you’d lost yourself in more ways than one only a month ago. life had became so dull and boring after the five boys left you, so much so that you didn’t want to remember. you didn’t want to remember their names and their faces, and the time you’d spent with each of them. hell, you didn’t even want to remember the person you’d been before you met them.
you weren’t yourself. your smile didn’t reach your eyes, you hardly spent time with your friends and you definitely didn’t keep up with the band anymore. it was as if life had lost all meaning.
so you did the only thing that felt right — rid yourself of any memories relating to yeonjun, soobin, beomgyu, taehyun and kai.
not that you remembered doing it, but you still weren’t sure if you were happy with the change. you still weren’t yourself, and you didn’t even know why. the old version of you would know, because she’d been the kind to spend most of her time alone and use any spare time to work on her radio show. the new version of you couldn’t even remember what she used to do in her spare time.
naturally, you tried to fill that time. when sunghoon invited you to his friend’s party, you agreed despite not being able to come up with anything worse you’d rather do with your time.
he’d left you about an hour ago. you’d found the perfect spot against a wall and slowly sipped on whatever cherry-red liquid it was that they’d been serving. it was sickly sweet and left a bitter taste on your tongue, but you didn’t mind as long as it did its job.
it wasn’t until half an hour later that you decided to finally give up your patch of wall and go find sunghoon. when you spotted him, he was talking with his friend that you’d met a few times before. his name was jake, and he spoke fluent english with an australian accent. you assumed he was from australia, but never took enough interest in him to find that out.
‘oh, y/n,’ sunghoon called you over, most people turning their eyes towards you in shock that you’d ever be at a party. ‘do you want another drink?’
‘no, i’m fine,’ you smiled, feeling awkward in jake’s presence. ‘i actually think i’m going to leave soon.’
‘you need a ride?’ jake spoke, making you whip your head around to face him. ‘not from me, from a sober friend.’
‘that’s okay,’ you politely declined. ‘it’s not too far from here.’
sunghoon handed his cup to jake and stepped closer to you, his eyes showing his concern. he wrapped his arms around you in a hug, totally out of character for himself.
‘call me when you get home,’ he whispered. ‘and don’t get into any trouble, okay?’
‘got it,’ you smiled, patting his head affectionately.
the cold air of the night was refreshing, but you certainly regretted not bringing a jacket for yourself. you walked with your arms wrapped around your body, checking your phone every few minutes to see what time it was. as you scanned the area out of boredom, you spotted somebody walking on the opposite side of the street. they turned to face you upon feeling your gaze on them, and you were quick to look back down at your feet.
then you could feel their eyes on you, so you looked back to see they didn’t avert their gaze as you had. you shook it off, deciding to stop by the upcoming store for a hot drink.
you sent one last look at the stranger across the street before you turned left into the convenience store. the door beeped as it swung open and closed again behind you, the young cashier looking up from their homework to acknowledge you.
the coffee machine was calling your name, despite the late hour. you grabbed a cup and began tapping on the touchscreen when the door beeped again. turning back, you failed to realise it was the stranger from earlier who was coming in. well, it was hard to recognise somebody whose face you had never seen before.
you grabbed your coffee and a lid, making your way over to the cashier and placing the cash down on the counter. he lazily took it before you walked away, continuing your walk home while gratefully sipping from your coffee.
‘excuse me,’ you stopped in your tracks, turning to see somebody standing not too far from you. ‘you forgot your change.’
‘oh, i thought i had the exact amount,’ you stepped forward, and he held his palm out to you. ‘thank you.’
‘do you mind if i ask for your name?’ taehyun was hopeful. something about you left him intrigued, and he knew he couldn’t walk away without finding out more.
‘oh, it’s y/n,’ you looked at him with confusion. ‘why?’
‘no reason,’ he shrugged. ‘you have a pretty name.’
‘well, thank you,’ you smiled. ‘what’s yours?’
before he could speak, his phone began to buzz with a call. he fished it out of his pocket and held it up to his ear, mouthing an apology before turning around and walking away. you froze, watching him disappear down the street. was that all?
of course, you began to follow him. when he noticed you at his side, he lowered his phone and covered the microphone before looking at you expectantly.
‘i didn’t get your name,’ you reminded.
‘it’s taehyun,’ he still had that same emotionless look on his face as he began talking on the phone again. ‘sorry… no, nothing’s wrong. can i call you back?’
‘well, taehyun,’ you stopped in front of him, folding your arms across your chest. ‘what the hell was that?’
‘what do you mean?’ he dropped his phone back into the pocket of his jeans. ‘i can’t ask for your name?’
‘i don’t understand why you’d ask that and then walk away from me,’ you frowned.
‘i had to take a call,’ he explained simply. ‘aren’t you cold?’
‘i’m very cold, but that’s not what’s important at present,’
‘do you want my coat?’
‘what? no…’
‘take it,’
before you could refuse, he was already slipping the material off his shoulders and handing it to you. you stood staring blankly at him as he held it out to you, so he took matters into his own hands and wrapped the coat around your shoulders. the action resulted in him accidentally pulling you closer, and you gasped as you almost lost your footing and fell forwards into him.
‘seriously, i don’t need this,’ you huffed. ‘how will i even give it back to you?’
‘give me your phone,’ he held his hand out, which you stared blankly at before looking back up at him with confusion. ‘relax, i’m not robbing you.’
‘and how could i know that for sure?’ you shot back, but still held your now unlocked phone out towards him. he took it, saved his contact to your phone and sent a text to himself before giving it back. ‘you could have just asked for my number earlier.’
‘i didn’t want your number,’ he lied, evident in his smile. ‘you were the one that chased after me.’
‘you are a mystery, taehyun,’ you smiled, dropping your phone into the pocket of his coat.

