What's red on the outside, yellow on the inside, and a $395.99 way to garnish your margarita?

The Rubyglow Pineapple, which Fresh Del Monte describes as "an ultra-premium luxury 'designer' fruit that appeals to high-end consumers."

Why It Matters: Agriculture scientists and produce companies are constantly trying to innovate, to improve their plants and tantalize the public.

Fun new fruits have lately included a thornless blackberry (developed in Arkanasas), a "Yellow Submarine" tomato that's yellow and shaped like a peanut (born at Cornell University), and the Luna avocado (out of the University of California, Riverside).

🍍Zoom In: It takes at least a decade to develop a new type of fruit, and the Rubyglow is no exception.

"Grown in Costa Rica after a 15-year development period, the Rubyglow Pineapple has a registered plant patent in the United States," according to a Fresh Del Monte press release.

Its scarcity is key to its price tag: While "only a few thousand" will be produced this year, the Rubyglow will be "available nationwide through select regional grocers" and online retailers.

Zoom Out: The Rubyglow is the latest newfangled pineapple from Fresh Del Monte — and the most expensive.

The Mini Honeyglow was introduced this year as a "personal-size" pineapple (read: small) that's sweeter than most — it costs a mere $11.79 (plus about $30 in shipping).

The Pinkglow Pineapple — launched in 2020, with flesh as pink as deli ham — costs $29 before shipping.

To merit its designer price tag, the Rubyglow "is individually packaged in a beautiful box that unfolds almost like origami," says Food & Wine.

The Bottom Line: Fruit salad is getting ready for a glow-up.

Pink pineapple blogging!

My pinkglow pineapple tepache turned out really well! It was super foamy on top, smelled like yeast, it tastes great and fresh, except... I think I let it ferment too long lol. (I was really miserable yesterday and didn't want to bother with it while suffering dental surgery, so today is 4 full days.)

Unfortunately, I don't think I can drink it right now because of the dental surgery meds I'm on, lmao. I poured a lil sippy sip, tasted it, watered it down and had another taste, and it's giving me alcohol feeling, so... lmao. More than I was expecting. Maybe it's in my head, idk. But I'm a non-drinker lightweight.

I was genuinely NOT expecting this since I've never successfully fermented anything (never tried with fruit tbh), and ofc it happens at a time when I definitely can't have anything alcoholic. I already take too many meds, but I could squeeze in an appropriate place for drinking something small and low-alc if this were a normal week. (I'm seriously not a drinker, like at all. I've prob had less than 10 drinks in my life, and most were in high school before I went straightedge for a long time.)

But yeah, I guess I was expecting more of a vinegar (like kombucha, yuck, why would I want that anyway?) than a sweet alcohol lol (I never got to try tepache before, so I didn't know). I probably sound all 'surprised Pikachu face' because obviously fermenting makes alcohol! I just didn't realize how quickly that can happen to the point of being able to actually taste/feel that it's alcoholic (I couldn't taste it the one time I tried kombucha).

Someone online said they froze it in ice cube trays, so maybe I'll pour it out for that to add to other drinks in summer? (But it's too much for one ice cube tray...) I'll taste it again tomorrow if I'm needing less pain medication. (It's in the fridge now, so it should last longer and stop fermenting, I hope.)

OH or, shit, I guess I can cook with it still! I can see if I have any frozen chicken or pick some up tomorrow, because I just saw a comment saying they were cooking chicken adobo with pineapple vinegar - I could just use this as an added flavour (with the regular vinegar I use). That sounds SO fucking good (I still have leftover pineapple too). I'd probably rather cook off the alcohol if I can, it just sucks that this wasn't what I wanted, (even if I did successfully make a second use out of the expensive pink pineapple rinds that would have otherwise been thrown away!!)

I should probably re-educate myself on fermentation (I gave up learning a while ago when I ordered a special fermentation jar that came with a rim broken during shipping and I had to return it... I made my pickles and just ate them fresh for a week instead of fermented.)

Like, I totally made this without measuring anything, because I figured it was just scraps anyway, and 2 little piloncillo and spoonful of cinnamon would not be worth crying over if it didn't make anything successful. Of course, this ended up being my first success. (I was measuring shit by weight on our old fashion kitchen scale in the past times I was trying to make tejuino and failing lol). The key definitely had to be in adding the syrup liquid when it cooled to lukewarm, as opposed to boiling hot like I did in the past.

Anyway. There's my story and the drink I started making on Valentine's Day.
