As I spend more time in Taiwan, I’ve noticed some differences in simple ways of life Taiwan is used to yet I’ve never experienced in Phoenix. (I also interspersed some fun pictures of my stay!)
On the first day, I arrived late at night to a platter of multiple cut up fruits. It seems every morning and evening, the family will enjoy the fresh in-season fruits from their markets.
On the topic of grocery stores, there was one a Breeze Mall which was very fancy and somewhat similar to American supermarkets (except for it being in a 9-story building). When Shari took me to a street market, opened daily with multiple vendors selling anything from meat and vegetables to underwear and umbrellas. Each vendor was shouting out what great deals they had, trying hard to attract customers. I was later informed that the sellers would lessen the price as the day went on.
Business owners are the same way. All the time, there are employees or the owner themselves on the street or in front of their store, enticing more people inside. Twice, I have gotten free drinks and food just for ordering from a certain restaurant.
In America, most prices are set with no room for negotiation. Even if the owner was willing to haggle a little, Phoenix doesn’t see people walking up to passerby to tell them what they have on their menu (though you gotta respect the grind). Only at mall kiosks have I seen salespeople leaving their stand to tell people what they have.
On the topic of restaurants, eating out is much cheaper in Taiwan. Most places sell items at $2-3 per person, and they usually give you a lot of food. To eat out even at a fast food restaurant is a strain on one’s pocket in America.
At my home in Taiwan, I discovered that laundry is done every day or every other day. I also learned that each room had a separate air conditioner unit, alongside an oscillating fan. And though I saw a couple of people walking their dogs, I found most people are unable to keep animals due to the small spaces of apartments. Furthermore, it’s a custom to wear indoor shoes inside and leave your other shoes outside the house.
I learned that there is less of a paranoia of theft in Taiwan (though some store vendors will follow you around to ensure you aren’t stealing). On the train/subway/bus systems they were much cleaner than what I have encountered in other US cities with public transportation. (Phoenix decided not to build one.) This cleanliness stems from the no eating policy the Taiwan transport enforces. Shari also told me that unlike other cities, Taiwan actually gains a profit from this, because the city is so dense and many people do not own cars.
I’ve gone swimming twice so far on my journey. Once at a hotel pool and the other at Leofoo Water Park (the only water park in Taiwan). Both places required the use of a swimming cap to enclose your hair. I have never seen these garments worn anywhere except competitive swim before this point in time.
Taiwan is also known as a very rainy city, meaning everyone living there owns an umbrella. Nearly every store sells umbrellas in case a poor person forgot theirs. On my trip, it has rained at least once every day. The day may start off without a cloud in the sky, but quickly descend into a stormy skyline, rain clouds showering the country with rain. In Phoenix, the city with the most hours of sunlight a year compared with the rest of the US, the little rain that comes is seen as a blessing.
Umbrellas are also used for another purpose I’ve only seen a handful of times in America. That is using the umbrella to guard against the sun. More than half the passerby I encounter when the sun shines are holding umbrellas, very much unlike Phoenix citizens who bake in the sun all day. Every place has an umbrella rack outside their door, and others have plastic covers so the umbrellas will not drip.
Obviously a city with so much rain has to be very humid. While my hair is resistant to becoming frizzy, (as shown in the many times I’ve curled my hair only for it to return to stick straight only a few hours later) Sonia’s and Talia’s hair has become much thicker, as if it’s trying to escape. On the other hand, your skin develops a glow I have never seen in the dry heat of Arizona. The only downside was a smattering if acne that flared up due to excess oil.
The heat of Taiwan also was something I had to adjust to. If Phoenix is an oven, baking everyone, Taiwan is a sauna, causing so much sweat. Furthermore if your clothing or shoes get wet in the rain, good luck on them drying anytime soon. In Arizona, the sweat will disappear quickly, as if you never felt heat in the first place. (Though the smell won’t leave!)
This humidity coming from being on an island constantly living with rain brings a much more pesky problem. Mosquitoes suck (Literally and figuratively). I have accumulated at least 30 bug bites from my time here, ranging from on my hands to my face, to my legs and any other place blood-sucking insects decide is yummy. In face due to this influx of bites, my skin had an allergic reaction and the bug bite grew a giant red ring around the bite. When visiting Taiwan, be sure to bring bug repellent. They can bite you through your clothes, and they live everywhere. The trains have them. Restaurants have them. They will follow you into where you sleep.
On a lighter note, let’s talk about 7-Elevens. They are everywhere, and are much more jumbo sized compared to America. I would compare them more to a Walgreens if it had a sitting area and tables to hang out at. Also, most stores require a customer to pay if they need a plastic bag. Some states in the United States have implemented similar laws, but Arizona has not put it into action. (It is coming close though.)
Watching movies is not as popular of a pastime as in America I first learned when I looked on Taiwanese Netflix and found a huge number of more popular shows on it. The cheaper ticket prices were to entice people to attending movie theaters. Even the marketing campaigns are much larger in Taiwan. The Spider-Man: Far from Home advertisements in America were mainly videos online, but Taiwan had the titular character plastered all over buses, and at the mall near Taipei 101 I discovered a life-sized interactive model of Spider-Man slinging a web.

