Thai Coconut Chicken Skewers with Peanut Sauce Enjoy the vibrant flavors of Thailand with these juicy chicken skewers marinated in coconut milk and spices, served with a rich and creamy peanut sauce. Perfect for a quick dinner or a weekend barbecue. Ingredients Marinade 1.5 lb boneless skinless chicken thighs 15 ounce can coconut milk, divided 1 Tablespoon granulated sugar 2 teaspoons curry powder 2 teaspoons red curry paste 1 teaspoon salt Peanut Sauce ¾ cup creamy peanut butter ¾ cup water ¼ cup granulated sugar 2 Tablespoons red curry paste 2 Tablespoons apple cider vinegar 1 Tablespoon soy sauce 1 teaspoon salt Instructions Chicken Skewer Marinade In a medium-sized mixing bowl, whisk together 1/4 cup of coconut milk with the curry powder, red curry paste, granulated sugar, and salt. Set aside the remaining coconut milk for the peanut sauce. Cut the chicken thighs into pieces roughly 4” wide. Add the chicken pieces to the marinade and toss to coat. Allow to marinate for 20 minutes while you prepare the other components. If using wooden skewers, soak them in water to prevent burning. Peanut Sauce Preparation In a medium saucepan, combine the remaining coconut milk with the peanut butter, water, granulated sugar, red curry paste, apple cider vinegar, soy sauce, and salt. Heat over medium heat, stirring frequently for about 5 minutes until the sauce thickens and becomes smooth. Be cautious not to overheat; if the sauce separates, remove from heat and whisk until it returns to a smooth consistency. Cover the sauce and set aside while you cook the chicken skewers. Grilling the Skewers Preheat your grill or broiler to high. If using the broiler, line a rimmed baking sheet with aluminum foil and lightly spray with cooking spray. Thread the marinated chicken pieces onto the skewers, packing them tightly to maintain moisture. Aim for 5-7 pieces of chicken per skewer. Cook the skewers on the grill or under the broiler for about 5 minutes per side, or until the internal temperature reaches 165°F.

Ingredients: 1 pound boneless, skinless chicken breasts, cut into thin strips. 1/4 cup soy sauce. 2 tablespoons brown sugar. 2 tablespoons vegetable oil. 1 tablespoon lime juice. 1 teaspoon curry powder. 1/2 teaspoon ground cumin. 1/4 teaspoon turmeric powder. 1/4 teaspoon red pepper flakes adjust to taste. Wooden skewers, soaked in water for 30 minutes. For Thai Peanut Sauce:. 1/2 cup creamy peanut butter. 1/4 cup coconut milk. 2 tablespoons soy sauce. 2 tablespoons brown sugar. 1 tablespoon lime juice. 1 clove garlic, minced. 1/2 teaspoon red curry paste adjust to taste. Water to adjust consistency. Chopped peanuts and cilantro for garnish optional.
Instructions: Put lime juice, soy sauce, brown sugar, vegetable oil, curry powder, cumin, turmeric, and red pepper flakes in a bowl. Mix these together to make the marinade. The chicken strips should be put on the wet wooden skewers and then put them in a shallow dish. Make sure the chicken skewers are well covered with the marinade by pouring it over them. Put the dish in the fridge with the lid on for at least 30 minutes, or overnight for the best results. Make the Thai Peanut Sauce while the chicken is marinating. Put peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and red curry paste in a small saucepan. Stir the sauce around on low heat until it's smooth. As needed, add water to get the right consistency. Take it off the heat and set it aside. Warm up the grill over medium-high heat. To keep food from sticking, oil the grill grates. The chicken skewers should be grilled for four to five minutes on each side, or until they are fully cooked and slightly charred. Make sure that the chicken reaches a temperature of 165F 74C inside. Put the chicken satay kabobs on the grill and serve them with Thai peanut sauce on the side. If you want, you can add chopped peanuts and cilantro as a garnish. Have fun with your tasty Thai peanut sauce and chicken skewers.

