Fruits such as bananas, mangoes, tomatoes, pears, peaches, and apples are examples of climacteric fruits. Non-Climacteric Fruits
These fruits only ripen as long as they are attached to the plant or vine. Their ripening process stops as soon as they are harvested, hence, they must be picked only when they are fully ripe. They react differently to ethylene and CO2 levels when they come into contact with them. Therefore, they do not need cold rooms or refrigeration.

Just like refrigeration improves the shelf-life of fruits, vegetables can also be kept for longer periods using cold storage. Different vegetables require different temperatures and humidity levels.