Taiwanese Coffin Bread (棺材板)
My dad hates the name of this Taiwanese dish because it's so morbid, but that's what it's actually called in Mandarin: Coffin Bread. "It's just not good!" he said while shaking his head after I told him I was working on this recipe.
The Coffin Bread is a famous snack in Tainan -- a city in Taiwan --, but it used to be known simply as "Chicken Liver Plate.” In the 1940's, a snack shop owner created this dish by concocting a chicken liver stew that he would put into a thick piece of toasted bread. Supposedly, an archaeology team that was working nearby stopped in for a snack. An archaeology professor in the group mentioned that the dish looked like a slate they had recently excavated. This slate, historically used to cover a rectangular-shaped casket, was found in the foothills of the mountains nearby in Taitung County. Thus, shop owner renamed the dish to Coffin Bread because he probably understood marketing really well.
Throughout the years, this dish has evolved from a chicken liver stew to a seafood chowder dish. You'll see a mix of both however, and it's essentially a bread bowl soup. But square. And it's traditionally meant to be a snack for two people. If you love bread bowl soups and decadence, you will love this shareable and easy-to-make dish.
For this recipe, the chowder that goes into the bread "coffin" has a mixture of chicken, shrimp, and oyster mushrooms, dressed in a creamy, decadent bath. If you’re vegetarian, replace the chicken and shrimp with a mixture of mushrooms and edamame beans.
For 2 servings:
2-inch thick piece white bread (preferably brioche or Hokkaido)
2 tbsp. vegetable oil
4 oz. (about 3/4 cup) chopped* chicken breast
3 oz. chopped* peeled and devined shrimp
2 oz. chopped* oyster mushroom
2 tbsp. diced carrots
2 tbsp. peas
1 1/2 tbsp. clarified butter
2 tbsp. all-purpose flour
1 c. whole milk
2 tbsp. grated American Münster or Monterey Jack cheese
1 1/4 tsp. kosher salt
1/4 tsp. ground white pepper
In a toaster or toaster oven, toast the bread until desired brownness.
Cut a square into the center of the bread, about 3 centimeters deep. (Do not cut all the way through to the bottom!) Peel the top, and set aside the “coffin cover.” Carefully, scoop out the excess “innards” in with a spoon.
In a large sauté pan, heat vegetable oil over medium heat. Add chicken, shrimp, mushrooms, and carrots. Sauté until the chicken is cooked. Once the chicken is cooked, add peas and 1/4 teaspoon of kosher salt. Sauté until the peas are tender, about 1-2 minutes. Set mixture aside.
In a medium sauce pan, melt butter over medium heat. Whisk in flour, and continue whisking until a paste forms. Increase heat to medium-high. Whisk in milk and cheese. Whisk constantly, for about 5 minutes, until the paste and milk form a creamy ivory-colored sauce. Season with white pepper and salt.
To make the chowder, stir the chicken-vegetable mixture into the sauce until well incorporated.
Pour the chowder into the cut-out toast. Top with the “coffin cover.”
*Note: for this recipe, chop the chicken and shrimp into 1/2-inch sized chunks. The oyster mushrooms should be approximately the same size as well.

