Clos de la Coulèe de Serrant Nicolas Joly 2020 Francia, Loira AOC Culèe de Serrant Chenin Blanc (100%) Bianco; Biologico; Biodinamico; Triple A; Vignaioli Indipendenti 14,5 % Nicolas Joly è conosciuto come il pioniere del biodinamico (dal 1981), il quale ha fatto storia creando uno dei vini più conosciuti della regione. Egli nel 1962 fondò l’omonima azienda insieme alla sua famiglia a Savennieres in Loira (parte Ovest), vicino alla Fortezza di Roche aux Moines, dove si respirano le vestigia delle battaglie Celtiche, Medievali e Carolingie di Giovanni senza Terra. Joly Recuperò un vigneto circoscritto (Clos) piantato nel 1130 dai monaci cistercensi e l’antico monastero in pietra. Proseguendo la coltivazione ormai secolare di Chenin Blanc per tutti i suoi vini, decise di implementare la filosofia biodinamica che storicamente era in parte utilizzata nella fredda Loira. Egli diede vita al Crù Clos de la Coulée de Serrant, ormai leggendario, conquistando l’AOC specifica e Monopole (dunque è l’unico vino che si può trovare in questa denominazione). Esso nasce da viti di 40-80 anni allevate a guyot su terreni scistosi, tanto ripidi da costringere i contadini a lavorare il terreno con cavalli e aratro. Le rese per ettaro sono tra le più basse di Francia (20-25 ettolitri/ha) e nei vigneti pascolano pecore per pulire il suolo, usate tisane calmanti a base di aglio e timo e letame proveniente da una mandria di dieci mucche e due Tori di Nantes (in via d’estinzione); non utilizza erbicidi ma copper e solfiti vulcanici. L’uva viene vendemmiata manualmente quando pienamente matura in 4 o 5 passaggi per poi fermentare lentamente con lieviti indigeni in fusti di rovere da 500 litri di secondo passaggio ed affinare 6-8 mesi sulle fecce fini nei tini. Il vitigno è particolarmente adatto a questi climi rigidi e freddi.
