Chef’s Notes for the Advanced Dungeons & Dragons 1st Edition Monster Manual, S-Z

Sahuagin: Passable as part of a fish stew, but not worth preparing separately.
Salamander: From a kitchen perspective, a salamander is a type of fire elemental no different from any other.
Satyr: Like nymph, a bad idea to eat for multiple reasons. There is a market in satyr parts for use in stamina-enhancing potions of dubious effectiveness.
Scorpion, Giant: Generally similar to lobster. The tail is poisonous and must not be served. All of the meat is poisonous to elves and most half-elves.
Sea Hag: Filthy and greasy; should not be handled in any well-run kitchen.
Sea Horse, Giant: Not at all similar to horse, very similar to stickleback if filleted thin.
Sea Lion: Do not confuse the common sea lion with the monstrous. The common sea lion is blubbery and fairly tasteless. The monstrous sea lion cooks like lion and shark, with a unique marbled texture in the midsection.
Shadow: A shadow is incorporeal, and binding one into a physical object does not impart any flavor or other culinarily valuable properties to the object.
Shambling Mound: Not edible per se, but quite excellent boiled to begin a soup stock. Strain the liquid very thoroughly through a fine mesh before adding other ingredients, as even a small solid piece of shambling mound may cause nausea.
Shark: Most varieties of shark are similar to one another and are best broiled or barbecued.
Shedu: Otherwise cooks according to its parts, like beef and giant eagle respectively, but should not be served or eaten as divine retribution is almost certain. Cremation is advised, not using a food oven.
Shrieker: Poisonous shriekers exist in some areas. A local mushroom expert's advice is recommended. If not poisonous, shriekers are similar to button mushrooms. Ensure that you have thoroughly shredded the gas bladder so that diners will not be inadvertantly deafened.
Skeleton: Regardless of the species of origin, animated skeletons tend to be too old to have a use in soup or any other dish.
Skunk, Giant: Do not purchase the hind portions of giant skunk meat if you cannot be certain that it has been properly dressed, as any remaining pieces of stink gland will dramatically ruin your dinner. Otherwise similar to giant rabbit.
Slithering Tracker: Grills or boils like sausage if, and only if, it has been drinking the blood of an animal which is suitable for a blood sausage. If it has no blood in it, or if it has been drinking human or otherwise inappropriate blood, or if you do not know what type of blood it contains, not edible.
Slug, Giant: Lacking in visual appeal, but otherwise interchangeable with escargot.
Snake, Giant: A giant snake should be prepared according to the same procedures as a common snake, considering the specific type of snake it is. An additional precaution is that, in general, a snake that has recently eaten human, demihuman, or humanoid flesh should not be eaten, although exceptions exist.
Spectre: Cannot be eaten in any physical sense. It is possible to drain the energy of a spectre in a life-sustaining manner, but this process has no useful resemblance to any cooking activity.
Sphinx: Assuming a sphinx was not sacred to any deity likely to retaliate, cut and serve according to individual parts. The transitional parts of most sphinxes are fatty and difficult to cook but not unsafe.
Spider: Most spiders are inedible. Phase spiders are barely edible but may cause diarrhea into the ethereal plane (10% chance).
Sprite: We have found no truth to rumors that a sprite can be distilled into a refreshing clear citrus beverage.
Squid, Giant: Inspect carefully, as pieces of harpoon or other foreign object may be lodged in the tentacles. Be sure to cook thoroughly, which is likely to require slicing thin. A mild numbness in the lips and tongue may occur but this is harmless and does not interfere with the sense of taste.
Stag: In many areas, it is worth knowing how to prepare stag, as trophy hunters who are only interested in the head flood the meat market during hunting season.
Stirge: Quite disgusting, even to beings usually immune to disgust.
Strangle Weed: Once killed, not much different from other kelp. Good but not exceptional in soup or as a wrap.
Su-Monster: Requires +2 or better cookware, and not remotely worth the investment. Skip unless you already happen to possess the requisite magical tools for another reason.
Sylph: Simply a winged nymph, and no different from a ground one for our purposes.
Thought Eater: Tastes like duck. The meat has a tendency to slip into the ethereal plane while being chewed. This is harmless.
Tick, Giant: No food value. If found engorged in a dragon's lair, the digested dragon's blood inside may be a valuable potion ingredient.
Tiger: Tougher and drier than lion, but superior to lynx or bobcat.
Titan: Similar to human flesh, but generally not considered an acceptable workaround to prohibitions on the eating thereof.
Titanothere: More like tapir than rhinoceros, despite size and appearance. Best rare.
Toad, Giant: Generally identical to giant frog. The ice toad is an exception and should only be served pickled, to avoid a rare but lethal toxic reaction.
