I may not be a Scot, but I will celebrate any country’s national feast if it’s a chance for good food, music and merriment! Thus on Burns Night, I pour myself a glass of good Scotch Whisky, read The Bard of Ayrshire’s poetry, listen to his songs, and cook a warming Scot feast -though I have yet to try haggis, I reckon I shall when I am in Scotland! Even better, is to have a lovely lassie over, to share Cranachan with. That, I know, Rabbie would approve! Have a good one!
Ingredients (serves 2):
1 cup fresh raspberries, rinsed
2 tablespoons Elderflower Sugar (or plain caster sugar)
2 heaped tablespoons whole rolled oats
1 tablespoon fragrant pure honey (like heather)
1/2 cup double cream
1 heaped tablespoon fragrant pure honey (like heather)
1 1/2 tablespoon good single malt Scotch Whisky (like The Glen Grant Arboralis)
Save a few whole raspberries. In a small bowl, mash the rest of the fresh raspberries with a fork until you have a chunky purée. Stir in Elderflower Sugar until completely dissolved. Set aside.
Toast whole rolled oats in a dry frying pan until they start colouring and smell nutty. Remove from the heat, and divide toasted oats between two small bowls. Stir heather honey into the oats in one of the bowls, keep the other plain. Set aside.
Pour double cream in a medium bowl, and whisk energetically until soft peaks form. Whisk in the honey, and continue whisking, gradually adding the Whisky. You want the cream to just hold, and remain soft. Gently fold in plain toasted oats. 
Spoon a tablespoonful Elderflower raspberry purée at the bottom of each of two glasses. Top with Whisky and honey oat whipped cream, and a few fresh raspberries. Repeat. Finish with a drizzle of the purée, a couple of fresh raspberries, and honey toasted oats. 
Chill slightly before serving.
Serve Cranachan for dessert, with a glass of good Scotch Whisky.

Snow White and the 1026 Dwarfs
Snow White woke up in the strangest little bed!   She'd happened upon the small, cozy house deep in the woods, found nobody at home, and promptly crashed in the first bed she'd spotted.  Sleep claimed her then, dragging her away to a place of relative peace and calm... carefully letting her ignore how tiny all the furnishings were, how oddly low were the ceilings and fixtures. And now, the next morning!  What odd little men surrounded her!  Normally she'd be alarmed by close proximity to so many strangers, but the events of the past day had granted her an oddly calm outlook on life.  Nothing much rattled her anymore. Snow White blinked sleepily, yawned, and stretched.  The men watched her every movement, transfixed. "Do you talk?" She asked experimentally. One older man -- tiny, rotund, and wiser than the rest with a long white beard -- glanced around at the others and nodded.  He adjusted his spectacles and stepped forward. Want to beat away this sweaty summer with some freshness? Beat the summer heat with this tasty mango lassi. All you have to do is grab upon some sweet pulpy mangoes and you are good to go! Mangoes are everyone’s favourite especially when it’s amalgamated with yogurt. It’s thick, it’s creamy, and nutty at the same time. Ingredients: • Milk 1 cup (can easily substitute with vegan milk)• Yogurt 2 cups (can easily substitute with vegan yogurt• Mango puree of 5 mangoes if small 3 mangoes if large• Sugar ½ cup (if the mango is less sweet you can add more, adjust accordingly)• Cardamom Powder in a pinch• Saffron a pinch• Dry Fruits of your choice (preferably raisins, cashews, pistachios, and almonds) Instructions For Mango Puree: Mango in the blender jar • Take a blender jar and add the mangoes to make a puree.• Take the puree out and keep it aside.For the Milk• Add a pinch of saffron and cardamom powder to your warm milk.• Keep it aside, wait for the saffron to dissolve. It will give a nice colour to the milk. For the Lassi: • Take a blender jar, add the yogurt mango puree, milk (has to be at room temperature), and sugar• Blend it properly for a nice creamy thick lassi. For Serving: • Serve it chilled.• Pour it into a serving glass and garnish it with chopped dry fruits of your choice. Enjoy your Lassi.
