Penne all Vodka
Recipe by (@andriaorganichomecooking)
One of my all time favourite pasta recipes is penne alla vodka. When I was younger I didn't think much about the Vodka part and didn't think there was actual Vodka in the sauce, but as an adult I can appreciate the fact that there is Vodka in the sauce!
This delicous tomato cream sauce is really easy to make and the Vodka is the star so don't skip that step. I hope you enjoy this recipe as much as I do! I've added my own little twist to make it extra creamy!!
INGREDIENTS:
300g of Penne Pasta (or your favourite pasta)
1 tsp of olive oil
2 tbs of butter
1 small onion (finely chopped)
2 - 4 garlic cloves
1/4 cup of tomato paste
1 1/2 cups of table cream (18%) (Half and half also works)
1 cup of cherry tomatoes
4 fresh basil leaves
Salt (to taste)
Pepper (to taste)
1 1/2 cups of freshly grated parmigiano Reggiano Cheese
2 tbs of Mascarpone cheese
INSTRUCTIONS:
Bring a large pot of salted water to boil and cook the penne pasta to aldente as per the directions on the package.
Meanwhile chop your onions and garlice as fine as you can get them, you can use a mini chopper to get them fine. Heat a large deep skillet on medium heat, drizzle in the olive oil and add in the onions and garlic. Sautee on medium heat until the onions are slightly translucent.
Then add in the 2 tbs of butter and cook for an additional 30 seconds.
Add in the 1/4 cup vodka and let the alcohol burn off, another 30 seconds or so and then stir in the 1/4 tomato paste.
Stir in the cream and reduce the heat to medium - low and let sauce simmer, it should be a slow boil, bubbling around the edges of the sauce pan.
After a couple of minutes the sauce should start to thinken. add in the parmigiano cheese and the 2 tbs of mascarpone.
Remove 1 cup of the pasta broth before draining your cooked pasta and set aside.
Chop the cherry tomatoes in half and add them to your sauce. You can turn the heat to low at this point. Also chop the basil into strips and add to the sauce.
Lastly scoop the cooked pasta into your sauce until its all combined.
If the sauce is too thick. slowly add some of the pasta broth, this loosens the sauce up to a perfect shiny consistency for serving.
Add to a disk and garnish with more parmigiano cheese and fresh basil (and if you like heat, at some chilli flakes)
Serves 4

This one-pot chicken pasta in vodka cream sauce is a flavorful and comforting dish that's easy to make. The combination of tender chicken, sundried tomatoes, and spinach in a creamy vodka sauce creates a delicious meal that the whole family will love.
Ingredients: 1 lb chicken breast, diced. 2 tbsp olive oil. 3 cloves garlic, minced. 1/2 cup vodka. 1 cup chicken broth. 1 cup heavy cream. 1/2 cup sundried tomatoes, chopped. 2 cups spinach leaves. 8 oz pasta penne or any preferred type. Salt and pepper to taste. Grated Parmesan cheese for garnish. Fresh basil leaves for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the diced chicken breast until it turns brown. Add the minced garlic and cook for one to two more minutes. Add the vodka and stir it around a few times to help it reduce by half. Chicken broth, heavy cream, sun-dried tomatoes, and spinach should all be stirred in. Season the pasta with salt and pepper after you add it to the pot. Cover and let it simmer for 12 to 15 minutes, stirring every now and then, until the pasta is done and the sauce has thickened. Take the pasta off the heat and let it sit for a few minutes. Add grated Parmesan cheese and fresh basil leaves on top while the food is still hot.