Trapper: The stone-like skin of a trapper, cleaned thoroughly, is an excellent surface for cooking bread and will give the bottom crust a salty tang. The trapper is not itself edible.
Treant: No more edible than any other wood. The wood of any particular treant will resemble the wood of some particular type of tree, so a mesquite treant (5% chance per treant, only in biomes with naturally occuring mesquite) may be useful for smoking.
Triton: Unlike merman, the fish portion of triton is safe to eat if prepared well-done. Do not attempt to serve the top half.
Troglodyte: The appearance and aroma resemble gnoll, and troglodyte meat might be mistaken for gnoll meat. The flavor is sharply nauseating, however. It is unclear whether it is poisonous, as it is almost never swallowed.
Troll: Do not attempt to cook. Cremate or dissolve in acid quickly as a safety precaution.
Turtle, Giant: The flavor of giant turtle can vary dramatically from population to population, even between very nearby islands. Wizards who have studied such differences often write that understanding them is useful in developing new species, and a giant turtle tasting event often attracts otherwise reclusive and thrifty local wizards to a restaurant opening.
Umber Hulk: Umber hulk is almost impossible to roast correctly, as inhaling the aroma requires a save vs. magic every 3 rounds or causes confusion.
Unicorn: Requires a great deal of trouble to acquire and is disappointingly horsey.
Vampire: Dispose of a vampire carcass using appropriate ritual methods. Cooking and eating a vampire will not necessarily prevent it from rising again. Worse still, if any blood remained in the flesh, those who ate the blood are likely to become thralls when it does rise.
Wasp, Giant: Similar to giant hornet and not at all similar to giant bee. Avoid.
Water Weird: No different from any other water elemental once killed, which is to say no different from water.
Weasel, Giant: Greasy but otherwise similar to giant rabbit.
Whale: Easily stewed and inexpensive in bulk when it is available. There may be druidical objections.
Wight: If any material portions of a wight are available, the wight has not been fully slain and is certainly not a recipe ingredient.
Will-o-Wisp: It is best not to attempt to develop a means of cooking will-o-wisp. Many chefs have wasted 2d4 months of research time each in fruitless chases.
Wind Walker: There is a difference from other air elemental, but whether it is superior or inferior is a purely subjective matter with no consensus. Summoning a wind walker specifically to kill and eat it is inadvisable, as others may seek revenge, in contrast with the normally solitary behavior of other air elementals.
Wolf: Generally no different from dog. The worg has a hint of goat.
Wolverine: Interchangeable with badger. False myths about use in a potion of regeneration may inflate the market price.
Wraith: While rituals exist that can give a wraith flesh, undertaking them for the sake of trying its meat is suicidally misguided.
Wyvern: Do not expect wyvern to taste like dragon. The flavor is most like scorpion, if anything, although the methods of preparation are the same as copper dragon.
Xorn: We have not fully ruled out the possibility that xorn can be somehow cooked, although neither metal nor earthen cookware is effective. Suspending a Tenser's Floating Disc over an open fire has been our most promising starting point.
Yeti: Possibly the least appetizing large humanoid, excluding those that cause nausea by their very nature. Tolerable dried, salted, and eaten cold.
Zombie: Aside from fringe use in certain cocktails, not part of any well-stocked kitchen.

The basic idea is simple though, the higher the BTU output, the faster you’ll be able to grill your food. Infrared Burner VS Traditional Burner
BTU: A British Thermal Unit (BTU) is the amount of heat energy needed to raise the temperature of one pound of water by one-degree Fahrenheit. This is the standard measurement used to state the amount of energy that a fuel has as well as the amount of output of any heat generating device.
Your professional grill will have a BTU output associated with each burner. The number of burners your grill will have will range from 3 – 6, sometimes even more. Entry level professional grills will usually have 3 burners, which is a very common configuration. BTU output per burner can range from 10,000 to 20,000 depending on the grill manufacturer. Most of the professional grills on the market today will also come with an infrared rotisserie burner in the rear wall of the grill. The infrared rotisserie burner is usually built-in to the grill, but some companies will charge extra for the rotisserie motor as well as the spit. Most of the cheaper brands don’t have rotisseries and if they do, they’re not very good.
The grilling surface is another extremely important feature of a professional barbecue grill. The barbecue grill surface will be measured in square inches. It doesn’t take a rocket scientist to conclude that more grilling surface is beneficial. The grilling surface or area depends on the barbecue grill you purchase. A great question to answer before purchasing a grill is, “How many people will you be grilling for?” This answer will give you a better idea of what grill range you should be considering. If you know you’ll be throwing huge BBQ blowouts every weekend, you’ll probably want to invest in a larger grill.
