CH. 11 FIELDWORK / THE BIOGRAPHY OF A CHOCOLATE BAR
I'm not the biggest chocolate enthusiast but one of my favorite would be a Mr.Goodbar. A very underrated product of Hershey and today I dug down to research exactly how they make my favorite chocolate bar.
The ingredients of Mr.Goodbar are cocoa butter, sugar, chocolate, vegetable oil, skim milk, milk fat, protein whey, soy lecithin, salt, emulsifier, vanillin, artificial flavor, and peanuts.
Their cocoa beans are grown in Far Eastern, West African, and South American equatorial regions.
The chocolate production process includes fermentation, drying, roasting, grinding cocoa beans, mixing off all ingredients, and tempering.
Cocoa in Africa is based around child labor. There’s been an increase over the past 20 years of the number of children exposed to chemicals on cocoa farms. 1/3 of the children laboring don’t attend school, they sleep on uncomfortable wooden structures in windowless buildings and have no access to clean water or sanitary bathrooms.
Producers dry and package the product for domestic transportation. Then, they are transported to many different destinations like warhorses and processing factories.
Prices are set upon supply and demand for the most part.

Chocolate is marketed based on a mix of demographics, behavioral and psychographic factors. For example on special occasions, like Valentine's Day, Easter, Halloween. Also, there are different target audiences they aim at like women or children.

Stores make a profit of about 1/3 of the retail price.
Chocolate bars and cocoa powder appear cheap to consumers in the United States and Europe because child labor is a hidden cost underneath the production. The bill for the true costs, including poverty, child labor, modern slavery, and deforestation are not paid by the industry.
Cocoa beans come from the cacao tree. The cocoa tree is found exclusively around the equator. Cacao trees need a humid climate with a lot of rain.
Harvest takes place twice a year from November to January and May to July. The fruit is hand-picked to protect the trees. Then after its harvested, the pods are opened up and their seeds are removed. Next beans and pulp are laid up for the fermentation process. The process of fermentation is adding heat, requiring the beans to be stirred. At the end of the process, the beans become brown, bitterness subsides, and the flavor develops. Then the beans get roasted at 210 so that the shells can get removed.
Once the cocoa beans have reached the machinery of chocolate factories, they are ready to be refined into chocolate. Usually, manufacturing processes differ slightly from regions but most factories use similar machines to break down the cocoa beans into cocoa butter and chocolate. Then, they will be heated and will melt into chocolate liquor. Lastly, manufacturers blend the chocolate liquor with sugar and milk to add flavor. After the blending process, the liquid chocolate gets stored and delivered to the molding factory and will get moved to the wrapping and packaging machines where they’re set off to be transported.