you hadn’t expected to click so easily with a stranger. you’d never been a believer in love at first sight and thought that time was what built a strong relationship, not chance. but talking to taehyun began to change your mind. it was so easy to talk to him because he understood you on a level nobody else could.
he matched your energy perfectly whenever you talked over text, and always knew the right thing to say over the phone. whenever you talked about your feelings, he didn’t make you feel judged or alienated, he simply listened. and taehyun, of all people, knew exactly how you were feeling.
you weren’t one to invite strangers to your home, but taehyun didn’t feel like a stranger to you. it felt as though you’d known each other since the beginning, and not only for a month.
now taehyun was a frequent visitor at your dorm, and all of your roommates knew him by name. they teased you about it often, pointing out the way he looks at you or the way you trip over your own words around him. not that you minded, the idea of a romantic relationship with him had always been a thought in the back of your mind.
‘can i ask you something?’ you looked over at taehyun before quickly looking away. he noticed you were nervously fiddling with the sleeve of your top but made no move to stop you.
‘sure, go ahead,’ he gave you his full attention.
‘what made you ask for my name?’ you met his eyes then, unsure whether you should look away or not.
‘i don’t know,’ he shrugged. not exactly the answer you were looking for. ‘but i’m glad i did.’
‘i’m glad you did too,’ you smiled shyly, dropping your gaze to your own hand that still fiddled with the material of your sleeve. this time taehyun did reach his hand over and place it atop yours, making the movement stop.
‘if you need me to be honest, i thought it was strange that you were walking away from a lively party all alone,’ he began, your ears practically perking up with interest. ‘i didn’t intend to follow you, we just ended up in the same place at the same time. i guess i felt like i had to do something, because walking away would probably be my biggest regret.’
‘then why were you hesitant even after asking?’ you didn’t mean to pry, you were just so curious. taehyun barely ever opened up to you like this, so you wanted as much information as he was willing to give you.
‘i don’t normally do things like that,’ he shrugged, his gaze faltering before he looked away completely. ‘i liked this girl once, a long time ago. i liked her so much but i did nothing to let her know, and she ended up dating one of my closest friends. i was so angry with him and her for falling in love and taking away my chance at love, only to find out it had all been a lie when she confessed to putting my friend under a love spell.’
you didn’t mean to gasp out of shock, it just sort of happened. taehyun looked back at you, and then down at your hand which was now tightly gripping his and close to cutting off his circulation.
‘i’m sorry,’ you whispered. ‘go on.’
‘i guess i just stopped believing in love after that,’ he looked into your eyes. ‘how could i possibly believe in love when the example i was shown had been clouded by deception? but when i saw you, i don’t know… something told me to try again.’
‘so… this is more than just a friendship to you?’ you wanted to sound casual and unbothered, but not too unbothered that it sounded like you were rejecting him. you could only hope he couldn’t hear your heart beating a mile a minute.
‘i don’t typically hold hands with my friends on their couch like this,’ he almost smirked, making you look down at your hands and finally notice the tight grip you had on his. ‘you don’t have to let go just because i pointed it out.’
‘i’m sorry, you just make me so nervous,’ now, why would you admit that out loud, to his face? ‘i mean, not in a bad way.’
‘you don’t need to apologise to explain yourself to me,’ he smiled wider. ‘i like holding your hand.’