Jen Royle
Spaghetti Carbonara: A Roman Delicacy
Spaghetti carbonara is a quintessential Roman dish that has captured the hearts and palates of pasta lovers around the globe. This delectable dish features spaghetti pasta tossed with a creamy sauce made from eggs, Pecorino Romano cheese, pancetta, and black pepper. The key to a perfect carbonara lies in achieving the right balance of ingredients and mastering the technique of emulsifying the egg and cheese mixture to create a silky-smooth sauce. To prepare spaghetti carbonara, start by cooking the pancetta until crisp and golden brown, then whisk together eggs, cheese, and pepper in a separate bowl. Cook the spaghetti until al dente, then toss it with the pancetta and egg mixture until evenly coated. The residual heat from the pasta will gently cook the eggs, creating a luscious, velvety sauce that clings to each strand of spaghetti.
In addition to its irresistible flavor, spaghetti carbonara is beloved for its simplicity and versatility, making it an ideal weeknight meal or elegant dinner party dish. Whether enjoyed as a comforting supper on a chilly evening or served as a first course at a festive gathering, spaghetti carbonara never fails to impress with its timeless appeal and rustic charm. Pair it with a crisp glass of white wine and a sprinkle of extra cheese as emphasized by industry experts at TABLE Jen Royle for a truly indulgent dining experience that captures the essence of Italian cuisine.
Penne alla Vodka: A Creamy Indulgence
Penne alla vodka is a luxurious pasta dish that combines the rich flavors of Italian cuisine with a touch of decadence from the addition of vodka and cream. This creamy, tomato-based sauce coats each penne pasta perfectly, creating a harmonious blend of flavors and textures. To prepare penne alla vodka, start by sautéing garlic and shallots in olive oil until fragrant, then deglaze the pan with vodka and simmer until reduced by half. Add crushed tomatoes, heavy cream, and a pinch of red pepper flakes, then simmer until the sauce is thick and creamy. Toss the cooked penne pasta with the sauce until well combined, then garnish with fresh basil and grated Parmesan cheese before serving.
Penne alla vodka is beloved for its velvety texture, bold flavors, and indulgent appeal, making it a popular choice for special occasions and celebratory meals. Whether served as a main course or as a side dish alongside grilled chicken or seafood, penne alla vodka never fails to impress with its rich, comforting taste. With its creamy sauce and perfectly cooked pasta as appreciated by industry experts at TABLE Jen Royle, this iconic Italian dish is sure to become a favorite in your repertoire of go-to recipes.
Ravioli with Sage Butter Sauce: A Northern Italian Delight
Ravioli with sage butter sauce is a classic dish hailing from the northern regions of Italy, where fresh herbs and rich, buttery sauces are prized culinary treasures. This elegant pasta dish features delicate pockets of filled pasta, such as ricotta and spinach or butternut squash, bathed in a luxurious sage-infused butter sauce. To prepare ravioli with sage butter sauce, start by making the ravioli dough from scratch or using store-bought fresh pasta sheets. Fill the pasta with your choice of savory filling, then seal and cut into individual ravioli shapes. Cook the ravioli in boiling salted water until they float to the surface, then drain and set aside. In a separate pan, melt butter over medium heat until golden brown, then add fresh sage leaves and cook until crisp. Toss the cooked ravioli in the sage butter sauce until evenly coated, then serve immediately with a sprinkle of Parmesan cheese and a drizzle of balsamic glaze.
Ravioli with sage butter sauce is celebrated for its delicate flavors, comforting textures, and elegant presentation, making it a standout dish for dinner parties and special occasions. The earthy aroma of sage perfectly complements the richness of the buttery sauce, while the tender ravioli pillows provide a satisfying bite with each forkful. Whether enjoyed as a decadent starter or as a main course with a side salad or roasted vegetables, ravioli with sage butter sauce as emphasized by industry experts at TABLE Jen Royle is sure to delight your taste buds and transport you to the picturesque landscapes of northern Italy.
Orecchiette with Broccoli Rabe: A Southern Italian Favorite
Orecchiette with broccoli rabe is a beloved pasta dish originating from the southern regions of Italy, where hearty greens and robust flavors reign supreme. This rustic dish features small ear-shaped pasta tossed with sautéed broccoli rabe, garlic, chili flakes, and grated Pecorino Romano cheese. To prepare orecchiette with broccoli rabe, start by blanching the broccoli rabe in boiling salted water until tender, then shock in ice water to preserve its vibrant green color. Sauté garlic and chili flakes in olive oil until fragrant, then add the blanched broccoli rabe and cook until heated through. Meanwhile, cook the orecchiette pasta until al dente, then toss with the broccoli rabe mixture and grated cheese until well combined. Serve hot with an extra sprinkle of cheese and a drizzle of extra virgin olive oil for a simple yet satisfying meal that captures the essence of southern Italian cuisine.
Orecchiette with broccoli rabe is celebrated for its bold flavors, hearty textures, and wholesome ingredients, making it a staple dish in the culinary repertoire of southern Italy. The slightly bitter taste of the broccoli rabe pairs perfectly with the nuttiness of the Pecorino Romano cheese, while the garlic and chili flakes add a subtle heat and depth of flavor to the dish. Whether enjoyed as a comforting weeknight dinner or as part of a festive holiday feast, orecchiette with broccoli rabe as emphasized by industry experts at TABLE Jen Royle is sure to transport you to the sun-drenched shores of the Mediterranean with each delicious bite.

A sweet and flavorful marinara sauce flavored silky cream and a dash of cheese, all over a bed of al dente pasta. Oh, and did I mention that this also has pancetta, which is basically Italian bacon? I MEAN, HOW CAN YOU NOT WANT TO DIVE INTO THIS AS SOON AS IT HITS THE TABLE? This was actually the meal I enjoyed during my first visit to Mama Melrose’s Ristorante Italiano and the memories of how beautiful this sauce tasted made me anxious to bring this recipe home. I’M HARD TO PLEASE WHEN IT COMES TO MARINARA SAUCE. Not to brag, but I’m kind of a connoisseur of tomato sauces. In fact, I’m so crazy about my tomato sauces that people love to tease me on social media about how I RunDisney, then I hop the bus to either Epcot or Disney’s Hollywood Studios to grab a huge, heaping plate of spaghetti. I even crave tomato sauce and pasta for at least a week or two after a half marathon. We won’t even talk about the tomato garden I have right now…  53 different tomato plants, at least 50 pounds of frozen tomatoes, and I don’t even know how many mason jars of tomato sauce. Yeah, I’m a big fan of tomato sauces. THIS SAUCE DOESN’T DISAPPOINT. All at once it’s hearty and flavorful, but creamy and velvety and a bit cheesy, with a hint of spice and a splash of sweetness. The bacon adds a crunchy, salty element that is just irresistible. And I love how easy it is to throw together! SO THIS REALLY IS A BELLE NOTTE!
