourists joined us. Not another westerner in sight, to our delight.
Trying to describe the sunrise would do its beauty a disservice, so I’ll just leave you with the pictures.
After a few hours enjoying the sunrise, we were back in front of the police station eating banana pancakes waiting for our bus to depart at 9am. Our next destination was Chiang Khong, a city on the border between Thailand and Laos. We arrived at our guesthouse in Chiang Khong and expected our $6USD a night room to be somewhat of a dump, and planned on heading into Laos the next morning. To our surprise, we were greeted by a gorgeous pool and fast wi-fi. Needless to say, we stayed two nights and spent a full day relaxing poolside. Treat yourself, right?
