Just Keep Baking #27 Mexican Wedding Cookies
Sul Sul, gerbits. Today we are going to be making something that is very versatile. That can be found in many different countries. We are going to be making Mexican Wedding Cookies.
In a medium sized mixing bowl you are going to mix together the butter, sugar, and vanilla.
Stir in the flour and the salt. Blend it in.
Now you are going to mix in the nuts.
Chill the dough, for about 30 minutes.
Preheat the oven for 400℉.
Roll the dough in 1” balls.
Place them on an ungreased baking sheet. These cookies do not spread so there will not be any problem putting them close to each other.
Bake for 5 minutes on the top rack, and then move the baking sheets to the bottom rack for 5 minutes.
You don’t want these cookies to be brown.
While they are still warm, roll in confectioners’ sugar. Cool them for a little bit, and then roll them once again in confectioners sugar.
These cookies were so good. I have had these cookies before, but this is the first time that i have ever made them. They were really simple and easy to do. I have a feeling that I am going to be making these cookies a lot.

Today I give thanks to cake decorators, calligraphers, artists, surgeons, and anyone else that successfully wields a steady hand in their profession, because I DO NOT possess this talent aaaand this has been very difficult.
Writing, not baking, that’s fine. I’m a cursive writer, it’s taking everything in my power to not chicken scratch my way through these, so help me 🤦♀️ My writing is not easy to read, and these are for my kid’s cookie swap. This is a gift many take for granted ijs. I’d rather bake them. I suck at this 😆

This recipe has so many different names. Mexican Wedding cookies, Italian wedding cookies, Russian tea cookies and yes all of them are going to have subtle differences from place to place. but most of them have two things in common. They are walnut cookies covered in powdered sugar.
