my bulk bhuna masala recipe, mostly from memory and adapted from dassana's lobia recipe. this is enough for 4 cups of lentils. im mostly writing it here so i don't lose the ratios.
Prep:
1 cup chopped onions
1.5 cup chopped tomatoes
> for a smoother curry, you chop smaller and remove tomato skins. you can also blitz the masala in a blender after cooking it.
1 tablespoon minced garlic, ginger and green chillies each
2 teaspoon whole cumin seeds
2 teaspoon garam masala
2 teaspoon kashmiri red chilli powder (adjust downwards if using other chilli powder)
1/2 teaspoon turmeric
1 tablespoon ground coriander/cilantro powder
Method:
Heat 3 tablespoons neutral oil with a high smoke point on medium heat in a wok or kadhai. If you're made of money you can use ghee for a richer flavour. Add cumin seeds and let them crackle and sizzle on medium heat. Do not let them turn black.
Add chopped onions, sauté. Stir often on medium-low until the onions become translucent and have softened but not browned.
Add garlic and repeat.
Add ginger and green chillies, cook till ginger doesn't smell raw anymore.
Add tomatoes and all the ground spices. Stir, then salt to taste.
Cook on a low heat, till the tomatoes are no longer raw. Continue cooking till you see oil separate from the mixture.
btw if you make a lot of north indian dals and curries like i do, you can prep a lot of bhuna masala in advance and freeze it in a covered icetray (preventing freezer burn and making it easy to portion) and then directly cook it with your lentils/curry.

2 Medium Tomatoes
1 Green Chili
1 Inch Ginger
3 Garlic Cloves
1 tsp Turmeric Powder
