Carrot and Tomato Lentil Soup (Vegan)
As the evenings and nights get colder, a steaming bowl of soup becomes a regular dinner. And a bowl of soup can (and should) be a more-ish and tasty affair, like this hearty Carrot and Tomato Lentil Soup! Happy Monday!
Ingredients (serves 2):
2 tablespoons olive oil
3 medium carrots
1/2 large onion
1/3 chili pepper
4 large leaves Garden Sage
1/4 teaspoon dried rosemary
1 cup Puy Green Lentils
2 ripe tomatoes, rinsed
2 tablespoons Modena Balsamic Vinegar
1 teaspoon coarse sea salt
5 cups water
½ lemon
½ teaspoon freshly cracked black pepper
2 teaspoons demerara sugar
Heat olive oil in a large saucepan or pot over a medium flame.
Peel carrots, and cut them into thick slices. Add them to the pot, stirring to cook them in the olive oil until it becomes orange, about 3 minutes.
Peel and finely chop onion, and add to the pot. Cook, a couple of minutes until softened.
Thinly slice chili pepper, and add to the pot, too. Cook, 1 minute more.
Finely chop Sage, and stir into the pot, along with dried rosemary. Cook, another minute.
Increase heat to medium-high.
Then, stir in the green lentils, coating well in oil and herbs.
Roughly chop tomatoes, and stir into the pot, along with their juice. Cook, a couple of minutes, then deglaze with Balsamic Vinegar. Cook out, 1 minute.
Season with coarse sea salt, and stir in the water. Bring to the boil.
Once boiling, reduce heat to low, and half cover with a lid. Simmer, until lentils are tender and the mixture has thickened, about 35 to 40 minutes.
Once the lentils are cooked and the soup thickened, season with black pepper.
Stir in demerara sugar, and cook, 1 minute more.
Generously laddle Carrot and Tomato Green Lentil Soup into two deep shallow plates. Serve immediately.
