Split Pea and Leek Soup (Vegetarian)
This hearty Split Pea and Leek Soup is a simple and delicious way to warm up after a morning spent pottering in the garden. Happy Monday!
Ingredients (serves 2):
1 small Garden Leek
1 ½ tablespoons unsalted butter
½ tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 cup split peas
2 bay leaves
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
5 cups water
Thoroughly rinse Garden Leek under cold water.
Melt butter with olive oil in a medium pot over medium-high heat.
Thinly slice Garden Leek. Once the butter is just foaming, add white part of the Leek to the pot, saving green part for later, and cook, about 4 minutes until softened and starting to brown.
Stir in dried thyme and rosemary, and cook, 1 minute more.
Stir in split peas, coating in fat and herbs. Add bay leaves, and season with coarse sea salt and black pepper.
Finally, stir in 4 cups of the water, and bring to the boil. Once boiling, reduce heat to medium, cover with the lid, and simmer, 35 minutes, until peas are tender.
Stir in remaining water, and reserved chopped green part of the Leek. Cover with the lid, and cook, 10 minutes more.
Serve Split Pea and Leek Soup hot, with a generous dollop of crème fraîche, if you wish.
