Instructions
Step 1: Prep and Cook Tomatoes

Tomato Thokku OPOS Recipe
In the IP, put more than 0.25 cup oil and chop 12-13 tomatoes
The tomatoes need not be finely chopped 
Add the chopped (medium sized dices) to the oil in the IP
It should cover the base well
Add salt, haldi powder, chilli powder and slide some garlic and add it to the IP
Close IP
Put it in “Venting” and once the pin pops up time it for 20 min 
Even if it says burnt, not to worry
At the end of 20 min, let the pressure settle by itself, open it and depending on the result, we can put it back for Steam, More, Venting, 5 min 
Or, put it on saute and allow the water to evaporate a bit

Tomato Thokku / Thakkali Thokku recipe / Tomato Pickle Recipe is such a versatile recipe, which is a heavenly combo with Idli, dosa, chapati, phulka, curd rice etc. It stays good for 2 to 3 days, when kept outside too, you can even pack it for travelling, but use sesame oil generously.

Ingredients: 
3 tbsp oil 
1 bay leaf 
1 star anise 
1 1inch cinnamon 
3 to 4 medium onions

3 tbsp ginger garlic paste
