Smoky Lentil Soup (Vegan)
Fragrant and heart-warming, this comforting Smoky Lentil Soup is the ideal dinner on a frosty night. Happy Monday!
Ingredients (serve 4):
2 tablespoons olive oil
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1 onion
1 heaped teaspoon smoked paprika
1/4 teaspoon ground chilli or Cayenne Pepper
1 garlic clove, minced
2 cups cooked or tinned Puy Green Lentils
3 ripe Tomatoes聽
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
2 tablespoons Modena Balsamic Vinegar
1/2 litre/2 cups water
1 tablespoon demerara sugar
Heat olive oil in a large pot over a medium flame.
Once hot, add fennel seeds and oregano, and fry, a couple of minutes.
Peel and finely chop onion. Add to the pot, and cook, another couple of minutes until softened.
Stir in smoked paprika, ground chilli and minced garlic, and fry, one minute more.
Increase heat to medium-high, and stir in cooked Puy Green Lentils, coating in oil, herbs and spices.
Roughly chop Tomatoes, and stir them, along with their juice, into the pot. Season with coarse sea salt and black pepper, and cover with the lid. Cook, for about 5 minutes until Tomatoes聽collapse and release more of their juice.
Deglaze with Balsamic Vinegar. Cook out, 1 minute.
Finally, stir in water, and bring to the boil. Reduce heat to medium-low, cover with the lid, and simmer, about 20 minutes more.
Stir in demerara sugar, until completely dissolved.
Serve Smoky Lentil Soup hot, with crusty Sourdough.

Carrot and Tomato Lentil Soup (Vegan)
As the evenings and nights get colder, a steaming bowl of soup becomes a regular dinner. And a bowl of soup can (and should) be a more-ish and tasty affair, like this hearty Carrot and Tomato Lentil Soup! Happy Monday!
Ingredients (serves 2):
2 tablespoons olive oil
3 medium carrots
1/2 large onion
1/3 chili pepper
4 large leaves Garden Sage聽
1/4 teaspoon dried rosemary
1 cup Puy Green Lentils
2 ripe tomatoes, rinsed
2 tablespoons Modena Balsamic Vinegar
1 teaspoon coarse sea salt
5 cups water
陆 lemon
陆 teaspoon freshly cracked black pepper
2 teaspoons demerara sugar
Heat olive oil in a large saucepan or pot over a medium flame.
Peel carrots, and cut them into thick slices. Add them to the pot, stirring to cook them in the olive oil聽until it becomes orange, about聽3 minutes.
Peel and finely chop聽onion, and add to the pot. Cook, a couple of minutes until softened.
Thinly slice chili pepper, and add to the pot, too. Cook, 1 minute more.
Finely chop Sage, and stir into the pot, along with dried rosemary. Cook, another minute.
Increase heat to medium-high.
Then, stir in the聽green lentils, coating well in oil and herbs.
Roughly chop tomatoes, and stir into the pot, along with their juice. Cook, a couple of minutes, then deglaze with Balsamic Vinegar. Cook out, 1 minute.
Season with聽coarse sea salt, and stir in the聽water. Bring to the boil.
Once boiling, reduce heat to low, and half cover with a lid. Simmer, until聽lentils聽are tender and the聽mixture聽has thickened, about 35 to 40 minutes.
Once the聽lentils聽are cooked and the soup thickened, season with聽black pepper.
Stir in聽demerara sugar, and cook, 1 minute more.
Generously laddle聽Carrot and Tomato聽Green Lentil Soup聽into two deep shallow plates. Serve immediately.
