And the name - Milkless Milk - just makes me smile 😀 My taste journey - insanely creamy, smooth and fudgy, like rich caramel sauce. Following a soft snap there was an eruption of flavour notes - golden shortbread, sweet/crushed honeycomb, jasmine blossom nectar, and roasted nuts. Wow! It's #tttt_s week in the craft chocolate community and this Limited Edition Gran Palo 67% was scrumptious! After some research I discovered that “Gran Palo is a special varietal of cacao and that is generally recognised by its delicate flavours, aromas and fragrances! How superb! ☺️ My taste journey - entering with a sharp snap, a deep intense aroma of “there’s a chocolate cake baking in the oven” met me. Then, as the chocolate rapidly melted, my palette was flooded with flavours. Initial earthy notes of hot cacao, golden buttered toast and malt, with a nuttiness akin to hazelnut butter. These were almost immediately joined by sweet notes of acacia honey and golden raisins. Such flavour harmony within a smooth and creamy bar! ♥️ Imagine enjoying a hot cacao infused with hazelnut liquor, with buttered fruit toast spread with honey that has been left to soak all the way through on to your plate. Posted @withregram • @jessica__chokolatejourneys So tell me, have you tasted Vegemite? It’s an Australian yeast spread I grow up on and really enjoy. This bar had the aroma of Vegemite 😯 My taste journey - initially earthy, roasted cacao, and toasted bread notes appeared. These were joined by notes of sour grape with a very mild nutty characteristic, as the bar slowly melted. Not bitter, nor sweet with a texture and mouth feel like smooth, thick, dense yoghurt, custard, or baked New York cheesecake. It paired beautifully with some pumpkin seed halva and would have paired well with something creamy like cashew cream or brie if you can dance with dairy. Posted @withregram • @jessica__chokolatejourneys Since the start of the year I’ve been spending sometime pairing 100% bars with different things (i.e. teas, fresh & dried fruits, vegetables, spices, nuts, other chocolate bars, etc). I really enjoyed pairing @solkiki_chocolatemaker Coasta Esmeraldas Ecuador 100% bar, with it’s low acidity and thick fudge mouth feel with some of their other bars. Hands down winner was pairing it with their Star Anisey. Their Gianduja and Milkless Milk bars were also delicious pairings. Repost @jessica__chokolatejourneys with @get_repost ・・・ Raw or unroasted, which is it and are they the same? When I saw this unroasted bar by @solkiki_chocolatemaker I was curious. After a little research I reached out to Iris and Bob to gain greater insights. Here are some snippets I gleaned from speaking with them. Enjoy! “Chocolate or cacao cannot be raw, it is inedible when it’s raw. The term ‘raw chocolate’ is often used...The cacao cannot be raw by definition, it’s a fermented [and dried] product. The difference with this chocolate [bar]...is that we didn’t roast the cacao beans, therefore we call it unroasted.” “Normally cacao is roasted before being further processed into chocolate. What is different in this 70% bar is that we didn’t roast the cacao beans” before turning it in to chocolate. “The term ‘unroasted’ is used to...be more precise.” Interesting right?! Here’s my taste journey - such a gentle bar! Slow to warm up with an initial dry yet incredibly thick and dense mouth feel, ponderous melt, and smooth texture. Brown butter biscuit, and cacao powder first met me along with notes of green banana and a tart walnut/oak character. As the bar melted, faint floral and subtle sweet notes of honeysuckle appeared, leading to a long, botanical finish.