nothing can ever be rushed into. there’s no time limit or deadline when it comes to love, only statements spread as propaganda by the majority. at least that’s what you were learning to believe when it came to taehyun. you craved for his presence. you’d lost yourself and didn’t know where to begin again, but he seemed like the perfect starting point. and he wanted to fall in love, something easily achieved when it came to you.
people say that you need to love yourself before you can love somebody else, but neither of you believed that. the two of you could grow together — you needed each other to grow.
without taehyun, you’d still be walking aimlessly. you didn’t know what you wanted or needed before you met him, but now you were starting to learn. he was your safe place for whenever you sought advice or guidance, or even just a hand to hold. the way he loved was subtle but intense, the exact thing you needed.
it was another rainy day, literally and figuratively. you had no motivation to do anything, staying wrapped up in your bed and mindlessly fiddling with the corner of your duvet cover.
taehyun was good at sensing these things. you explained to him how you felt and about the months that seemed to slip your mind, so he knew the signs. you would reply with one or two words and disappear for hours, and he knew what he needed to do.
the door pushed open softly and you lifted your gaze to see him standing in the doorway. he was holding a bag in one hand that seemed to be the only thing not ruined by the rain — you couldn’t say the same for his hair and clothes. you climbed out of bed, gratefully wrapped your arms around his waist and rested your head against his chest.
he reciprocated the hug, wrapping his arms around you and tightening his hold reassuringly.
‘i’m sorry i couldn’t get here sooner,’ he mumbled, but you shook your head and pulled away. ‘band practice.’
‘you’re too good to me,’ you frowned.
‘if that’s the case, i can go and throw all of these snacks away,’ he lightened the mood. there was nothing worse than when you felt guilty for feeling this way. nobody understood the experience of gaps appearing in your life like he did.
‘please don’t,’ you smiled, making him smile in return.
‘you know i’ll always be here for you,’ he placed his hand on your back and pulled you back towards him. ‘don’t feel guilty for needing or wanting me to be around, the feeling of being wanted by you outweighs that.’
what did you do in a past life to deserve him? you groaned with frustration, unable to express how thankful you were for him. you leaned closer to kiss him, gripping his forearm for support before you pulled away. taehyun smiled pridefully, making you laugh.