Effect of Drying Characteristics of Garlic
Natural sun drying is one of the most common ways to preserve agricultural product. the most purpose in drying farm manufacture is to reduce its water activity from the harvest level to the safe storage level in order to increase its shelf life. Once the product has been dried, its rate of deterioration because of respiration, insects, and microbial activity and biochemical reactions should diminish resulting in maintenance of quality of the stored product. It does improve bargaining position of the farmer to keep up comparatively constant value of his product. Drying reduces post-harvest losses and transportation prices since most of the water are taken out from the product throughout the drying method. In India, sun drying is the most typically used technique to dry the agricultural material like grains, fruits and vegetables. In sun drying, the garlic is spread in a very skinny layer on the bottom and exposed on to solar radiation, ambient temperature, wind velocity, relative humidity, initial moisture content, absorptive, exposure time and mass of product per unit exposed area.
Garlic is a bulbous perennial vegetable spice. The bulb is composed of pungent bolblets, commonly known as cloves. Garlic is a semi-perishable product. Due to lack of suitable storage and transportation facilities, about 30% of fresh crop is wasted by respiration and microbial spoilage. At times of shortages, India imports garlic of Chinese origin from Taiwan or via Nepal. Fresh garlic, dehydrated garlic flakes, dehydrated garlic powder and garlic oil is exported from India. India was once a leader in this field but is losing out to China in the overseas market. China has an edge over India in terms of both quality and quantity.
Food drying is one of the oldest methods of preserving food for later use. Food drying is a very simple, ancient skill. It is one of the most accessible and hence the most widespread processing technology. Sun drying of fruits and vegetables is still practiced largely unchanged from ancient times. Traditional sun drying takes place by storing the product under direct sunlight. Sun drying is only possible in areas where, in an average year, the weather allows foods to be dried immediately after harvest. The main advantages of sun drying are low capital and operating costs and the fact that little expertise is required. The main disadvantages of this method are as follows: contamination, theft or damage by birds, rats or insects; slow or intermittent drying and no protection from rain or dew that wets the product, encourages mould growth and may result in a relatively high final moisture content; low and variable quality of products due to over-or under drying; large areas of land needed for the shallow layers of food; laborious since the crop must be turned, moved if it rains; direct exposure to sunlight reduces the quality (colour and vitamin content) of some fruits and vegetables. Moreover, since sun drying depends on uncontrolled factors, production of uniform and standard products is not expected. The quality of sun dried foods can be improved by reducing the size of pieces to achieve faster drying and by drying on raised platforms, covered with cloth or netting to protect against insects and animals. In open sun drying, there is a considerable loss due to various reasons such as rodents, birds, insects and microorganisms. The unexpected rain or storm further worsens the situation. Further, over drying, insufficient drying, contamination by foreign material like dust dirt, insects, and micro-organism as well discolouring by UV radiation are characteristic for open sun drying. In general, open sun drying does not fulfil the quality standards and therefore it cannot be sold in the international market.

The ginger lemon candy (from Singapore) is almost always stocked at my local food market, and I love them! Ginger-spicy, lemon-chewy, and a gentle powdered sugar coating. I could eat these for the rest of my life.

The first two options are simple variations on a light pastry stuffed with winter melon, with a cute traditional Chinese tale behind them. Yuki & Love’s basic mochi are all vegan, so if green tea or peanut isn’t your jam, you can also check out the taro or black sesame varieties.

Chinese almond and walnut cakes are quite commonly vegan, consisting mainly of bean flour, sugar, vegetable oil, and nuts. They’re somewhat like a shortbread cookie in nature, but a little less sweet, less packed and more crumbly.
The Chimes hard toffees, hailing from malaysia, will be a welcome treat for those who’ve tried cocomels (the soft vegan caramels) but want a hard variety.

A lot of popular rose and coffee flavoured candies (hard and gummy) either contain gelatin or milk (or both!) so these are some particularly great finds. Not only that, but the roasted coffee candy reviews especially well as tasting like a real, intense cup of coffee! Both these flavours are a little more refined than your average soda or fruit gummy, so you can indulge without feeling like a kindergarten kid.

While my sweet tooth is bigger than my salty snack craving, I still absolutely love the intense variety of dried bean curd/tofu snacks there are on the market. I first tried these when I noticed the quirky mascot on the packaging, a lady after my own heart who seems to spend most of her time gaming or sleeping.

I tried the white peach soda recently, despite not being personally big on peach as a fruit. It is so delicious and gentle that I know I’m going to get it at least once a month from now on! The Mogu Mogu fruit drink comes with little chunks of coconut jelly in it, which will be familiar to those who already drink aloe or grass jelly drinks, but I’ve always found jelly bits in my drink to be a funny novelty, like the ramune soda bottles and their distinctive glass marble seal. Pocari Sweat is a huge Japanese brand of electrolyte drinks, and if you’re lucky you might even nab the strange jelly pack version of it. I’ll stick to the refreshing liquid version that helps me after a hangover!

Environmental Impact of EDTA and Phosphonates
Ethylenediaminetetraacetic acid (EDTA) is a well-known chelating agent and has numerous applications in various industries. EDTA is a chelate ligand with a high affinity constant to form metal-EDTA complexes to sequester metal ions. In general, EDTA has a low toxic impact on both humans and natural environments. There are some concerns, however, about its poor biodegradation in conventional wastewater treatment plants and natural environments, and its effect in mobilizing heavy metals from solid phases to pose a risk to groundwater. EDTA behaves as a persistent pollutant in the environment, enhancing the mobility and bioavailability of heavy metals. In natural environments, studies detect poor bio-degradability of the ligand. Phosphonates are also known to be poorly degradable chelates. The phosphorus in phosphonates serves as a nutrient, and the deposition of large quantities of phosphates in lakes and waterways induces excessive growth of plants and algae. This excessive growth depletes oxygen and endangers aquatic life. As a result, phosphonates have been discouraged around the world. Biodegradation tests with sludge from municipal sewage treatment plants with HEDP and NTMP showed no indication for any degradation. An investigation of HEDP, NTMP, and DTPMP in standard biodegradation tests also failed to identify any biodegradation. Such concerns over certain chelates can prove to be a challenge for the chelates industry.
