Demise is, if I recall correctly, the Demon king. The God of destruction and demons. Which can translate well enough into God of Death. In Loz proper his only real motives are he’s a being of pure evil and destruction and wants to rule over everything and destroy everything. Which I honestly find boring. I find it more compelling if he was a Golden God that was shunned for his dark and gloomy destiny. A god of destruction and death whose purpose was lost to time when he was locked away and eventually killed. What if the reason reincarnation exists like it does is because there is no god to welcome them into the afterlife now? The afterlife is barren, the souls cannot go home, their caretaker has been taken from them. Hylia didn’t think of the consequences of killing two gods. Now time does not flow properly and souls do not rest peacefully. Her and demises conflict had dramatic consequences on mortal life. It’s not just Hylia to blame in this, Demise has just as much blame. It was their conflict over it all. Demise saw Hylia getting attached to mortals and warned her of their eventual fate. Hylia of life and light and Demise of death and destruction. Hylia wanted her favorite mortals back and stole them from the afterlife, Demise took offense to this and soon grew tired of not letting souls rest properly. Souls could reincarnate eventually yes, but they needed rest first, they needed time to recover. But Hylia kept bringing certain spirits back to life, a particularly knight was her favorite. Demise could see the tiredness of the heroes soul, he needed rest, proper rest. There was a war over this one knight. This knight had been good friends with both gods in his life and death. He could not choose a side.
I went overboard with this

I have come to the conclusion that Ghirahim could absolutely destroy Demise in combat. The only move Demise ever used that wasn't with his sword (Ghirahim) was punching. Not only can Ghirahim fight with not one, but two swords, he also employs daggers, those diamond dart things, he teleports, and can grab your own sword and throw you over his shoulder. Demise wishes

It’s been a minute since I tried playing SS but personally I thought Koloktos was so cool with all the gold arms. Also getting to hit it with its own giant sword was a big plus

Symbolism attacked me.
So this drawing features Ghirahim looking somewhat subdued, with Demise’s right hand on his chest (held there by Ghirahim’s right hand), Ganondorf’s left hand more towards Ghirahim’s neck (his arm being touched by Ghirahim’s left hand), and Zant’s right hand holding and studying the strand of pearls Ghirahim is wearing (Ghirahim doesn’t touch his hand, he doesn’t even acknowledge it).
Now, I’m crazy, so there’s a lot of symbolism.
Demise and Zant using their right hands vs Ganondorf using his left, Ganondorf doesn’t have the best of intentions compared to Demise and Zant, Ganondorf is what Ghirahim knows intellectually is Demise in some form, and thus goes to follow him since Demise isn’t there.
Ganondorf also could theoretically choke Ghirahim easily from this position, but he’s more interested in being above Ghirahim and sapping Ghirahim’s thoughts to use them, while Ghirahim is devoted to a nearly hopeless level.
Demise has his hand on Ghirahim’s chest, over his heart and where the soul core is hidden. He holds Ghirahim’s heart in his hand, and Ghirahim wants his heart to be in Demise’s hand. (His hand is only in that position because my version of Demise absolutely places Ghirahim as a priority over himself in many situations because of how I write him.)
While Zant is not quite touching him in any meaningful way, he is using the pearls as a reassurance to himself because he gave them to Ghirahim. Ghirahim is a comforting weight in his hand for him. And Ghirahim is letting him do that, because he truly doesn’t mind and Zant views them as equals.
This is also an indication of Ghirahim offering his hilt to Demise and Ganondorf and (technically in my writing and with a clearer boundary on ‘you don’t get to swing me around like a crazy person’) Zant.
But Zant never took the hilt, he preferred the person and spending time.
Ganondorf took the hilt only as a last resort and did so forcefully because he preferred to have another fighter instead of a weapon.
And Demise understood the amount of trust and love that it took Ghirahim to do that in my writing, so he took the hilt respectfully since he got Ghirahim after Ghirahim was already traumatized.

Has anyone else ever found it curious that Demise’s whole thing was summoning down thunder and lightning, and his incarnation of hatred was a male Gerudo named Ganondorf, but Urbosa and Riju (who are also Gerudo) are the Sages of Lightning/Thunder?

I always found that super interesting.

I already said this a while back but I will say it again: It would’ve been so much narratively better if Link’s fight with Demise took place at Skyloft. 
One of the main issues I have with Skyward Sword is that The Skyloftians are super oblivious to the dangers throughout the entirely of the game. If they saw Demise they would get a grasp the danger that Link & Zelda were fighting against. 
Like instead of fighting Link in that void, Demise initially dismisses him and makes a beeline for the Gate of Time, but not before challenging Link to chase after him if he dared. Lets say Demise isn’t at full strength to use the Triforce so he heads over the Skyloft to cause trouble. The citizens are shocked & terrified. The Skyknights try to fight Demise, but the Evil God swats them away like insects.
Link gets back to Skyloft. If you thought Link was pissed when Ghirahim took Zelda, he be even more so seeing his home being attacked by monsters. Link, and maybe Groose & Impa, defends the citizens from Demise’s forces. In doing so inspires some Skyloftians (specifically maybe the ones from the Gratitude Crystal quests) to try to help Link fight back, proving Demise’s belief that humans being weaklings wrong. With his forces taken down Demise takes Link to an arena he crafted and they have their duel far from Skyloft but close enough for the citizens to see.
Link defeats Demise, much to the surprise to many of the Skyloftians. They couldn’t believe that Link, the sweet boy know to be an airhead, sleepy, and maybe lazy, killed the God with ferocity, and made it out alive
After that, the game would end the same as it did. Link & co returns to the Sealed temple to see Zelda alive, Fi & Impa saying their goodbyes, and Link & Zelda at the Goddess Statue.