• Bren Light Machine Gun
The Bren gun is a series of light machine guns (LMG) made by Britain in the 1930s and used in various roles until 1992. While best known for its role as the British and Commonwealth forces' primary infantry LMG in World War II.
At the close of the First World War in 1918, the British Army was equipped with two main automatic weapons; the Vickers medium machine gun (MMG) and the Lewis light machine gun (LMG). The Vickers was heavy and required a supply of water to keep it in operation, which tended to relegate it to static defence and indirect fire support. The Lewis, although lighter, was still heavy and was prone to frequent stoppages; its barrel could not be changed in the field, which meant that sustained firing resulted in overheating until it stopped altogether. In 1922, to find a replacement for the Lewis, the Small Arms Committee of the British Army ran competitive trials between the Madsen, the Browning Automatic Rifle (BAR), the Hotchkiss, the Beardmore Farquhar, and the Lewis itself. Although the BAR was recommended, the sheer number of Lewis guns available and the difficult financial conditions meant that nothing was done. Following numerous trials, the British Army adopted the Czechoslovak ZB vz.26 light machine gun manufactured in Brno in 1935, although a slightly modified model, the ZB vz. 27, rather than the ZB vz. 26 which had been submitted for the trials. The design was modified to British requirements under new designation ZGB 33, which was then licensed for British manufacture under the Bren name. The major changes were in the magazine and barrel and the lower pistol grip assembly which went from a swivelling grip frame pivoted on the front of the trigger guard to a sliding grip frame which included the forward tripod mount and sliding ejection port cover. The magazine was curved in order to feed the rimmed .303 SAA ("Small Arms Ammunition") cartridge, a change from the various rimless Mauser-design cartridges such as the 8mm Mauser round previously used by Czech designs. These modifications were categorised in various numbered designations, ZB vz. 27, ZB vz. 30, ZB vz. 32, and finally the ZGB 33, which was licensed for manufacture under the Bren name.
The Bren was a gas-operated weapon, which used the same .303 ammunition as the standard British bolt-action rifle, the Lee–Enfield, firing at a rate of between 480 and 540 rounds per minute (rpm), depending on the model. Propellant gases vented from a port towards the muzzle end of the barrel through a regulator with four quick-adjustment apertures of different sizes, intended to tailor the gas volume to different ambient temperatures. The vented gas drove a piston which in turn actuated the breech block. Each gun came with a spare barrel that could be quickly changed when the barrel became hot during sustained fire, though later guns featured a chrome-lined barrel, which reduced the need for a spare. The Bren was magazine-fed, which slowed its rate of fire and required more frequent reloading than British belt-fed machine guns such as the larger .303 Vickers machine gun. The slower rate of fire prevented more rapid overheating of the Bren's air-cooled barrel, and the Bren was much lighter than belt-fed machine guns, which typically had cooling jackets, often liquid filled. The magazines also prevented the ammunition from getting dirty, which was more of a problem with the Vickers with its 250-round canvas belts. The sights were offset to the left, to avoid the magazine on the top of the weapon. The position of the sights meant that the Bren could be fired only from the right shoulder.
In the British and Commonwealth armies, the Bren was generally issued on a scale of one per rifle section. An infantry battalion also had a "carrier" platoon, equipped with Universal Carriers, each of which carried a Bren gun. Parachute battalions from 1944 had an extra Bren in the AT platoon. The 66-man "Assault Troop" of British Commandos had a nominal establishment of four Bren guns. Realising the need for additional section-level firepower, the British Army endeavoured to issue the Bren in great numbers, with a stated goal of one Bren to every four private soldiers. The Bren was operated by a two-man crew, sometimes commanded by a Lance Corporal as an infantry section's "gun group", the remainder of the section forming the "rifle group". The gunner or "Number 1" carried and fired the Bren, and a loader or "Number 2" carried extra magazines, a spare barrel and a tool kit. Number 2 helped reload the gun and replace the barrel when it overheated, and spotted targets for Number 1. Generally, the Bren was fired from the prone position using the attached bipod. On occasion, a Bren gunner would use his weapon on the move supported by a sling, much like an automatic rifle, and from standing or kneeling positions. Using the sling, Australian soldiers regularly fired the Bren from the hip, for instance in the marching fire tactic, a form of suppressive fire moving forward in assault. Each British soldier's equipment normally included two magazines for his section's Bren gun. The large ammunition pouches on the 1937 Pattern Web Equipment were designed around the Bren magazine. Every soldier would be trained to fire the Bren in case of an emergency, though these soldiers did not receive a Bren proficiency badge.
The Bren had an effective range of around 600 yards (550 m) when fired from a prone position with a bipod. For a light machine gun of the interwar and early World War II era, the Bren was about average in weight. On long marches in non-operational areas it was often partially disassembled and its parts were carried by two soldiers. The top-mounted magazine vibrated and moved during fire, making the weapon more visible in combat, and many Bren gunners used paint or improvised canvas covers to disguise the prominent magazine. The 30-round magazine was in practice usually filled with 27 or 28 rounds to prevent jams and avoid wearing out the magazine spring. Care needed to be taken when loading the magazine to ensure that each round went ahead of the previous round, so that the .303 cartridge rims did not overlap the wrong way, which would cause a jam. The spent cartridge cases were ejected downwards, which was an improvement on the Lewis gun, which ejected sideways, since the glint of them flying through the air could compromise a concealed firing position. In general, the Bren was considered a reliable and effective light machine gun, though in North Africa it was reported to jam regularly unless kept very clean and free of sand or dirt. It was popular with British troops, who respected its reliability and combat effectiveness. The quality of the materials used would generally ensure minimal jamming. When the gun did jam through fouling caused by prolonged firing, the operator could adjust the four-position gas regulator to feed more gas to the piston increasing the power to operate the mechanism. The barrel needed to be unlocked and slid forward slightly to allow the regulator to be turned. It was even said that all problems with the Bren could simply be cleared by hitting the gun, turning the regulator or doing both.
Although they were generally well-liked, the high cost of £40 each gun was an issue for the British Army leadership. This became a greater issue when it was discovered that only 2,300 of the 30,000 Bren guns issued to the British Expeditionary Force came back to Britain after the defeat of France. As the result, cost savings and increased rate of production became two main goals for subsequent variant designs. The Bren Mk II design simplified production by replacing the drum rear sight with a ladder design, making the bipod legs non-adjustable, simplifying the gun butt, reducing the use of stainless steel, among other steps that reduced the cost by 20% to 25%; Mk II was approved in September 1940 and entered production in 1941. While the Bren Mk III design also aimed at reducing cost, it also had the concurrent goal of being lightened for jungle warfare; the final product weighed 19 pounds and 5 ounces (3 pounds lighter than the original Bren Mk I design); it was standardised in July 1944 and saw a production of 57,600. Among the variant designs were two speciality prototypes that never entered production: The belt-fed Taden gun for stationary defence use, and the ultra-simplified Besal gun to be produced in case a German invasion of Britain actually took place (which would hinder British production efforts). Later designs of production Bren guns featured chrome-lined barrels that offered less resistance, preventing overheating and reducing the need for quick changes of barrels. Bren guns were produced outside of Britain as well. In Canada, the John Inglis plant in Toronto began tooling its facilities for production in 1938; the first of 186,000 examples was completed in Mar 1940. Some of the Inglis-built Bren guns were chambered for the 7.92-millimeter Mauser ammunition; these were destined for export to Nationalist Chinese forces rather than for British and Commonwealth forces. In Australia, the Lithgow Small Arms Factory in New South Wales began building Bren guns in 1940; a total of 17,249 were built. In India, the factory at Ishapore began building Bren guns in 1942 (it had produced Vickers-Berthier machine guns prior to this time), and would continue producing them for decades long after the end of WW2.
The Bren was also employed in the anti-aircraft role. The tripod could be adjusted to allow high angle fire. There were also several designs of less-portable mountings, including the Gallows and Mottley mounts. A 100-round pan magazine was available for the Bren for use in the anti-aircraft role. The Bren's direct ancestor, the Czechoslovak ZB vz. 26, was also used in World War II by German and Romanian forces, including units of the Waffen SS. Many 7.92 mm ZB light machine guns were shipped to China, where they were employed first against the Japanese in World War II. The Bren was also delivered to the Soviet Union as part of the lend-lease program.
The British Army, and the armies of various countries of the Commonwealth, used the Bren in the Korean War, the Malayan Emergency, the Mau Mau Uprising and the Indonesia–Malaysia confrontation, where it was preferred to its replacement, the belt-fed GPMG, on account of its lighter weight. In the conflict in Northern Ireland (1969–1998), a British Army squad typically carried the L4A4 version of the Bren as the squad automatic weapon in the 1970s. During the Falklands War in 1982, 40 Commando Royal Marines carried one LMG and one GPMG per section. Its final operational deployment with the British Army, on a limited scale, was in the First Gulf War in 1991. Bren guns were in service with the Rhodesian Security Forces during the Rhodesian Bush War, including a substantial number re-chambered for 7.62 mm cartridges similar to those examples in the British Army. The South African Defence Force deployed Bren guns during the South African Border War alongside the more contemporary FN MAG as late as 1978.