These Thai Style Baked Curry Puffs have a tasty curry filling inside a flaky puff pastry shell. With a hint of Thai flavor, they're great as an appetizer or snack.
Ingredients: 1 package of frozen puff pastry sheets 2 sheets. 1/2 pound ground chicken or pork. 1 small onion, finely chopped. 2 cloves garlic, minced. 2 tablespoons red curry paste. 1/2 cup coconut milk. 1/2 cup frozen peas. 1/2 cup diced carrots. 1/2 cup diced potatoes. 1 tablespoon vegetable oil. 1 egg for egg wash. Salt and pepper to taste.
Instructions: Turn on your oven and heat it up to 375F 190C. Warm the vegetable oil in a big pan over medium-low heat. Add the minced garlic and chopped onion, and saut until the onion is clear and smells good. Make the ground chicken or pork and put it in the pan. Cook it until it turns brown and is fully cooked. To finish cooking, add the red curry paste and stir it in. Chopped carrots and potatoes should be added and cooked for 5 to 7 minutes, until they start to get soft. Add the coconut milk and mix it in well. Let it cook on low heat for 5 to 10 minutes, or until it thickens up and the vegetables are soft. Add the frozen peas and stir them in. Cook for two more minutes. Add pepper and salt to taste. Take it off the heat and let it cool down. While the filling cools, follow the directions on the package to thaw the puff pastry sheets. After the pastry sheets have thawed, lightly roll them out and cut each one into four equal squares. This will give you a total of eight squares. Put a lot of the cooled curry filling in the middle of each square of pastry. To make a triangle, fold each square of pastry in half diagonally and press the edges together to seal. For a nice look, you can crimp the edges with a fork. In a small bowl, beat the egg. Then, use the egg wash to cover the tops of the curry puffs. Put the curry puffs on a baking sheet that has been lined with parchment paper. Bake in a hot oven for 20 to 25 minutes, or until they are golden brown and puffy. Take it out of the oven and let it cool down a bit before you serve it. Have fun with your Thai-style baked curry puffs!

Ingredients: 2 cups cooked jasmine rice, cold. 1/2 cup diced chicken breast or tofu your choice. 2 cloves garlic, minced. 1/2 cup diced carrots. 1/2 cup frozen peas. 2 eggs, beaten. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon fish sauce optional. 1 teaspoon sugar. 1/4 cup chopped green onions. 1/4 cup chopped fresh cilantro. Lime wedges for garnish.
Instructions: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and saut for 30 seconds until fragrant. Add diced chicken or tofu and cook until it's no longer pink or until tofu is slightly browned. Push the chicken or tofu to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until fully cooked. Add diced carrots and frozen peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender. Add the cold cooked rice to the skillet and break it apart with a spatula. Stir-fry for 2-3 minutes to heat through and mix with the other ingredients. In a small bowl, mix together soy sauce, fish sauce if using, and sugar. Pour this sauce over the fried rice and stir to combine. Add chopped green onions and cilantro to the skillet. Stir-fry for another 1-2 minutes. Remove from heat and garnish with lime wedges. Serve the Thai fried rice in two bowls and enjoy!

Zest of 1 orange. Green onions, sliced, for garnish. Sesame seeds, for garnish.
Instructions: Mix flour and cornstarch together in a bowl. Coat chicken pieces in the mixture and then shake off the extra. In a pan, heat vegetable oil over medium-high heat. Cook the chicken all the way through until it turns golden brown. Take it off and let it dry on paper towels. Add orange juice, rice vinegar, sesame oil, garlic, ginger, and orange zest to a different pan. Then add Thai sweet chili sauce and mix them together. Cook until everything is hot and a little thicker. Mix the fried chicken with the sauce by tossing it around. Before serving, top with sliced green onions and sesame seeds.

Thaiquet Southern Thai Restaurant, located at 430 Upper Changi Rd, #01-05 East Village, can be found along the same stretch as Hong Kong Street Family Restaurant and Fisherman’s Claypot. On our recent visit, we decided to indulge in their vegetarian offerings as my wife follows a vegetarian diet on alternate months, and I often join her for a meal or two.
