Something about Mai and Roni is that they're not fully good/bad unlike Jack and Aku.

Aku is pure evil but Roni is just evil because that's what he was taught to be. (Muran as well)

And Mai is good because of the same reason. She has a kinda distorted sense of morality and only got guidance from Jack so yeah

Mai hating humans would make sense because the ppl that were cruel to her also included humans. (She probably also hated humans for a while in pom canon)