Satisfying my inner child with bubbles
Do you know the Sodastream? It is a device you use to carbonate drinks within your own home. As a child, I thought these things looked brilliant, and they were part of my dream kitchen. Of course, we were poor so we could not spend money on anything even remotely as frivolous as a fizzy drink maker. Thankfully, my mum always took fizzy drinks seriously enough that we didn’t get the cheapest ones by default - she liked proper Pepsi, and even when we did have to save money, we’d get Cresta drinks that were always pretty good.
I also love my fizzy drinks. This summer has been a bit of a pain for that reason, as inconsistent deliveries to supermarkets have left a lot of my favourites out of stock for long periods of time (thanks a fucking lot, Brexit). Even when I got them in the basket, they often just didn’t show up by the time my delivery arrived. This was very very annoying.
Lately, we’ve seen a lot of competitions for Sodastream machines, which brought them back to my mind. Of course, I had one big worry: “will the flavours be crap?” I did some research and found that since Pepsi bought Sodastream in 2018, official flavour mixes have started popping up in markets like Germany and Australia. It seemed very enticing, especially the idea of trying Schwip Schwap (an orange/cola mix), but the cost of importing the official mixes would probably be prohibitive. If only they were available in the UK.
When I went into Sainsbury’s this past Monday, this is what I saw.

Holy shit. And right round the corner, a starter kit for £50. But I did not have the money, and could I really justify it to myself? This was not a question that I had time to ponder, being very busy at work and having stuff to do in London on Wednesday. (I saw Black Stone Cherry at the Royal Albert Hall. They were excellent.) But once Thursday arrived, I had both time and money. Doing what any reasonable man might, I did my usual online shopping - and once again, no 7up Free in stock. No Pepsi Max Cherry either. I completed my order, including a 24 pack of Tango Dark Berry that I was sure wouldn’t arrive, and then I immediately marched to Sainsbury’s and made an incredibly frivolous purchase.
I was able to justify this to myself for three major reasons. The first one, you’ve probably guessed - I’m sick of my favourite drinks being out of stock. The second is a matter of economics. These 440ml bottles claim to make 9 litres of finished drink, when prepared according to instructions. The gas canisters claim to carbonate 60 litres of water. If both claims hold, it’s a decent saving when compared to cans and bottles, even in bulk. The final reason is that fizzy drinks containers make up a large part of my recycling output, and while the cans and bottles don’t go to landfill, recycling still takes energy and I should do my best to reduce my waste generation.

So here it is - and it’s bigger than I thought, as it doesn’t actually fit under my kitchen cupboards. The good thing is that it doesn’t require power and therefore can go anywhere. It’s also pretty simple to set up, to the point that the instructions are fully wordless, Ikea style. I installed the CO2 canister in the back and washed up the bottle that was included. For what it’s worth, the 1 litre bottle that came with the machine is apparently not dishwasher safe, though supposedly the ones they sell on the website are. As someone who doesn’t own a dishwasher, this is of no consequence to me. They also do 500ml bottles.
I filled the bottle up to carbonating capacity (840ml), and then chilled it. This is because I’d done my research, rather than letting my giddy excitement get the best of me. Because gases are more soluble in liquids at lower temperatures, the carbonation is more effective if you refrigerate the water in advance. That’s important to note if you end up buying your own Sodastream. I gave it a bit more fizz than recommended since the Sodastream website advises high carbonation levels for the Pepsi flavours. Advice from other owners included leaving the bottle to stand for a few moments before removing it from the machine, pouring syrups in diagonally to avoid major fizzing, and leaving the finished drink standing in the fridge for up to half an hour before serving it.

I’ve got to be honest, the smell of concentrated Pepsi is not very appetising. It’s also worth noting that the syrups have different instructions - Pepsi is to be kept at room temperature after opening, but 7up Free should be put in the fridge. You’re also supposed to shake them before use, and there are three lines on the lid/serving cup - the medium one named “lightly sweet” does seem to produce the best results.
Once it’s finished, you can see that it looks like Pepsi. It tastes like Pepsi too, but not exactly like Pepsi. The reason for this is simple: you cannot dissolve enough sugar into the small amounts of liquid used here, which means that other sweeteners do need to be used too. The result is that Pepsi from a Sodastream has fewer calories and less sugar per serving than regular cans or bottles, and the taste is actually closer to that of Pepsi Max (the cans and bottles, not the Sodastream mix). Since I like Pepsi Max well enough, this doesn’t bother me. The taste of the 7up Free feels a lot closer to that of the regular bottles and cans, as it doesn’t rely on heaps of sugar. I haven’t yet tried regular 7up or Pepsi Max.
Overall, I’m happy with my Sodastream. The official drink mixes mean that I don’t miss my favourite flavours, and I should be able to keep a decent supply of them ready to go. Beyond that, I just really love pushing the button to put the fizz in. It looks cool and satisfies the part of me that always wanted one as a kid. I’ll probably pick up a couple of extra bottles so I can have both flavours at once, and my big hope is that they’ll add new official flavours - Pepsi Max Cherry, Pepsi Max Raspberry and 7up Free Cherry are all on my wishlist.

PINHAIS: A Testimony of A Living History

A stone's thrown from the sea, Matosinhos is the epicenter of the canning industry to the north of Portugal. In that area alone, 52 fish factories were installed, today only two remain and one of them is PINHAIS. The company was founded in 1920 by António Rodrigues Pinto Pinhal together with his brother Manuel Rodrigues Pinto Pinhal, natives of Espinho, who initially dedicated themselves to salting fish in a small warehouse, and Luíz Alves da Silva Rios, who is believed to have launched the challenge to the two fishing brothers to set up a company dedicated to the manufacture of canned fish, to which Luíz de Sousa Ferreira later joined. With the construction of the factory, the company started to produce canned sardines, mackerel and horse mackerel in olive oil, spicy olive oil, tomato and spicy tomato sauce. “We still maintain the original process. From the treatment of the fish to the packaging, everything is done by hand,” guarantees António Pinhal, grandson of the founder and currently responsible for the family business that is in the third generation.
He was only eight when he had his first memory linked to Pinhais. Hand in hand with his father, he saw trawlers loaded with fish arriving at Matosinhos pier on a Saturday morning. “I always did that at the weekend, it was happy to see the seagulls approaching, it was a sign that there was a lot of fish”, he tells The Observer. Later, he was in his fourth year in Economics at the University of Porto when his father asked him to work with him. “My cousin was his right hand, but he got sick and called me. I went to the auction to buy the fish, did the commercial and export part. Only when my cousin passed away did I join the staffs of the company directly and, as a working student, I finished the Economics course at night. ”

For a decade, António was responsible for carefully choosing the raw materials for preserves, a function that allows him to distinguish the quality of a sardine with the naked eye today. “The sardine caught at four or five in the morning is better than the hake at midnight, I can see that from the eyes, the gills and the scales”, he says, adding that it was also on the wooden base of the trucks used to transport the baskets of fish that could take the real test of the nine. “I would take the sardine and throw it to the wood, if it jumped it had been caught in the morning, if it was quiet it was because it had been caught earlier.”
When he finished his Economics course, he already had several job offers, but his father said: either the bank or the factory. “The bug got into me and I ended up staying here. I don't know if I did it right or wrong, but I don't regret it.”

While most canning companies have industrialized over the years, Pinhais has decided to remain faithful to artisanal production, despite the various crises. “There was a Portuguese olive oil supplier that sold the product much cheaper and one day he asked my father if he didn't want to buy a car, which at that time cost about 100 contos, with the money he saved. My father did not have a license nor did he know how to drive, so he refused.” It was like this for four years, until it was discovered that this oil was adulterated. “The containers that other firms distributed to the United States were recalled and the canning industry crisis started there.”
In 1935, Pinhais launched Nuri, a brand with the same products, but aimed at the international market. “One of the partners in the company was my uncle, a public relations person who spoke several languages. It was he who discovered the first international markets and when he went to Spain he met a very beautiful Spaniard named Nuri, that's how he decided to name the brand. ”

During the 40 years that he is at the helm of the canning industry, António Pinhal confesses that the most difficult moment was when the European Union's share of fishing emerged. The golden season in Matosinhos was from June to October, which forced the official to go buy fish in Sines, Peniche, Figueira da Foz, Spain or France. Nothing that would move him or make him lose his faith, after all the Pinhal family is deeply Catholic and in António's office are visible old cans, black and white photographs of the family, but also saints and candles.
“My father went to Mass twice a day and until three years ago we used to pray the rosary half an hour before the people left.” At 4:30 pm, someone put a cassette in the tape recorder and workers exchanged fish scissors for the rosary. “We stopped doing that when we hired people with other religions, it didn't make sense to be imposing that. It used to be different, people were more devout, especially when we talk about a fishing community. Times change and we have to accept those changes. ”

The fish arrives every morning through a special door, leaves the boxes and is immersed in an aluminum container in cold water and salt where the brine is given. “The large sardine is 40 minutes, the medium is 15 minutes, and the petinga, 5,” says António Pinhal. After this process, sardines, mackerel and horse mackerel are spread on large marble tables, where the head and the gut are removed with a small knife. "This is a normally mechanized process, but here we do it by hand to ensure that the gut comes out completely."
Headless and with a spine, the fish is placed one by one on a metal grid and dipped in a tank with cold water to remove the salt. The rooks loaded with fish are distributed in carts that enter a greenhouse at 100 degrees for 10 to 12 minutes. They come out of there hot and during the cooling process all the moisture and grease drain out. “Thus, both water and fat do not go into the can and oil, when added, turns yellow and not brown. This is one of our major differences from the competition,” explains António Pinhal.
It is only after this phase that the fish is placed in containers to then be cut by hand with scissors to fit in the can of preserves, which can then carry tomato sauce, cucumber, carrot or chilli pickles. In this assembly line, several employees dressed in white are seated in a row, from the cap to the wellies, passing through the waterproof apron. Many have their names written on the back and pillows to ensure comfort throughout the day.

Emília Vaz is in the section dedicated to homemade tomato sauce. She is 67 years old and is the oldest employee of Pinhais. She started at 18 and at the end of 2020, she will retire. With the reddish apron and the sweat on her forehead, she proudly shows the marks on her body that the years of work left him. “I've already cut myself on the toes with the cans and scalded my foot to make tomato sauce,” she says, adding that the factory is her second home and her colleagues are part of her family. She treats them by their first name and says she likes to teach those who arrive there for the first time. Among all, she is known as the “Emília da Afurada” (Emília, The Sharp). “In the past, I crossed the Douro in a small boat, but nowadays I take the bus to Boavista and then take the metro to get here.”
About 30,000 cans come out of Pinhais every day, essentially filled with sardines. There is no waste around here, proof of this is that the fish's head, tail and gut is sent to the flour industry to fertilize the soil and the remaining oil is supplied to the soap industry. On the mechanical mat, the cans stuffed with fish and other ingredients arrive in a veritable rain of Portuguese olive oil and are then closed by another machine. Still greasy, the closed can is washed in a tank with water at 100 degrees and sterilized for 60 minutes to eliminate any bacteria and will be packed by hand. Three months is the minimum time to stay in the warehouse to gain flavor, only after this period of maturation is the canned ready to go on its journey.
Célia Ferreira is responsible for the packaging department and in the 15-minute snack break she is the only one in the room to wrap cans of preserves. “I can eat at home,” she says, smiling, guaranteeing that she likes what she does. Her mother, aunts and cousins ​​passed through Pinhais, so it would be almost inevitable for Célia to also work at the Matosinhos factory, where 1,200 cans per day pass through her hands. The natural employee of Leça da Palmeira walks surrounded by cards and packages painted in yellow, green, red or blue and knows the destination of each one by heart. "These go to Australia, those to the United States and those to the Czech Republic.

In 2016, the Pinhal family sold its stocks to an Austrian agent, the current owner of the brand. “It was a decision motivated by the fishing crisis, there were no orders, we lacked liquidity and we thought it was necessary to take this step. He is a trustworthy person, he has worked with us since 1985, he belongs to a family business connected to cereals. At one time, he was our best customer, he represented more than 70% of our exports, and he became the only way to save this firm,” recalls António Pinhal. Despite the change, everything seems to have remained. “The only premise was to leave everything as it is.” Currently, Pinhais exports 90% of its production to countries such as Austria, the United States, the Philippines, Denmark or France. Here, the points of sale are limited to gourmet stores. “Quantity is not quality. We bet on quality, while in large stores we buy a can of sardines at 0.90 cents, ours costs € 2.50. The labor is very expensive, we work with 14 or 15 stages, the other factories have only three,” justifies António Pinhal.
Extending the range of products is not part of the brand's plans, which work on original marble tables from 1920 and see their work space limited to small fish. However, there is a need to bring something new to the market, so next year, Pinhais will use leftover sardines to market patês. The online store was launched just in time for the pandemic and in the summer of 2021 a live museum is expected on the factory premises, a project that has lived in the drawer for several years and bureaucracy has delayed. “We want to make it known what the tradition of the canning industry was, showing, at the same time, how we work.”
António Pinhal is not afraid of the future and says that only the pandemic forced small changes in the company, such as the acrylics arranged among the workers, a laboratory converted into a quarantine room and more mechanized transport processes. The grandson of the founder of Pinhais eats preserves religiously every Friday at lunch. “Canning tins are normally six years old as an expiration date, but my father always preferred old ones that were 15 or 20 years old. Every Friday at lunch he opens an old can, watched, smelled and asked me to eat a piece. After five minutes, if I didn't feel bad, I would eat it. It was your guinea pig and I thought it was funny. ”
